My friend made me this creamy casserole when I brought my twins home from the hospital. It's quick to make, but special enough to serve to guests. At 76 cents per serving, this is one tasty bargain. -Valerie Gee, West Seneca, New York

1/4 cup butter, cubed
1/2 cup all-purpose flour
1 can (14-1/2 ounces) chicken broth
1 cup milk
2 cups cubed cooked turkey
1 cup sliced cooked carrots
1 cup cut fresh green beans
1/2 teaspoon salt
1/4 teaspoon pepper
Warm biscuits

Steps:

  • In a large saucepan, melt butter. Stir in flour until smooth; gradually add broth and milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened., Stir in the turkey, carrots, green beans, salt and pepper; heat through., Serve immediately with biscuits or cool and freeze in a freezer container for up to 3 months., To use frozen Turkey a la King: Thaw in the refrigerator overnight. Transfer to a saucepan; add chicken broth to thin if necessary. Cover and cook over medium-low heat until heated through, stirring occasionally. Serve with biscuits.

It's not exactly gourmet but a good take on the nostalgic dish and everyone at work the next day said it smelled GREAT! Serve over hot buttered rice.

1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can water
1 teaspoon vegetable oil
1 (8 ounce) package sliced fresh mushrooms
1 small carrot, diced
1 cup shredded cooked turkey breast
½ teaspoon onion powder
½ teaspoon salt
½ teaspoon ground black pepper
1 bay leaf
⅓ cup dry sherry
¼ cup half-and-half cream
1 teaspoon dried parsley flakes
⅔ cup frozen peas
1 tablespoon butter

Steps:

  • Stir the cream of chicken soup into the one soup can of water in a bowl.
  • Heat vegetable oil in a large saucepan over medium heat, stir in mushrooms and carrot, and cook and stir until mushrooms start to give up their liquid and carrot begins to soften, about 5 minutes. Add shredded turkey, onion powder, salt, pepper, bay leaf, and sherry to the pan and cook, stirring, another 5 minutes to reduce pan juices and cook away the alcohol from the wine.
  • Pour the soup over the turkey mixture and bring to a boil. Reduce heat and add the half-and-half, parsley, and frozen peas. Simmer 5 to 10 minutes to reduce the sauce and heat the peas through. Remove bay leaf and stir in butter just before serving.

2 1/2 cups Original Bisquick™ mix
1/3 cup grated Parmesan cheese
1/4 teaspoon dried thyme leaves
2 2/3 cups milk
1 package (20 oz) lean ground turkey
1 small clove garlic, finely chopped
1 cup sliced fresh mushrooms (3 oz)
1/2 cup chopped red bell pepper
1 cup frozen sweet peas
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Heat oven to 425°F. Spray cookie sheet with cooking spray. In medium bowl, mix 2 1/4 cups of the Bisquick mix, 2 tablespoons of the Parmesan cheese, the thyme and 2/3 cup of the milk until soft dough forms. Drop dough by 6 large spoonfuls onto cookie sheet.
  • Bake 8 to 10 minutes or until golden brown.
  • Meanwhile, in 12-inch nonstick skillet, cook turkey over medium-high heat 5 to 7 minutes, stirring occasionally, until no longer pink. Add garlic, mushrooms and bell pepper; cook 3 to 4 minutes, stirring occasionally, until vegetables are crisp-tender. Stir in remaining 1/4 cup Bisquick mix until blended. Stir in peas, salt, pepper and remaining 2 cups milk. Cook until mixture bubbles and thickens. Stir in remaining Parmesan cheese.
  • Split biscuits and place bottoms on individual serving plates. Spoon 1/3 cup turkey mixture over each biscuit bottom. Top with biscuit tops and remaining turkey mixture.

This is nursery food absolutely, soft and creamy, salty-sweet. It sits happily atop toast or biscuits, rice or waffles or noodles; in some households, it is wrapped within crepes: leftover turkey in gravy, essentially, with mushrooms and peas for heft. And as such it is comforting to eat, in much the same way that burrowing into a nest on the couch to watch football or a three-hankie movie is comforting. But it is also threadbare elegant with its whisper of sherry, vaguely French. You could of course make it with chicken instead of turkey, add diced ham or minced clams, shucked oysters or a handful of slivered pimiento. It's a very forgiving recipe. Make of it what you will.

6 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 3/4 cups turkey or chicken stock, low-sodium if store-bought
2 cups sliced mushrooms, ideally wild, approximately 4-6 ounces
1 1/2 cups chopped cooked turkey
1/2 cup heavy cream
1 cup frozen peas
2 tablespoons dry sherry
Kosher salt and freshly ground black pepper to taste
Finely chopped parsley, for garnish

Steps:

  • Make a roux. In a small saucepan set over medium heat, melt 4 tablespoons of the butter. When it begins to foam, sprinkle the flour over it, and whisk to combine, then continue whisking until it begins to turn the color of straw, approximately 7-10 minutes.
  • Slowly add 1 cup of the turkey stock to this mixture, and stir to combine. Add more stock to thin the sauce. Keep warm.
  • Set a large sauté pan over medium-high heat, and add to it the remaining 2 tablespoons of butter. When it begins to foam, add the mushrooms, and cook, until the mushrooms have released their moisture and begun to get glossy and soft, approximately 7-10 minutes. Add the turkey, then the warm sauce and cream, and stir to combine. Add the peas, then cook, stirring occasionally, until the mixture is hot and has thickened slightly, approximately 7-10 minutes.
  • Stir in the sherry, adjust seasonings and serve over biscuits or toast, rice or buttered noodles, garnished with the parsley.

1 cup mushrooms (I use portobella but any variety will work)
3 tbsp flour
2 cups chicken broth (14.5 oz can works)
1/2 cup cream (half-n-half or milk will work)
1/2 tsp salt
1/4 tsp pepper
2½ cups turkey (cooked, shredded or diced)

Steps:

  • In the bottom of a large skillet, melt the butter. Add the red pepper, onion, and mushrooms. Saute until al dente or 5 minutes on medium-high.
  • Stir in flour. Continue stirring until smooth. Add the chicken stock.

  • In a large skillet melt butter over medium-high heat. Add turkey, wine and a pinch of sage. Stir the turkey occasionally until it's browned, about 5 minutes. Remove from skillet and set aside in a bowl.
  • Put the skillet back over medium heat and add butter until melted. Mix in flour with a whisk until it is combined into a paste- this is called a roux. Add in the chicken broth and heavy cream and whisk until the roux is thoroughly mixed into the liquid. Stir until starts to thicken, about 5-8 minutes.
