EASY AMERICAN POTATO AND TUNA CASSEROLE
My casserole is amazing! As an aspiring chef, I spend a lot of time in the kitchen. I'm 18 and this is one of my creations. Your family will love this dish for its melted cheese and soft potatoes. It's a good way to get calcium in your diet as well.

- Preheat oven to 400 degrees F (200 degrees C).
- In a large pot over high heat, place the potatoes with water to cover and bring to a boil. Let boil for about 20 minutes, or until potatoes are tender. Drain and transfer potatoes to a large bowl. Add the milk, mozzarella cheese and 2 tablespoons of the Parmesan cheese.
- Using an electric mixer, beat the potatoes until almost smooth. Then beat in the eggs, drain the tuna and stir the tuna into the potato mixture. Then stir in the green onion, and season with salt and pepper to taste.
- Transfer mixture to a lightly-greased 10-inch diameter glass pie dish and top with the remaining Parmesan cheese.
- Bake at 400 degrees F (200 degrees C) for 45 minutes, or until golden brown.

- Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, thoroughly mix noodles, onion, 1 cup cheese, peas, tuna, soup and mushrooms. Transfer to a 9x13 inch baking dish, and top with potato chip crumbs and remaining 1 cup cheese.
- Bake for 15 to 20 minutes in the preheated oven, or until cheese is bubbly.

- Preheat oven to 375°F. Lightly butter the insides of a large baking dish and set aside.Heat butter in a large heavy saucepan with tall sides over medium to medium-high heat. Add onion and celery and cook until just softened, about 5 to 7 minutes. Stir in garlic and cook for 1 minute more. Sprinkle flour over the top and stir lightly for 1 minute. Slowly add milk and half-and-half, and then simmer until mixture is lightly bubbling and thickened, stirring occasionally for about 5 to 7 minutes. Stir in Parmesan and dry mustard, and then season to taste with salt and pepper. Remove saucepan from heat and stir in peas.While sauce is cooking in the saucepan, cook noodles in a large pot of boiling salted water until just al dente. Drain noodles, reserving 1/2 cup of noodle cooking liquid. Transfer noodles to a very large mixing bowl. Pour warm sauce over noodles. Then add sour cream, Gruyere, dill, and chives, and fold to blend. Add reserved noodle cooking liquid a bit at a time until mixture is creamy and moistened to your liking (you may not want to use the full 1/2 cup of liquid). Fold in tuna, taking care to leave some chunks intact. Transfer mixture to prepared baking dish. Sprinkle with crushed potato chips. Tent dish loosely with foil and bake for 20 to 30 minutes, or until hot throughout. Remove foil and bake uncovered for another 5 to 10 minutes, or until top is golden brown and the filling bubbles. Remove from oven, sprinkle with a bit more fresh chopped dill and chives, and serve immediately.
POTATOES & TUNA CASSEROLE-- NO PASTA ADDED
My SIL makes this quite often with a side dish of cooked rice and steamed broccoli. I kind of change it to suit my taste and believe it comes out perfect. Everyone finds it very tasty and without the usual pasta. I usually make it with side dish of green peas and spanish rice or simply a side salad.

Steps:
- Butter lightly an oven pan 9X13 size.
- Heat the oven at: 375°F.
- Layer the bottom of pan with first layer of raw, sliced potatoes.
- Add layer of sliced, raw onions and first tin of tuna, carefully spreading the tuna evenly all over.
- Add a second layer of sliced, raw potatoes, then add last of the onions.
- Salt & pepper in between.
- Add the rest of the second can of tuna evenly.
- Cover with last row of potatoes.
- In a separate bowl, mix together the celery soup with milk, mixing well.
- Pour the soup mixture evenly over dish; cover all potatoes.
- Cover tightly with foil or Dutch oven cover.
- Bake for 1 hour at 375°F in center of oven.
- Uncover, and bake 15 minutes more at 350°F and the sauce/gravy will become just the right thickness--not too thick and not too watery.

TUNA / POTATO/ ONION CASSEROLE
This dish was one of my mom's (lets see what we can throw together) recipes. My mom always used sliced raw onion but you can use 2 Tablespoons of minced onions instead. You can use either Garlic powder to taste or 1 fresh Garlic clove, minced. Salt and pepper to taste.

- Heat butter in saucepan. Saute sliced onions and garlic about 5 minutes. Then blend in the flour and milk with a whisk, add salt, pepper and stir over medium heat until thickened. Stir in drained tuna. Put quartered potatoes in greased 2 quart casserole dish and stir in tuna mixture. Cover and bake at 350 degrees for 1 hour. Uncover 30 minutes or until potatoes are tender.

- PREPARE POTATO BAKEPeel potatoes and dice into 1-2cm cubes. In a large saucepan, dissolve chicken stock powder in approximately 1.5L boiling water. Add potatoes and boil for 15 minutes, until tender.
- Meanwhile, grate courgette and pat with paper towels to remove excess moisture. Crush garlic and drain cans of corn and tuna.
- Make the cheesy sauce by melting butter in a medium saucepan over a medium heat. When butter is bubbling, stir in flour and cook for 1 minute. Slowly whisk in milk and cook until mixture has thickened (approximately 5 minutes). Stir in mustard, dill and 1 1/4 cups cheese until cheese has melted. Season to taste with salt and pepper. Add courgette, garlic and drained corn and tuna.
- Turn oven on to the grill setting. Drain potatoes well and combine with the cheesy sauce mixture. Pour into a large oven-safe dish and sprinkle with remaining cheese. Place in the middle of the oven and grill until cheese is golden brown (3-5 minutes). Watch it carefully! Remove from oven and leave to rest for 5 minutes.
