1 cup fat-free ricotta cheese
2 tablespoons chopped fresh basil leaves or 2 teaspoons dried basil leaves
2 tablespoons lemon juice
2 tablespoons reduced-fat sour cream
1 can (9 oz) or 2 cans (5 oz each) albacore tuna in water, drained

Steps:

  • Line 2-cup metal bowl or mold with plastic wrap.
  • Place all ingredients in blender or food processor. Cover and blend on high speed until smooth. Spread mixture in bowl.
  • Cover and refrigerate 2 hours. Carefully unmold onto serving plate.

1/2 cup thinly sliced green onions
1/4 cup mayonnaise

  • In a large bowl, combine the first 6 ingredients. Stir in tuna. Serve with bread or crackers.

2 cans (organic) tuna in olive oil (see comments above)
Lemon juice and pepper to taste
A few leaves of parsley or chives
Optional: ricotta

Steps:

  • Open the cans and pour most of the oil into a separate glass or bowl (you'll add some of the oil later on)
  • Put the tuna in your food processor with a few squeezes of lemon juice, parsley and some pepper
  • Blend and slowly add some of the oil you saved from the cans. I usually add about half of the oil, but it's up to you to decide on the desired consistency. It's a spread so it shouldn't be too runny, but you don't want it to be dry either
  • Optional: I find some brands of canned tuna too salty. If that's the case, I add a few spoons of ricotta to neutralise the salty taste and add some extra creaminess
  • This tuna spread will keep about 1 week in your fridge

handed down and delicious...never told exactly what was a click, smidgen or dash....but have yet to make a bad mold...so I don't worry about it. You can skip the gelatin and make it a spread....same delicious taste and easy to serve on sandwiches or with crackers!

2 - 5oz. can(s) tuna, canned (drained and chopped)
8oz. box cream cheese (softened)
1 can(s) tomato soup (10 - 3/4 oz)
2 pkg gelatin, unflavored (4 per box - only use 2)
1 c mayonnaise
1 medium onion (finely chopped)
1 bell pepper (finely chopped)
3 celery stalks (finely chopped)
1 - 2oz. jar(s) pimento (drained and chopped)
1 c pecans (chopped) or walnuts
1/2 c water
smidgen pepper
dash garlic powder
click salt

Steps:

  • 1. Mix soup, water and gelatin completely - then heat soup mix on stove with cream cheese on medium. Stirring continuously until melted and well mixed. Set aside to cool.
  • 2. Combine all other ingredients and add soup to the mix.
  • 3. Pour in mold or bowl and refrigerate until set. Usually overnight.
  • 4. Serve with crackers or in sandwiches. Delicious!

ITALIAN TUNA SPREAD

This is part of an antipasti spread. Serve with crostini, Melba toast, or crackers at room temperature. Store in refrigerator covered. To reuse, bring back to room temperature. Do not microwave to reheat. It will turn to goop. Best tuna fish sandwich you will ever have. Use iceberg lettuce, toasted bread, and thin slice of tomato. Yum!

2 envelopes unflavored gelatin
½ cup water
1 (10.75 ounce) can condensed cream of mushroom soup
1 (8 ounce) package cream cheese, softened
1 ½ tablespoons Worcestershire sauce
1 cup mayonnaise
salt and pepper to taste
1 teaspoon onion salt
1 teaspoon celery salt
1 (12.5 ounce) can water-packed tuna, drained

Steps:

  • Line a mold, or pie pan with plastic wrap.
  • In a small bowl, dissolve gelatin in water and set aside.
  • In a large saucepan, heat soup and cream cheese until soft and smooth. Remove pan from heat.
  • Mix gelatin mixture, Worcestershire sauce, mayonnaise, salt and pepper (to taste), onion salt, celery salt, and tuna fish into the soup and cheese saucepan. Stir mixture until smooth.
  • Cover mold or pan and chill overnight. When ready to serve remove the tuna mousse from the mold and serve.

1 (3 ounce) package sugar-free lemon gelatin
1 3/4 cups boiling water

  • Drain tunafish well, break into bite sized pieces and refrigerate.

A tasty tuna spread made in a jello mold and perfect as a party appetizer. When I really want to dress it up, I chill spread in a fish mold then unmold and decorate with an olive slice for his eye, thinly-sliced radishes for the gills, and a cute green pepper smile! (I prefer using white albacore tuna in water, but any kind of drained canned tuna will do.)

1 (10 ounce) can cream of celery soup
8 ounces cream cheese
1/2 cup water
1/4 ounce unflavored gelatin (1 envelope)
1 cup mayonnaise
12 ounces tuna, drained
1/2 cup celery, chopped
1/2 cup green onion, chopped

Steps:

  • In saucepan, bring soup to boil and add cubed cream cheese.
  • Remove from heat and stir until smooth,.
  • Dilute gelatin with water. Stir into soup mixture.
  • Stir in remaining ingrediemts and pour into mold that has been sprayed with Pam.
  • Chill until set, about 3 hours.
  • Invert mold on serving platter. (If it does not come out right away, run knife around edge of mold to help loosen, or run warm water around bottom of mold a few seconds).
  • Serve with crackers and enjoy. (Leftovers keep for quite awhile if refrigerated.).
