Tuna with Pear Salsa image

Broiled tuna steak topped with fruit salsa. You couldn't do better at a five-star restaurant!

1 large unpeeled pear, chopped (1 1/2 cups)
1 medium hot or mild yellow chile, chopped (2 tablespoons)
2 medium green onions, chopped (2 tablespoons)
2 tablespoons chopped fresh cilantro
2 teaspoons grated lemon peel
2 tablespoons lemon juice
1/2 teaspoon salt
6 small yellowfin tuna, swordfish or halibut fillets (1 1/2 lb)

Steps:

  • In small glass or plastic bowl, mix all salsa ingredients. Cover; refrigerate at least 1 hour to blend flavors but no longer than 24 hours.
  • Set oven control to broil. Spray broiler pan rack with cooking spray. Place fish on rack in broiler pan. Broil with tops about 4 inches from heat about 5 minutes or until fish flakes easily with fork. Serve tuna topped with salsa.

4 large Anjou pears, cored, peeled and chopped
1 cup chopped celery
2 scallions, chopped (white and green)
1 1/3 cups chopped walnuts
1 1/2 tablespoons lemon juice
1/2 teaspoon sugar
18 ounces solid white tuna packed in water, drained and flaked
1/4-1/3 cup light mayonnaise
4 cups mixed baby greens or 4 cups other mixed greens

Steps:

  • Combine first 5 ingredients in a bowl. Stir in tuna and mayonnaise and toss to mix.
  • Serve on a bed of greens.

This dish goes fast at holiday parties to pool parties. Good pear variety choices are Asian pear, Bartlett, Comice and Anjou, being all juicy and mellow. May be serve as a side dish with roast or smoked turkey or baked ham or chicken. VARIATION: Substitute 2 or 3 tablespoons finely chopped fresh ginger for the cilantro, parsley or mint.

1 -2 tablespoon mild-flavored oil (such as almond or grapeseed oil)
1/4 cup Italian parsley or 1/4 cup of fresh mint
1 -2 chili pepper, such as jalapeno, cored and finely chopped
1 -2 garlic clove, crushed
2 -3 tablespoons tequila (or juice of 1 lime)
1 pinch salt
1 pinch fresh ground black pepper
2 cups peeled and finely diced pears
1/2 medium red onion, finely diced
1 red bell peppers or 1 yellow bell pepper, cored and diced

Steps:

  • Whisk together in a medium-sized glass or porcelain bowl the oil, cilantro or parsley or mint, chile peppers, garlic, tequila, salt and the black pepper.
  • Stir in the diced pear, onion and bell pepper and mix gently to combine well. Cover the bowl and marinate the salsa at least 3 hours, preferably at room temperature, and then cover and chill slightly, if desired.
  • Variation: Substitute 2 or 3 tablespoons finely chopped fresh ginger for the cilantro, parsley or mint.

We made up this recipe with a Caribbean flair after my boyfriend came home with a pound of fresh, bright yellowfin tuna. You could even substitute canned tuna in a really tight pinch! Garnish with shredded lettuce, if desired.

½ pear, diced
½ medium red onion, diced
½ carrot, peeled and finely chopped
¼ red bell pepper, diced
¼ yellow pepper, diced
1 jalapeno pepper, seeded and chopped
1 green onion, chopped
2 tablespoons chopped fresh cilantro
2 tablespoons lime juice
2 cloves garlic, minced
1 teaspoon cayenne powder
salt and ground black pepper to taste
2 tablespoons olive oil
1 pound yellowfin tuna
1 tablespoon chili powder
1 tablespoon ground cumin
salt and ground black pepper to taste
2 tablespoons lemon juice
4 (6 inch) flour tortillas

Steps:

  • Combine pear, red onion, carrot, bell peppers, jalapeno pepper, green onion, cilantro, lime juice, garlic, and cayenne powder in a bowl. Season with salt and pepper. Set pear salsa aside to allow flavors to meld.
  • Heat olive oil in a skillet or grill pan over medium-high heat. Season tuna with chili powder, cumin, salt, and pepper; add to the skillet. Sear for 3 minutes. Splash 1 tablespoon lemon juice over the tuna. Turn tuna over and splash remaining lemon juice on the second side. Continue cooking until center is medium-rare, about 3 minutes more.
  • Transfer tuna to a plate and let rest for 5 to 10 minutes. Slice and serve over tortillas. Top with pear salsa.
