Griddled tuna kinda niçoise salad image

This is my take on the classic salad niçoise, looks really impressive and takes just 15 minutes.

SALAD
350 g mixed green and yellow beans
½ a baguette
12 black olives (stone in)
3 ripe mixed-colour tomatoes
1 romaine lettuce
20 g feta cheese
1 lemon
TUNA & DRESSING
1 big bunch of fresh basil
6 anchovy fillets, from sustainable sources
1 lemon
4 tablespoons extra virgin olive oil
2 x 200 g tuna steaks (2.5cm thick), from sustainable sources, ask your fishmonger
1 tablespoon red wine vinegar
1 heaped teaspoon wholegrain mustard
1 teaspoon runny honey

Steps:

  • Ingredients out • Kettle boiled • Medium lidded pan, high heat • Griddle pan, high heat • Liquidizer
  • START COOKING
  • Line the beans up and cut off the stalks, put them into the pan with a pinch of sea salt, then cover with boiling water and the lid.
  • Slice the baguette into 2cm chunks and put on the griddle pan, turning when golden.
  • Pick and reserve 10 baby sprigs of basil. Rip off the rest of the leaves and blitz them in the liquidizer with the anchovies, juice of 1 lemon, 4 tablespoons of extra virgin olive oil and a splash of water.
  • Pour about 40% of the dressing on to a nice serving platter and put aside. Rub 10% into the tuna and season with salt and black pepper.
  • Pour the rest of the dressing into a big bowl with the vinegar, mustard and honey, then mix together.
  • Drain the cooked beans, remove the stones from the olives, roughly chop the tomatoes, then add it all to the bowl of dressing and toss together.
  • Put the tuna on the griddle pan and cook for 2 minutes on each side, or until blushing in the middle.
  • Chop the lettuce into 2cm chunks, tear the toasts into croutons and arrange over a large board with the lettuce. Scatter the dressed beans, olives and tomatoes over the top.
  • Tear each tuna steak in half and add to the dressing platter. Scatter over the reserved basil leaves, crumble over the feta and serve with lemon wedges.

Here, that means quickly blanched green beans, canned white beans, parsley leaves, and Little Gem lettuce get tossed in a punchy basil dressing with oil-packed tuna and capers.

1 shallot, coarsely chopped
3 Tbsp. sherry vinegar or red wine vinegar
1 tsp. kosher salt, plus more
1 lb. green beans, trimmed
1 1/2 cups basil leaves
6 Tbsp. extra-virgin olive oil
2 Tbsp. fresh lemon juice
1 tsp. freshly ground black pepper
1 large or 2 small heads of Little Gem lettuce or romaine hearts, leaves separated
1 (14.5-oz.) can white beans, drained, rinsed
1 cup parsley leaves with tender stems
1/4 cup capers, drained
1 (6-oz.) jar oil-packed tuna, drained, flaked into pieces

Steps:

  • Combine shallot, vinegar, and 1 tsp. salt in a blender jar. Let sit 5-10 minutes to lightly pickle.
  • Meanwhile, cook green beans in a large pot of boiling salted water until crisp-tender, about 4 minutes. Drain, then run under very cold water until cool to the touch.
  • Add basil, oil, lemon juice, and pepper to shallot mixture and blend until mostly smooth. Pour dressing into a large bowl. Add green beans, lettuce, white beans, parsley, and capers and toss with your hands to coat. Add tuna and gently toss to combine. Transfer salad to a platter.

