Ingredients

2 cups all-purpose flour
¼ cup white sugar
½ teaspoon vanilla extract
1 cup margarine
2 cups chopped pecans
⅓ cup confectioners' sugar for decoration

Steps:

Sift together into a medium sized bowl the flour, sugar and vanilla. Work in the margarine with a spoon or hands until well blended. Add chopped pecans and mix well.
Shape dough into 1 inch balls and put on ungreased pans. Bake in a preheated 325 degree F (165 degrees C) oven for about 25 minutes or until pale brown. When slightly cool roll or shake in confectioners' sugar. Store in an air tight container.

PECAN-CRUST TUNA STEAKS

1 egg
250 ml (1 cup) finely ground pecans
15 ml (1 tbsp.) ground ginger
1 ml (¼ tsp.) cayenne pepper
To taste, salt and pepper
4 tuna steaks, about 150 g (5 oz.) each
15 ml (1 tbsp.) olive oil
To taste, lemon wedges

Steps:

Lightly beat egg on a plate. On another plate, combine pecans, ginger and cayenne pepper. Salt and pepper to taste. Dip tuna steaks in egg, then in pecan mixture. Heat oil in a skillet over medium heat. Cook tuna for 4 to 5 minutes per side or until fish flakes easily with a fork. Drizzle with lemon juice to taste. Serve with garlic rapini and roasted potatoes.

8 ounces cream cheese, softened
7 ounces solid white tuna, drained and flaked
3 tablespoons green peppers, finely diced
3 tablespoons onions, finely diced
3 tablespoons celery, finely diced
5 pimento stuffed olives, finely diced
2 teaspoons prepared horseradish
1/2 teaspoon hot sauce
1/2 teaspoon Worcestershire sauce
salt and pepper, to taste
1/2 cup chopped pecans

Steps:

Combine all ingredients except pecans; stir well.
Shape mixture into a ball; cover and chill at least 1 hour.
Roll in pecans; cover and chill.
Serve ball with assorted crackers.
