This is another of my fiance's creations - it's great for a regular breakfast and it was also the only thing I could keep down when I had terrible food poisoning.

8 ounces rotini pasta
3 large eggs
1 tablespoon butter
1/4 cup parmesan cheese
salt and pepper or hot sauce

Steps:

  • Cook pasta according to package directions and drain.
  • In a large nonstick skillet, melt butter and add hot pasta.
  • Crack eggs over pasta and scramble.
  • Sprinkle parmesan over pasta and serve, adding salt, pepper, or hot sauce.

3 medium carrots, sliced (about 1 1/2 cups)
8 ounces green beans, cut into bite size pieces
1/2 head cauliflower floret (about 2 cups)
1 small onion, sliced
2 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup whipping cream
1/4 cup parmesan cheese (preferably freshly grated)

Steps:

  • Heat one inch water to boiling; add carrots, beans, cauliflower and onion.
  • Heat to boiling; reduce heat, cover and simmer until tender, about 12 to 15 minutes.
  • Drain vegetables, reserving liquid; place vegetables in a 2 quart baking dish.
  • Heat butter over low heat until melted; blend in flour, salt and pepper; cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat.
  • Stir one cup of the reserved vegetable water and the whipping cream into the butter/flour mixture; heat to boiling stirring constantly; boil and stir one minute; remove from heat.
  • Pour sauce over vegetables; sprinkle with cheese; broil until top is light brown and bubbly about 3 to 4 minutes.

2 2/3 cups couscous (about 1 pound)
2 2/3 cups water
1/2 cup sugar
1/4 cup vegetable oil
1 1/2 cups chopped toasted mixed nuts (such as walnuts, blanched almonds, hazelnuts, pistachios and pine nuts)
1 8-ounce box pitted dates, cut into pieces
2 cups milk, hot
Additional sugar

Steps:

  • Place couscous in large bowl. Bring 2 2/3 cups water, 1/2 cup sugar and oil to boil in heavy large saucepan, stirring to dissolve sugar. Pour mixture over couscous and stir until well blended. Cover and let stand 10 minutes. Fluff with fork to separate grains. Mix nuts and dates into couscous. Transfer couscous to 13x9x2-inch baking dish. Cool. Cover with foil. (Can be prepared 4 hours ahead. Let stand at room temperature.)
  • Preheat oven to 350°F. Bake couscous until heated through, about 20 minutes. Spoon into bowls. Serve, passing hot milk and additional sugar separately.

Posted for the Zaar World Tour-Africa! Tabil is said to have been brought to Tunisia in 1492. Tabil(pronounced table) means seasoning in Tunisian. In Africa, tabil is pounded in a mortar and then dried in the sun and is often used in cooking beef or veal.

2 large garlic cloves, peeled, chopped and dried in the open air for 2 days (or 2 teaspoons garlic powder)
1/4 cup coriander seed
1 tablespoon caraway seed
2 teaspoons cayenne pepper

Steps:

  • In a mortar, pound the garlic with the coriander, caraway, and cayenne until it is smooth. Store in the refrigerator or freezer. Keep in the refrigerator if using fresh garlic for up to two months or indefinitely if using powdered garlic, although the pungency will decline as time goes by.
  • Makes about 1/4 cup.
