EASY MACARONI TUNA CASSEROLE

Easy Macaroni Tuna Casserole image

This dish is super easy. It is also a very hearty delicious bowl of comfort food. The guys in my house loved it. I loved this recipe but I used cream of mushroom soup and added the cheese into the casserole. I also melted butter and added bread crumbs to the top before baking, then sprinkle top lightly with dill seasoning. The resulting casserole was very creamy and flavorful.

TUNA MELT MAC 'N' CHEESE

Tuna Melt Mac 'n' Cheese image

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 1h

Yield 6 servings

Number Of Ingredients 16

Salt
1 pound hollow cavatappi or elbows with lines, or macaroni with lines
About 3 tablespoons EVOO, plus extra for drizzling
12 ounces line-caught canned tuna, drained
1/2 cup finely chopped fresh herbs, such as dill, parsley and tarragon
1/2 cup finely chopped red onion or scallions, whites and greens
2 tablespoons Dijon mustard
1 to 2 small ribs celery, finely chopped
1 lemon, juiced
Freshly ground black pepper
1 stick butter
3 tablespoons flour
About 2 1/2 cups whole milk
2 cups grated white Cheddar or gruyere cheese
1 1/2 cups homemade breadcrumbs or panko
1/2 cup grated Parm

Steps:

  • Bring a large pot of water to boil for the pasta. Salt the water and cook the pasta to less than al dente, 5 to 6 minutes. Drain and drizzle with a touch of oil to keep the pasta loose.
  • In a large bowl, flake the tuna and add the herbs (reserving a tablespoon or 2 for breadcrumbs), onions, mustard, celery, lemon juice, EVOO and some salt and pepper. Add the pasta and combine well. Transfer to a baking dish or large casserole dish.
  • In a medium saucepot, melt 4 tablespoons of butter. Whisk in the flour and cook 1 minute. Then whisk in the milk and season with salt and pepper, thicken to coat the back of a spoon. Stir in the Cheddar in a figure-eight motion. Pour the sauce evenly over the pasta and tuna. Gently combine with a spoon to settle the sauce. Cool and store for a make-ahead meal.
  • Melt the remaining 4 tablespoons of butter in a small pan and add the breadcrumbs and reserved herbs, toss to evenly distribute the butter, remove from heat and transfer to airtight container.
  • To prepare, preheat the oven to 400 degrees F and bring the casserole to room temperature. Top the casserole with breadcrumbs and Parm cheese. Bake until golden and hot through.

1 tablespoon butter
1/2 onion, chopped
1 (225 g) package macaroni and cheese mix, like Kraft, prepared according to box directions
butter (for mac and cheese)

KRAFT DINNER MAC N CHEESEY TUNA CASSEROLE - SENSIBLE SOLUTIONS WAY

Kraft Dinner Mac N Cheesey Tuna Casserole - Sensible Solutions Way image

I like mac n cheese, but with tuna, it makes it even better.I make it with one can of drained tuna, but it may not be enough for tuna lovers. I wouldn't add more than 2 cans of drained tuna overall to the macaroni and cheese.

Categories     Fish     Lunch     Fish Lunch

Yield 4

Number Of Ingredients 4

1 box Kraft Mac N Cheese
1/4 cup skim milk
3 tsp's margerine
1 can tuna, drained

Steps:

  • Boil the mac n cheese according to the box (7 to 8 minutes at a rapid, rolling boil).
  • Drain the pasta.
  • Add the 1/4 cup skim milk, stir.
  • Add the 3 tsp's of margerine, stir.
  • Add the packet of cheese mix that comes with the macaroni. Stir it in.
  • Add the drained can of tuna, stir in. *if you want bigger chunks of tuna, just dump the can in and then stir. If you want it equally distributed, I suggest you flake the tuna with a fork in the can before adding it to the macaroni.
  • Enjoy!
