Chicken Enchilada Casserole I image

A delicious recipe that is easy to make, and can be prepared the day before and baked the next day. These enchiladas are almost like a Mexican lasagna!

Categories     World Cuisine Recipes     Latin American     Mexican

Yield 8

Number Of Ingredients 12

2 pounds skinless, boneless chicken breast halves - cooked and diced
1 (10.75 ounce) can condensed cream of celery soup
1 (10.75 ounce) can condensed cream of chicken soup
1 (10 ounce) can enchilada sauce
1 (14.5 ounce) can diced tomatoes with green chile peppers
1 (4 ounce) can diced green chiles
1 onion, chopped
1 pinch garlic powder
1 cup chicken broth
1 teaspoon chili powder
16 ounces processed cheese spread
10 (6 inch) corn tortillas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a 5 quart pot combine the chicken, cream of celery soup, cream of chicken soup, enchilada sauce, diced tomatoes and green chiles, onion, garlic, chicken broth, chili powder and cheese. Heat over medium high until the cheese is melted and all of the ingredients are mixed together well.
  • In a 9x13 inch baking dish, layer the mixture and the tortillas like you would lasagna. Make sure to put a thin layer of the mixture on the bottom of the baking dish to prevent sticking. After layering, place dish in the preheated oven and bake for 45 minutes to 1 hour, until cheese starts to brown and bubble. Let stand and cool for at least 10 minutes before serving!

KITTENCAL'S EASY TUNA OR CHICKEN NOODLE CASSEROLE

Kittencal's Easy Tuna or Chicken Noodle Casserole image

This is a delicious casserole that can be made using either tuna or 1-1/2 cups or more of cooked cubed chicken or even cooked turkey --- for a thinner sauce use 1 cup of milk or half and half instead of 3/4 cup, prep time includes boiling the egg noodles, if you are not a garlic-lover then you may omit the garlic powder and to zing the flavor up even more add in 1-1/2 tablespoons of lemon juice

Time 45m

Yield 4-6 serving(s)

Number Of Ingredients 15

6 ounces egg noodles
2 tablespoons butter
1 (10 3/4 ounce) can condensed cream of mushroom soup, undiluted
1/2-1 teaspoon garlic powder (or to taste, I use 1 teaspoon)
3 -4 tablespoons grated parmesan cheese (optional)
3/4 cup milk (or can use half-and-half cream)
1/2 cup sour cream (can increase to to 3/4 cup)
1/4-1/2 teaspoon seasoning salt (or to taste, or use white salt)
1/2 teaspoon fresh ground black pepper (or to taste)
1 small onion, finely chopped (can use 2 green onions)
1/4 cup pimiento, chopped
1 small green bell pepper, finely chopped
1 large celery rib, diced
1 (6 1/2 ounce) can tuna, drained and flaked (can add another 3 ounces for a more meatier casserole if desired, or use cooked chicken or turkey)
12 -15 butter flavored crackers, broken in pieces (such as Ritz Crackers)

Steps:

  • Preheat oven to 375 degrees F.
  • Grease a 2-quart casserole dish.
  • Cook the egg noodles in boiling salted water; drain then toss with 2 tablespoons butter.

  • Add in the tuna or chicken; mix to combine.
  • Combine the mixture with the cooked egg noodles.
  • Transfer to prepared greased baking dish.
  • Sprinkle top with the broken Ritz crackers.
  • Bake for about 25 minutes.

CREAMY CHICKEN ENCHILADA CASSEROLE

Creamy Chicken Enchilada Casserole image

Basically a creamy chicken enchilada, but we like a lot of cheese and even more chicken. A casserole allows for more of each.

TUNA OR CHICKEN ENCHILADA CASSEROLE

Tuna or Chicken Enchilada Casserole image

I made this up the other night using what I had on hand. It turned out pretty good! If you don't enjoy pasty flour tortillas I think this would work great with cooked rice. Also the onion will remain slightly crunchy so if you don't like that then you can omit it or sauté it first.

TUNA ENCHILADA CASSEROLE

Tuna Enchilada Casserole image

This is very filling, easy to prepare and inexpensive. It came from a cookbook that I got at a garage sale for 99 cents. It has no cover and is over 30yrs. old. I made this frequently when both my husband and I were at the university...and had two kids! Money was very tight and this recipe was a hit. I have updated to make a bit healthier.

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 7

8 corn tortillas
10 ounces red enchilada sauce
1/3 cup water
7 ounces canned tuna, drained and flaked
1 lb monterey jack cheese, grated
1/3 cup onion, chopped
5 black olives, sliced (optional)

Steps:

  • Wrap tortillas in a slightly dampened tea towel. Place in microwave for 2-3 minutes, (depending on the wattage of your microwave) to soften. If you do not have a microwave, fry quickly in a bit of oil to soften.
  • Mix the enchilada sauce with the water.
  • Pour a scant 1/4 cup sauce into the bottom of a greased round, 2-qt. casserole.
  • Pour the rest of the sauce into dish deep and wide enough to dip tortillas into.
  • Dip two tortillas in sauce and arrange in casserole; sprinkle with 1/3 of the tuna, 1/4 of the cheese, 1/3 of the onion, and a scant 1/4 cup of the sauce.
  • Make two more layers like this and top with the last two tortillas and the remaining cheese.
  • Pour the rest of the sauce over all and bake at 350 degrees for 20-25 minutes.
  • It looks pretty if you sprinkle sliced black olives over the top before serving.
