Tuna Sweetcorn Slice Recipes
TUNA SLICE
Very quick and easy to prepare. Given to me by an Australian friend. Child friendly and can be eaten hot or cold (great for picnics). Sometimes I add sweetcorn or put tomatoes on top depending on how I feel and whats in the larder. I also use more cheese than called for but thats because we're all mice in our family!

Steps:
- Pre-heat oven to 180°C.
- Crush the biscuits in a blender, then put in a bowl.
- Add the onion and mix.
- Drain the tuna, flake and add to the mix.
- Add milk, eggs and cheese.
- Mix well and put in a lightly greased ovenproof dish.
- Bake for approx 30 mins until golden.

- Grease a 20cm x 30cm lamington pan and line base and sides with baking paper, extending paper 2cm above edges of pan.
- Heat oil in a small frying pan over medium-high heat and add onion and garlic and cook, stirring, for 2 minutes or until onion just softens, then transfer to a large bowl and then add corn, tuna, rice, broccoli, zucchini and 1 cup cheese to onion mixture in bowl and season well with salt and pepper and mix well to combine.
- Spoon mixture into prepared pan, pressing with the back of spoon to compact and then pour over egg and tap pan on bench and sprinkle top with remaining cheese.
