TUNA STEAK

Tuna Steak image

Recipe video above. The perfect tuna steak is seared on the outside and deliciously rare on the inside. It takes 2 1/2 minutes flat - fastest fish recipe ever! Tuna loin is lean so best served raw or rare if cooked, to enjoy the tender, almost creamy flesh. There's a reason why tuna is a darling of the fine dining scene! Best served just slightly warm or at room temperature. Pictured with Sauce Vierge, a summery, simple French salsa / vinaigerette sauce that pairs perfectly with fish!

Provided by Nagi

Categories     Main

Number Of Ingredients 7

2 x 180 - 200g (6.5 - 7oz) tuna ((skinless, boneless). 2.5-3cm / 1-1.2" thick (Note 1))
1 tsp olive oil
1/4 tsp sea salt
1/8 tsp black pepper
2 tsp olive oil (, or oil spray)
Sauce Vierge ((French salsa / vinaigrette for fish))
Chervil sprigs ((substitute small flat leaf or curly parsley leaves) or small edible flowers (optional))

Steps:

  • Prepare resting tray: Place a rack on a tray. (Note 3)
  • Oil and season tuna: Drizzle half the oil over the tuna. Smear over one side, then sprinkle with half the salt and pepper. Flip and repeat.
  • Heat skillet: Heat skillet (preferably a skillet with grille lines) over high heat until smoking hot. The hotter, the better!
  • Oil skillet (if required): If your skillet is not well-seasoned, brush skillet with olive oil or take pan off stove and spray with any oil (SAFETY WARNING! Note 4)
  • Cook first side: Place tuna steak in the skillet (I do one at a time for best results, Note 5) and cook for 45 seconds.
  • Rotate for grill lines: Turn steak 45 degree. Continue cooking another 45 seconds.
  • Cook other side: Flip tuna carefully, then leave for 1 minute or until the internal temperature in the middle reads 48°C / 118°F (Note 6).
  • Rest: Remove tuna from skillet and place on rack. Rest for 5 minutes - it will cool down almost to room temperature. This is desirable for easier slicing and better eating (Note 7) Serve! See Note 2 for sauce options.

  • Basic Vinaigrette Salad. Your tuna steak deserves a side dish to match its fresh flavor. A simple salad is an easy and delicious way to do that! To make it more interesting, you can add different veggies or fruits like cucumbers, tomatoes, red onions; maybe even some cheese in there for extra protein?
  • Greek-Style Lemon Roasted Potatoes. Potatoes are always a great side dish to have with your meal, be it beef, chicken, or even tuna. They go well no matter what and you can make so many different types of potatoes!
  • Homemade Garlic Fries. I know what you’re thinking-fries are so bad for me. But come on, they taste too good to leave off the table! Don’t worry though, I’m not going to make them using potatoes but instead use this recipe that uses garlic and parsley as a substitute-who doesn’t love fries with some flavor?
  • Teriyaki Vegetable Stir Fry. My favorite thing to do with my tuna steak is getting some of that Asian cuisine by making a teriyaki stir fry. I like using fresh veggies and doing all the work at home so it doesn’t take away from spending time just preparing the main dish.
  • Stuffed Green Peppers. Stuffed peppers are a great side dish for many occasions. You can make them with any filling you like, and they’re really easy to prepare!
  • Loaded Baked Sweet Potatoes. Why not try sweet potatoes next time you go to make a side dish for your fish? They are healthy and just as easy to prepare.
  • Lemon Brown Rice with Garlic and Thyme. This lemon brown rice with garlic and thyme will be a perfect side dish for your family’s dinner. It is savory, but not too heavy to eat by itself as the main meal of the evening – so you can switch between eating this or having it on top!
  • Grilled Veggie Kebabs. I love this recipe because it is so versatile. I can change up the ingredients depending on what’s in my fridge, or how much time I have to cook beforehand!
  • Pasta Salad. Serving a delicious Italian Pasta Salad with Rotini, juicy tomatoes, fresh mozzarella, and red onion as the side dish for a tuna steak.
  • Stuffed Cream Cheese Mushrooms. I made a quick appetizer that’s perfect for any occasion. It combines two of my favorite ingredients: cream cheese and mushrooms with the added kick from tuna steaks.

  • Salad with Vinaigrette Dressing. Here’s something easy but customizable to pair with your tuna steak. I love a good salad with fish. For tuna, try a simple salad with lettuce, cucumbers, tomatoes, red onions, and a vinaigrette dressing.
  • Roasted Lemon Potatoes. No list of side dishes is complete without potatoes! It pairs well with almost anything and there’s simply so many ways you can make them.
  • Garlic Fries. Here’s another potato option: garlic fries! It’s definitely not the healthiest option on this list but let’s be honest, it will also probably be the most popular!
  • Fried Veggies with Teriyaki Sauce. Asian sauces are THE BEST so of course we save a spot for it as one of the best side dishes you can have with your tuna steak.
  • Stuffed Peppers. Here’s another side dish you can get extra creative with. Stuffed peppers are super fun to make and they go so well with almost any main dish.
  • Baked Sweet Potatoes. If you’re not a fan of potatoes, why not try sweet potatoes? They’re a delicious and healthy alternative but just as easy to prepare.
  • Fried Green Beans. I love green beans because they’re healthy, but everything’s always better fried. As a side dish for tuna steak, I would dip the green beans in tempura batter and deep fry for a little bit of crunch.
  • Brown Rice. If you’ve never had brown rice before, you need to be introduced! Brown rice is actually unpolished rice, meaning it’s high in fiber and a healthier alternative to white rice.
  • Vegetable Kabobs. Another excellent way to pair veggies with your tuna is skewered veggies. For the most delicious vegetable kabob, I like to brush them with a marinade made of olive oil, garlic, basil, oregano, salt, and pepper before roasting or baking!
  • Salted Chips. There’s no denying that potato is the king of all sides. Have some lightly salted chips with your tuna steak to add flavor and crunch to your meal.
