TUNA SALAD AND SAUERKRAUT SANDWICH
This delicious tuna salad and sauerkraut sandwich boasts fresh veggies, protein and probiotics. Super easy to prepare for home or to go.

Steps:
- Prep: Finely chop the celery, red pepper and onion, and wash the lettuce leaves; set aside. Place the tuna in a large mixing bowl and use a fork to separate into flakes.
- Mix: Add the vegetables and mayonnaise to the tuna as well as salt and pepper to taste, and mix well to incorporate.
- Assemble: Place one slice of lettuce, half the tuna salad and half the sauerkraut on each sandwich, slice in half and serve.

Great-Grandma Maida Dixon made this salad for family gatherings. I think of her every time I make. It's sooo good. It needs to be placed in the refrigerator to allow the flavors to meld. It really is worth the wait.

- In a large bowl, mix together sauerkraut, onion, celery, green bell pepper, carrot, pimientos, and mustard seed. Set aside this mixture.
- In a small saucepan, mix together sugar, oil, and vinegar. Bring to a boil. Remove from heat.
- Pour sugar mixture over salad, cover, and leave it in the refregerator for 2 days before serving.

- Prep: Wash the salad greens if necessary, and set aside. Wash and finely chop the onion and celery and place in a medium mixing bowl. Drain the tuna and add to the bowl, flaking it with a fork into small pieces.
- Mix: Add the mayonnaise, salt and pepper to the bowl and mix well to combine.
- Serve: Place an equal serving of salad greens, tuna salad and sauerkraut in each bowl. Serve immediately and enjoy!

TUNA MELT AND SAUERKRAUT

Steps:
- Drain water from tuna.
- Slice the onion and mince the garlic. Slice the cheese.
- In a small pan over medium heat, melt 1 tablespoons of butter; sauté onion and garlic on low heat until soft and caramelized.
- Meanwhile, in a medium sized bowl, break tuna apart with a fork.
- Add mayo and mash together until desire consistency is reached.
- When onions and garlic are caramelized, mix them into the tuna mixture.
- Butter the bread, placing half butter side down in a large pan over medium heat.
- Lay a thin layer of cheese atop the bread, top each with 1/4 of the tuna/onion mixture. Layer remaining cheese and top with bread - butter side up.
- Cover and cook until bottom slice of bread is nicely browned. Flip and repeat on other side.
- Cheese should be completely melted by the time the sandwich is done grilling.
- Serve with a side of ranch dressing and generous scoop of sauerkraut.

- Mix together first 6 ingredients.
- In a seperate bowl mix vinegar, oil and sugar till sugar is dissolved. Pour over sauerktaut mixture and toss gently until well mixed. Cover and refrigerate overnight. Toss again before serving.
