My family loves pasta! This simple dish is always a hit, especially during the spring when sugar snap peas are the sweetest. To keep us from getting in a rut, I change up the flavors. -Crystal Jo Bruns, Iliff, Colorado

1 pound fresh sugar snap peas (about 5 cups), trimmed
1 package (16 ounces) angel hair pasta
5 tablespoons olive oil, divided
1 medium red onion, finely chopped
3 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon coarsely ground pepper
1-1/4 cups grated Parmesan cheese, divided

Steps:

  • In a 6-qt. stockpot, bring 16 cups water to a boil. Add peas; cook, uncovered, just until crisp-tender, 3-4 minutes. Using a strainer, remove peas from pot., In same pot, add pasta to boiling water; cook according to package directions. Drain, reserving 1 cup cooking water; return to pot. Toss with 3 tablespoons oil., In a large skillet, heat remaining oil over medium heat; saute onion until tender, 2-3 minutes. Add garlic and seasonings; cook and stir 1 minute. Stir in peas; heat through., Toss with pasta, adding 1 cup cheese and reserved cooking water as desired. Sprinkle with remaining cheese.

This was a staple at my Aunt Bonnie's barbeques, but the recipe probably originated from the back of a Creamettes box in the 1960's. In Minnesota, we obviously use Creamettes Macaroni Rings. You can use anellini pasta for this recipe. Cooking time does not include refrigerating time.

1 (7 ounce) box ring macaroni, prepared as directed on box
1 (8 1/2 ounce) can early june le seuer peas, drained (or 1 cup Green Giant Select Lesueur frozen baby peas, thawed)
1 cup celery, finely diced
2 (6 ounce) cans tuna, drained
1/4 cup onion, finely diced
1 cup Miracle Whip
1 teaspoon salt (or less, use to taste)

Steps:

  • Gently mix all ingredients together and refrigerate 2 to 3 hours.

3 cups dried medium egg noodles
1 cup frozen green beans
nonstick cooking spray
1 slice whole wheat bread, crumbled into coarse bread crumbs
2 teaspoons butter or 2 teaspoons margarine, melted
2 stalks celery, sliced
3/4 cup red bell peppers or 3/4 cup green bell pepper, chopped
1/2 cup chopped onion
1 (12 fluid ounce) can fat-free evaporated milk
1 (10 3/4 ounce) can condensed low-fat cream of mushroom soup
1 (9 ounce) can tuna in water, drained and flaked (I like to use 2 cans)

Steps:

  • Prepare pasta according to package directions, adding green beans during last 3 minutes of cooking.
  • Drain; set aside.
  • Preheat oven to 375 degrees.
  • Spray 2-quart casserole dish with nonstick cooking spray.
  • Coat bread crumbs with melted butter.
  • Coat large, nonstick skillet with nonstick cooking spray.
  • Heat over medium-high heat.
  • Add celery, bell pepper and onion.
  • Cook, stirring occasionally, for 2 to 3 minutes or until crisp-tender.
  • Stir in pasta, evaporated milk, soup and tuna; mix well.
  • Cook for 2 minutes.
  • Pour into prepared casserole dish.
  • Sprinkle with bread crumbs.
  • Bake for 20 to 25 minutes or until bubbly and bread crumbs are golden.

8 ounces barilla brand no-boil lasagna noodles, broken (See Note * )
8 cups water
salt
8 ounces sugar snap peas, trimmed and strings removed
1 large red bell pepper, core and slice in narrow strips
1/3 cup lemon juice lemon (2 (or more)
2 (6 ounce) cans solid white tuna in olive oil, DO NOT drain
fresh ground black pepper
kosher salt

Steps:

  • Note * no boil noodles are cooked and used for texture in this salad.
  • Bring 8 Cups of water and salt to boil in a large pot, add the broken noodles, cover, lower heat and cook gently for 5 minutes.
  • Add the trimmed sugar snap peas to the pot, cover and cook 2- 3 minutes, until the peas are tender and the noodles are firm tender.
  • Drain off the water from the pot, put the noodles and sugar snap peas into a serving bowl, add the bell pepper, lemon juice and undrained tuna, toss to mix all. Season with fresh black pepper and salt if desired. Serve immediately.
