J-LYN'S AWESOME SALMON CASSEROLE
I improvised this salmon casserole with items I had on hand in my pantry. I've never been big on casseroles (if you've had my mom's cooking, you'd understand why), but they are definitely an easy way to use up items that would otherwise be sitting in the pantry forever. This recipe is simple enough; feel free to add or supplement as you see fit!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Butter a 9-inch casserole dish.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain.
- Combine macaroni, salmon, cream of mushroom soup, 1/2 can of milk, Parmesan cheese, salt, and pepper in a casserole dish. Mix until well blended. Sprinkle French-fried onions on top.
- Bake in the middle rack of the preheated oven until lightly browned on top, about 30 minutes.

SALMON OR TUNA NOODLE CASSEROLE
This casserole came about when I didn't have any tuna but I did have some leftover salmon. What the heck .. let's toss it out there and see if it's any good. Steps:
- 1. Preheat oven to 375 F. Coat a 2 quart baking dish with cooking spray, set aside.
- 2. In small bowl combine bread crumbs, garlic powder, dill weed and melted butter and mix until crumbly. Set aside.
- 3. In a large bowl, remaining ingredients except for the last 1/4 cup shredded cheddar cheese. Stir together until well blended. Spoon into prepared baking dish.
- 4. Spread the last 1/4 shredded cheese over the top of the casserole.
- 5. Sprinkle the bread crumb mixture evenly over the top of the casserole. Bake covered at 375 for 20 minutes.
- 6. Remove cover and return to oven for approximately 12 minutes until cheese is melted and casserole is bubbly.
- 7. Remove from oven and sit for at least 5 minutes before serving.
- 8. NOTE: Add more seasonings than listed if you like them, add less or remove them if you don't like them. This recipe is not set in stone .. however ... I recommend you try it this way first and then adjust according to your individual tastes. If you make this recipe and choose to substitute chicken or pork for the salmon or if you add chocolate or hot chili peppers or Dr Pepper you will not be happy and it is not my fault you did not follow instructions so please do not leave negative feedback .. this is a fish dish. EASY PEA-SY CHEESY GLUTEN-FREE TUNA CASSEROLE (OR SALMON CASSEROLE)
Tuna Casserole is classic comfort food that doesn't disappoint. Old-school goodness, if you will. Right down to the crushed chips as the topping! If tuna is not your favorite, salmon is a great substitute. Similarly, the peas can be left out or another veggie can be subbed in.

- Preheat oven to 400 degrees Fahrenheit. Grease medium-sized casserole dish.
- Saute onion and mushrooms in olive oil at medium to medium-high temperature in large skillet. When onions are translucent and mushrooms have released their liquid, slowly stir in coconut milk and almond milk. Cook about 5 minutes more on medium stirring often until the mixture thickens and is reduced slightly.
- Add tuna, peas, cheese (if used), almond flour (if used), and cooked pasta. Mix well and transfer to casserole dish.
- Top with crumbled tortilla chips, crumbled potato chips, or almond flour. Sprinkle grated Parmesan cheese over all, if desired.
- Bake uncovered about 15 to 20 minutes until hot.
SALMON-MACARONI CASSEROLE
This recipe is from "Favorite Recipes of the Episcopal Churches on the Kenai". Old-fashioned comfort food if you like salmon or tuna casserole.

- Cook the macaroni according to the package directions. Drain well, and set aside.
- Melt 1/4 cup butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly until the mixture is thickened and bubbly. Add salt, garlic salt, and pepper, stirring well.
- Combine the sauce, reserved macaroni, cheeses, salmon, and eggs in a large bowl; stir well. Spoon the mixture into a greased 11 x 7 x1 1/2 inch baking dish. Combine soft breadcrumbs (just put bread in a food processor to make these) and 2 tablespoons melted butter; Stir well. Sprinkle the breadcrumb mixture evenly over the casserole. Bake at 350 degrees for 1 hour or until set.

This is a great one dish meal. My mom used to make this a lot for us kids, and even though I am not a fish lover, I must say I do enjoy this casserole.

KRAFT DINNER MAC N CHEESEY TUNA CASSEROLE - SENSIBLE SOLUTIONS WAY
I like mac n cheese, but with tuna, it makes it even better.I make it with one can of drained tuna, but it may not be enough for tuna lovers. I wouldn't add more than 2 cans of drained tuna overall to the macaroni and cheese.

- Boil the mac n cheese according to the box (7 to 8 minutes at a rapid, rolling boil).
- Drain the pasta.
- Add the 1/4 cup skim milk, stir.
- Add the 3 tsp's of margerine, stir.
- Add the packet of cheese mix that comes with the macaroni. Stir it in.
- Add the drained can of tuna, stir in. *if you want bigger chunks of tuna, just dump the can in and then stir. If you want it equally distributed, I suggest you flake the tuna with a fork in the can before adding it to the macaroni.