1 tuna steak (8 ounces)
1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons olive oil
4 cups torn romaine
2 medium navel oranges, peeled and sectioned
1 cup cherry tomatoes, halved
DRESSING:
1/4 cup minced fresh basil
1/4 cup olive oil
1 tablespoon orange juice
1 tablespoon balsamic vinegar
1 teaspoon grated orange zest
1 garlic clove, minced
1/2 teaspoon Dijon mustard
1/4 teaspoon sugar
1/8 teaspoon pepper
Dash salt

Steps:

  • In a large saucepan, bring 4 cups water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry; set aside., Sprinkle tuna with salt and pepper. In a small skillet, cook tuna in oil over medium heat for 3-4 minutes on each side for medium-rare or until slightly pink in the center., Meanwhile, in a large bowl, combine the romaine, oranges, tomatoes and asparagus. 12 oz. green beans, trimmed and halved
1 small shallot, chopped
1 c. lightly packed basil leaves
3 tbsp. olive oil
1 tbsp. red wine vinegar
4 c. torn lettuce
1 15-oz can small white beans, rinsed
2 5-oz cans solid white tuna in water, drained
4 soft-boiled eggs, halved

Steps:

  • Bring a large pot of water to a boil. Add 1 tablespoon salt, then green beans, and cook until just tender, 3 to 4 minutes. Drain and rinse under cold water to cool.
  • Meanwhile, in a blender, puree shallot, basil, oil, vinegar, and 1/2 teaspoon each salt and pepper until smooth.
  • Transfer half of dressing to large bowl and toss with green beans. Fold in lettuce, white beans, and tuna and serve with remaining dressing and eggs.

¼ cup Asian fish sauce
½ cup fresh lime juice
2 tablespoons honey
2 ¼ pounds fresh tuna steaks, cubed
¼ cup extra-virgin olive oil
4 fresh tomatoes, chopped
1 bunch green onion, finely chopped
1 small fresh red chile pepper, seeded and chopped
½ cup fresh cilantro leaves
½ cup fresh basil

Steps:

  • In a small bowl, mix together fish sauce, lime juice, and honey. Place tuna in a large, plastic, resealable bag, and pour fish sauce mixture over the tuna. Refrigerate for 1 hour.
  • Heat 2 tablespoons olive oil in a wok over high heat. When the oil is very hot, almost smoking, place 1/2 tuna in pan; cook and stir for 1 minute, or until desired doneness. Transfer cooked fish to a large bowl. Repeat with remaining oil and tuna.
  • Toss warm fish with tomatoes, green onion, red chile pepper, cilantro, and basil. Serve.

1 bunch apsaragus, trimmed (or use a good handful of green beans instead)
2 handfuls cherry tomatoes, quartered
1 large bunch fresh basil, leaves picked, baby leaves kept to one side
1 handful black olives, stones removed
extra virgin olive oil
1 lemon
sea salt
freshly ground black pepper
2 tuna steaks, from sustainable sources, ask your fishmonger
2 tablespoons fat-free natural yoghurt

Steps:

  • Heat a griddle pan until it gets really hot then put your asparagus in it. Place a heavy saucepan on top so that it presses the spears right down on to the bars. Cook them for 2 minutes, turning them halfway through, until they have lovely charred marks. Pop the asparagus on a board and chop them in half at an angle.
  • Put the asparagus in a bowl with your tomatoes, half the basil leaves, the olives, a splash of oil and a squeeze of lemon juice. Season, then toss it all together and put it to one side while you get the fish ready.
  • Rub your tuna steaks with a little bit of oil and season them. Sear them for about a minute on each side in the griddle pan for a rare steak - leave them for 2 minutes on each side if you prefer them cooked medium, or 3 to 4 minutes each side if you like them well done.
  • Pound the remaining basil in a pestle and mortar then mix in the yoghurt. Season and add some more lemon juice to taste.
  • Put the salad on a plate, then tear the tuna into strips and pop them on top. Spoon over some of the basil dressing and scatter over the baby basil leaves.

1 tbsp caper , drained
15 peppadew peppers from a jar, chopped
1 celery heart, sliced
140g yellow, red or a mixture of cherry tomato , halved
75ml balsamic vinegar
3 tbsp extra-virgin olive oil
100g bag rocket leaves
good handful basil leaves

Steps:

  • Cook the pasta following pack instructions, then drain and rinse in cold water. After draining again, transfer to a large bowl. Add the remaining ingredients except the basil, season well, and toss to combine. Scatter with basil and serve.
