Ingredients

2 7oz cans tuna packed in oil, drained
1/2 apple, diced
2 tbsp minced red onion
2 tbsp finely diced celery
1 tbsp capers, minced
1 tbsp minced parsley
1/3 cup mayonnaise
1 tbsp Dijon mustard
1 tsp lemon juice
8 slices whole grain bread
1 cup sprouts
4 bib lettuce leaves

Steps:

In a medium bowl, break up tuna with a fork. Toss with apple, onion, celery, capers and parsley. Add mayonnaise, mustard and lemon juice. Stir to combine.
To make sandwiches, lay lettuce on bread and divide tuna salad and sprouts evenly.

1 can (6 ounces) light water-packed tuna, drained and flaked
2 tablespoons finely chopped red onion
1 teaspoon minced fresh parsley
1-1/2 teaspoons dill weed
1/8 teaspoon garlic salt
1/8 teaspoon dried thyme
1/8 teaspoon pepper
Pinch cayenne pepper
2 tablespoons fat-free mayonnaise
1 tablespoon reduced-fat sour cream
3 cups Boston lettuce leaves
6 grape tomatoes, sliced
Optional: sliced cucumber and fresh dill

Steps:

In a small bowl, combine the first eight ingredients. Combine the mayonnaise and sour cream; stir into the tuna mixture. , Divide the salad greens between two plates. Top with tuna mixture and tomatoes and if desired, cucumbers and dill.

Ingredients

3 cups bean sprouts
1 (12 ounce) package soft tofu, drained and cut into 1/2-inch cubes
2 (5 ounce) cans tuna, drained
1 bunch watercress, chopped
2 tomatoes, cubed
¼ cup Japanese pickled radish
½ cup chopped onion
4 cloves garlic, thinly sliced
¼ cup sesame oil
½ cup soy sauce

Steps:

Layer the bean sprouts, tofu, tuna, watercress, tomatoes, and Japanese pickled radish in a 9x13-inch baking dish. Set aside. Place the onion in a bowl.
Heat the garlic in the sesame oil in a skillet over medium heat until garlic is browned and fragrant, about 5 minutes. Remove garlic slices, then pour the hot oil over the onion. Stir in the soy sauce and pour dressing over the salad.
