Easiest. Tuna salad. Ever. We mixed garden vegetable flavor cream cheese with flaky tuna, then rolled it in a tortilla with a few veggies.

- Mix tuna and cream cheese until well blended; spread onto tortilla.
- Top with lettuce and carrots; roll up tightly.

- Mix Alfredo sauce, eggs and garlic in ungreased square baking dish, 8x8x2 inches. Stir in pasta, broccoli and tuna. Press lightly in baking dish.

TUNA WITH A TWIST
This is a recipe I found on the net and saved to try. It was originally from a caterer named Barbie. I love it. The secret ingredients that make this so yummy are the curry and parmesan. ( The dill is great too.) Now I never put either of those in my tuna before but it mixed oh so well. Try it on crackers or in a sandwich. Our family gobbles it up. Enjoy. ChefDLH

- Wrap the tuna tightly in plastic wrap. Place it in the freezer until it's firm and easy to cut.
- Mix together the soy sauce, sesame oil, chili garlic sauce, and ginger in a small bowl. Set the mixture aside.
- Remove the tuna from the freezer when it's par-frozen. Remove the plastic wrap.
- With a sharp knife, dice the tuna into small cubes about ¼-inch around.
- Toss together the tuna, mango, and prepared sauce in a medium-sized mixing bowl. Place the mixture in the refrigerator to finish defrosting.
- Heat the vegetable oil on medium-high heat in a large, heavy-bottomed skillet.
- Fry the wonton wrapper halves - 2 at a time is best - for about 12 to 15 seconds on each side after the oil is shimmering. Cook them until they are just beginning to brown on the edges. Transfer the cooked wonton wrapper halves to a paper towel-lined plate.
- Remove the fully defrosted tuna from the refrigerator.
- Serve the tuna tartare with the fried wontons and your choice of optional toppings.

This is a cold salad like one I had at a resturant recently and I just loved it. I looked all over to get as close to the one I had so I could make it myself. As I took down the ingredients to share it, I find that this recipe came from none other than Mr. Food. To his good memory.

- Put frozen peas in colander and drain pasta over peas.
- In large bowl mix mayonnaise and vinegar.
- Add pasta and peas and mix well.
- Add remaining ingredients mixing well.
- Taste to adjust seasonings.

- You might want to add additional mayonnaise after salad has been refrigerated, because some of the mayonnaise will "soak" into pasta.

- Heat the grill to medium heat.
- Finely chop the red onion and place it in a medium bowl.
- Add the red wine vinegar, sugar, and ½ teaspoon kosher salt to the onion. Set the onion mixture aside.
- Heat the olive oil in a small saucepan over medium heat until it is hot, 2 to 3 minutes.
- Add the ground cinnamon to the oil and stir.
- Allow the cinnamon to bloom in the oil for 4 to 6 minutes until it is fragrant. Remove from the heat immediately, pour the cinnamon oil over the red onions, and stir.
- Turn the grill to high heat.
- Dice the mango into ½-inch pieces and add to the onion mixture.
- Finely chop the mint and parsley and add to the mango mixture.
- Add the crushed red pepper flakes to the mixture, then stir all of the ingredients to combine and set the salsa aside.
- Brush canola oil on both sides of the tuna and season with the remaining 1 teaspoon of kosher salt and the black pepper.
- Grill the tuna for 2 to 3 minutes per side. It will easily come off the grill with a metal spatula when it is ready to turn. If it is sticking, leave it on the grill.
- Take the tuna off the heat and let it rest for 5 to 10 minutes.
- Thinly slice the tuna and serve it with mango salsa spooned on top.
