Steps:

  • Set the oven to broil and move the rack to the highest position.
  • In a medium bowl, combine tuna, mayonnaise, mustard, red onion, capers, cornichons, lemon juice, thyme, salt, and pepper and stir thoroughly until combined. Leave the tuna in slightly large chunks, if possible.
  • Arrange bread on a baking sheet and spread mayonnaise on each slice. Divide tuna salad evenly among slices, then top each with 2 slices of tomato and 1 slice of cheese.
  • Broil tuna melts until cheese is golden brown and bubbling, 3 to 4 minutes. Serve warm.

2 cans (5 oz each) tuna packed in water, drained
1/4 cup mayonnaise
4 slices (3/4 oz each) American cheese, cut in half diagonally

Steps:

  • Heat oven to 350°F. Lightly spray large cookie sheet with cooking spray.
  • Cut loaf of dough crosswise in half to make 2 loaves. Place loaves seam sides down and 3 inches apart on cookie sheet. With sharp knife, cut 3 diagonal slashes, 1/2 inch deep, on top of each.
  • Bake 23 to 25 minutes or until golden brown. Cool 2 minutes.
  • Meanwhile, in small bowl, mix tuna and mayonnaise until well blended.
  • Set oven control to broil. With serrated knife, cut loaves in half horizontally; place cut sides up on same cookie sheet. Spread 2 heaping tablespoons tuna mixture onto each half loaf. Top each with 2 cheese triangles.
  • Broil 4 to 5 inches from heat 1 to 2 minutes or until cheese is melted.

1 cup shredded sharp farmhouse Cheddar cheese

2 tablespoons minced celery
2 tablespoons minced red onion, soaked in cold water for 5 minutes and drained
1 teaspoon minced flat-leaf parsley
1/3 cup prepared mayonnaise

  • Preheat the broiler and set the rack about 4 to 5 inches from the heat source.

4 slices cheddar or marble cheese
extra mayonnaise for "buttering" the bread slices

Steps:

  • Flake the tuna with a fork, then combine the tuna, mayonnaise, onion, celery, relish, lemon juice and salt and pepper.
  • Slather two pieces of bread with mayonnaise like you would use butter, then place into a large skillet, mayonnaise side down.
