CLASSIC TUNA MELT SANDWICH RECIPE
Nothing beats a hot, cheesy tuna melt sandwich for a comfort food lunch or dinner, and we have a few family secrets to making the best tuna sandwich ever!

Steps:
- Flake the tuna with a fork, then combine the tuna, mayonnaise, onion, celery, relish, lemon juice and salt and pepper.
- Slather two pieces of bread with mayonnaise like you would use butter, then place into a large skillet, mayonnaise side down.
- Place a cheese slice onto the bread.
- Spread the tuna mixture over the cheese slices. Place a cheese slice on top.
- Use the mayo to "butter " the remaining two slices, then place on top, mayonnaise side up and out.
- Heat the pan to medium heat and cook until the bread is lightly browned on the bottom.
- Flip the sandwiches carefully to the other side, then cook until the other side has browned.
- Remove, slice in half and serve.

- Preheat oven to 350°. In a bowl, combine the first six ingredients; set aside. Spread butter over cut sides of buns. Spread tuna mixture on bun bottoms; replace tops. Wrap in foil. , Bake until the cheese is melted, 15 minutes.

Here's how we do it: open-faced with crusty toasted bread, melty cheese, capers, cornichons, Dijon mustard, and plenty of seasoning. On a chilly fall day, nothing tastes better.

- Set the oven to broil and move the rack to the highest position.
- In a medium bowl, combine tuna, mayonnaise, mustard, red onion, capers, cornichons, lemon juice, thyme, salt, and pepper and stir thoroughly until combined. Leave the tuna in slightly large chunks, if possible.
- Arrange bread on a baking sheet and spread mayonnaise on each slice. Divide tuna salad evenly among slices, then top each with 2 slices of tomato and 1 slice of cheese.
- Broil tuna melts until cheese is golden brown and bubbling, 3 to 4 minutes. Serve warm.

TUNA MELT
Steps:
- Preheat the broiler and set the rack about 4 to 5 inches from the heat source.
- Spread the bread out on a baking sheet and toast. Spread the toasted muffins or bread with the mayonnaise, if using. Top with the Tuna Salad and then the shredded cheese. Place the baking sheet under the broiler and heat for 3 to 5 minutes, until the cheese has melted. Serve immediately.
- In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion, and parsley. Add the mayonnaise, mustard, and season with pepper to taste. Stir to combine. Add lemon juice, if using.
ULTIMATE TUNA MELTS
Steps:
- In a medium bowl, flake the tuna finely with a fork. Add the celery, scallions, and dill, and continue mixing and fluffing with the fork until combined. Add the lemon juice, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper. Combine the mayonnaise and anchovy paste, if using, and mix into the tuna.
- Preheat the broiler. Toast the bread in a toaster and place the slices in a single layer on a sheet pan. Spread a quarter of the tuna mixture thickly and evenly on each piece of bread, covering the entire slice. Sprinkle the cheese evenly on the 4 sandwiches, covering the tuna completely. Broil for 1 to 2 minutes, just until the cheese melts and starts to brown. (Watch it carefully!) Sprinkle with the microgreens and serve hot.

- Stir together everything in a bowl, mixing it well, leaving the mayonnaise for last. Add mayonnaise a spoonful at a time, just enough to bind everything together. The salad should hold its shape on a spoon. (You can make the tuna salad up to three days ahead. Store covered and refrigerated. Drain off any accumulated liquid and stir well before using.)
- Cover one side of each bread slice with butter or mayonnaise, spreading it all the way to the edges. Turn the slices over and cover with cheese, either sprinkling it or tearing the pieces to fit. Top with tuna salad.
- Close the sandwiches and cook on a griddle or in a large skillet over medium-high heat until deep golden brown and crisp, about 3 minutes per side, pressing lightly with the spatula. Serve immediately.
