GROUND TURKEY BURRITOS
Got this recipe for ground turkey burritos while tinkering around in the kitchen. Thawed some meat that I didn't want to freeze again. It was simply great.

Steps:
- Brown turkey in a skillet over medium heat until no longer pink, 5 to 7 minutes. Season with salt and pepper; drain and discard any excess grease. Add black beans and diced tomatoes; cook until warm, about 5 minutes. Reduce heat to low.
- Preheat the oven to 300 degrees F (150 degrees C).
- Warm cooking oil in a skillet over low heat. Heat tortillas 1 at a time, about 1 minute each. Fill with turkey mixture, and top with cheese. Place burritos on a baking sheet.
- Bake in the preheated oven until cheese melts, about 5 minutes.

- In a large skillet over medium high heat, brown ground turkey. Stir in tomato sauce, corn and onion. Reduce heat to medium and let simmer, stirring occasionally, until liquids reduce (about 20 minutes).
- In a separate medium skillet, heat beans over medium-low heat. Prepare sour cream and cheese for sprinkling into burritos. One by one, heat tortillas over stove burner for 1 to 2 minutes, flipping a few times. Top with beans, then meat mixture, then sour cream and cheese. Fold over and serve while still warm.

- Heat heavy large skillet over medium-high heat. Add beef and cook until brown, breaking up beef with fork, about 6 minutes. Add chopped onion and garlic and cook until onion is transparent, stirring frequently, about 5 minutes. Stir in cumin and cook 1 minute. Add beans, broth and chilies and cook until beans are creamy and thickened, crushing beans with back of spoon, about 15 minutes. Mix in green onions.
- Transfer beans to baking dish. Serve with tortillas, cheese, cilantro and salsa, allowing diners to assemble their own burritos at the table.

- Add 2 tbsp grapeseed oil to the sauté pan and place over medium-high heat for 1 to 2 minutes. Add turkey, 1⁄2 tsp pepper, and Tabasco and brown the meat, stirring regularly until turkey is cooked through-about 6 to 7 minutes. Drain the fat from the pan, place cooked turkey on a paper towel, and set aside. Return the sauté pan to medium-high heat, add remaining oil and onions, and cook, stirring continuously, until onions are slightly translucent. Reduce heat, add peppers, tomatoes, beans, salt, and remaining pepper, and cook until peppers are soft to the touch-about 10 minutes. Add vinegar, parsley, mustard, cilantro, and cooked turkey. Heat for an additional 2 to 3 minutes. To build a burrito, lay a tortilla on a flat surface and add a sixth (3⁄4 cup) of the turkey-bean mixture to the center of the tortilla. Top with cheese, fold, and eat.

TURKEY AND BEAN BURRITOS
This is one of my favorite recipes. It comes from Prevention's "The Healthy Cook" Cookbook. By the taste you would never know this recipe is a "good for you" recipe. Makes a chili like burrito filling with melted cheese, wrapped by a crunchy on the edges flour tortilla. This recipe makes some leftovers. This is a good take along lunch too.

- In a large saucepan cook turkey, onion, and garlic until the turkey is no longer pink.
- Add in beans, tomato sauce, picante sauce, chili powder and salt.
- Cover, stirring occasionally cooking for 10 minutes.
- Spray a baking sheet with no stick spray.
- Preheat oven to 375°F.
- Spoon cooked turkey and bean mixture onto tortillas sprinkling with cheese.
- Fold and place seam side down on baking sheet.
- Bake for 12- 14 minutes until cheese is melted and tortilla edges start to crisp.

- Preheat oven to 275°; wrap flour tortillas in foil and warm in the oven.
- Preheat a large nonstick skillet with the vegetable oil.
- Add in the ground turkey and break it up with the back of a spoon as it cooks and browns, about 4 minutes.
- Add in the onions, garlic, bell pepper, salt, and pepper; cook for 3 minutes.
- Add in the chicken stock, pinto beans, and 1 ½ cup tomatilla salsa; increase the heat up to high; continue cooking 5-6 minutes or until the mixture is thickened.
- Remove pan from heat and add in the cilantro; stir to mix.
- Remove the flour tortillas from the oven and switch the broiler on.
- Pile the turkey mixture into the warm tortillas; sprinkle each with ¼ cup cheese; roll up burrito style.
- Line a casserole dish with the burritos, seam side down.
- Top each burrito with a little bit of the remaining tomatillo salsa, spreading it over the burritos with the back of a spoon.
- Sprinkle with the remaining cheese; place dish under the broiler, 6 inches from the heat source.
- Broil for 5 minutes or so to melt and brown the cheese; serve immediately.

- Filling Part One: Heat the tablespoon oil in a large Dutch oven or stock pot. Add the onion and the turkey; as the turkey cooks, add the spices, chipotle peppers, and salt. Cook until the turkey is browned and fully cooked. When the meat is saucy and delicious-looking, transfer to a large bowl and set aside.
- Filling Part Two: In the same pot, add the oil, onion, veggies, and spices. Saute for a few minutes until the vegetables are mostly soft. Add enough broth to barely cover the vegetables and simmer for 10 minutes or so, until the vegetables are soft and the mixture has thickened. Add the beans, meat, cheese, and yogurt. Stir until creamy. Also at this point it’s a good idea to taste and add salt or more seasoning to make sure you’re all good on flavor.
- Fill each tortilla with about 1/2 cup of the filling, fold up (I spread a little goat cheese or avocado on the sides to help them stick together), and wrap with plastic or foil. Store in the freezer for quick, grab-and-go lunches and dinners!
- To heat and eat, either pop in the microwave (takes about 5 minutes for a semi-thawed burrito) or in the oven (I’ve never been patient enough to do it this way so I don’t have a good time guideline here) or a combo with the microwave and then on a skillet if you’re at home so you can get that golden brown exterior. That’s the best way.
