1 cup uncooked orzo or rosamarina pasta (6 oz)
1 package (3 oz) cream cheese, softened
1 1/2 cups diced cucumber (about 1 medium)
3 tablespoons cider vinegar
2 medium stalks celery, thinly sliced (1 cup)
1 tablespoon olive or vegetable oil
2 cans (5 oz each) albacore tuna in water, drained
2 tablespoons chopped fresh dill weed
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In 3-quart saucepan, heat 2 quarts water and 1/2 teaspoon salt to boiling. Add pasta; cook 7 to 9 minutes or until tender. Drain pasta. Rinse with cold water; drain.
  • In food processor, place cream cheese, 1 cup of the cucumber, the celery, vinegar and oil. Cover; process until smooth.
  • In large bowl, stir pasta, cream cheese mixture, remaining 1/2 cup cucumber and remaining ingredients until well mixed.

This Tuna and Orzo Salad with Parmesan and Basil is a perfect dish for warm weather entertaining or an everyday lunch. It's filled with protein and fresh flavors.

1 1/2 cups dry orzo pasta
1/4 cup fresh lemon juice (about 2 lemons)
1 garlic clove, minced
1 tablespoon honey
Pinch of salt
Pinch of freshly ground black pepper
1/4 cup extra-virgin olive oil
2 1/2 ounces baby spinach leaves (2 packed cups), roughly chopped
1 15-ounce can cannellini beans, rinsed and drained (I like to use Bush's Beans)
1 5-ounce can solid white tuna, drained and flaked
1/2 small red onion, finely chopped (about 1/2 cup)
1 stalk celery, chopped (about 2/3 cup)
1/2 cup grape tomatoes, halved
2 tablespoons finely chopped fresh basil leaves
3/4 cup coarsely grated Parmesan cheese

Steps:

  • Cook the orzo according to the package directions. Drain and let cool slightly.
  • In a small bowl, whisk together the lemon juice, garlic, honey, salt, pepper and oil.
  • In a large bowl, combine the warm orzo with the spinach and stir to allow the spinach to wilt slightly. Add the beans, tuna, red onion, celery, tomatoes, and basil. Pour the vinaigrette over the orzo mixture and toss to coat. Stir in the Parmesan cheese.
  • Serve the salad warm, at room temperature or even chilled. The salad will keep in an airtight container in the refrigerator for 5 days.

3 tablespoons olive oil, divided
½ cup pine nuts, or more to taste

1 teaspoon dried basil
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until cooked through but firm to the bite, about 11 minutes. Drain.

2 large red potatoes, diced

8 ounces cherry tomatoes, halved

Steps:

  • Cook the green beans in a large pot of boiling water until crisp-tender, stirring occasionally, about 4 minutes.
  • Using a mesh strainer, transfer the green beans to a large bowl of ice water to cool completely. Drain the green beans and pat dry with a towel.
  • Add 2 teaspoons of salt to the same cooking liquid and bring the liquid to a simmer. Add the potatoes to the simmering liquid and cook until they are just tender but still hold their shape, about 8 to 10 minutes. Transfer the potatoes to the ice water to cool completely. 8 ounces uncooked orzo pasta
2 handfuls baby spinach, roughly-chopped
2 (5-ounce) cans tuna, drained
half of a small red onion, peeled and diced
1/2 cup crumbled feta cheese
1/2 cup sun-dried tomatoes, drained and chopped
1/2 cup toasted pine nuts
1/3 cup chopped fresh basil leaves
3 tablespoons olive oil
1 tablespoon freshly-squeezed lemon juice
1 teaspoon Dijon mustard
1 small clove garlic, pressed or finely-minced (or 1/2 teaspoon garlic powder)
1/2 teaspoon fine sea salt
1/4 teaspoon freshly-cracked black pepper

Steps:

  • Cook orzo in a large stockpot of generously-salted water according to package instructions until al dente. Drain the pasta, then rinse thoroughly with cold water in a colander until the pasta is completely chilled.
  • Transfer pasta to a large mixing bowl. Add the remaining ingredients and prepared dressing (see below), and toss until evenly combined. Taste and season with salt and pepper as needed. Then serve immediately, or refrigerate in a sealed container for up to 3 days.
  • Whisk all ingredients together in a bowl (or shake together in a mason jar) until combined. Use immediately or refrigerate in a sealed container for up to 3 days.

1 clove garlic, thinly sliced
4 scallions, thinly sliced
1 14-ounce can no-salt-added diced tomatoes
1/4 teaspoon dried oregano
1 1/2 cups orzo
Kosher salt and freshly ground pepper
1 14-ounce can cannellini beans, drained and rinsed
1 small green bell pepper, thinly sliced
1 5-ounce can solid white tuna packed in water, drained
Juice of 1 lemon
2 tablespoons chopped fresh parsley

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the garlic and half of the scallions and cook, stirring, 1 minute. Add the tomatoes and oregano and cook, stirring, 3 minutes. Stir in 21/2 cups water, the orzo, 1/2 teaspoon salt, and pepper to taste. Bring to a boil, then reduce the heat to medium low and stir in the beans. Cover and simmer until most of the liquid is absorbed and the orzo is tender, about 10 minutes.
  • Add the bell pepper and continue cooking, covered, until tender, about 3 minutes. Stir in the tuna, lemon juice and parsley. Season with salt and pepper. Top with the remaining scallions.

1 pound tuna steaks
1 teaspoon lemon pepper, or more as needed
1 tablespoon olive oil, or as needed
1 pound fresh green beans - rinsed, trimmed and snapped into bite size pieces
1 ½ pounds red potatoes, cut into bite-size chunks
1 large tomato, cut into bite-size pieces
1 ½ tablespoons minced garlic
2 lemons, juiced
1 teaspoon lemon zest
1 (8 ounce) bottle Italian dressing (such as Ken's Steak House Lite Northern Italian Dressing®)
1 pinch salt and freshly ground black pepper to taste

Steps:

  • Season tuna steaks liberally with lemon pepper.
  • Heat olive oil in a large skillet over medium-high heat. Place tuna steaks in the hot skillet and sear until lightened but still a little pink in the centers, 3 to 5 minutes on each side. Be careful not to overcook. Remove from heat and allow to cool.
  • Bring a large pot of lightly salted water to a boil. Add beans and cook for 4 to 5 minutes. Drain and place in a bowl of ice water to "shock" the beans and preserve the green color.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until they are just a little firm when pierced, 5 to 6 minutes. Drain and place in a bowl of ice water.
  • Combine garlic, lemon, juice, and lemon zest in a large bowl. Add tuna, potatoes, green beans, and tomatoes. Stir in Italian dressing and coat all ingredients with the dressing. Season with salt and pepper to taste. Chill for at least 2 hours or best overnight.

1/2 pound green beans, cut diagonally into 1/2-inch pieces
For dressing
2 tablespoons red-wine vinegar
1 tablespoon fresh lemon juice
4 anchovies, chopped
1 tablespoon Dijon mustard
1 garlic clove, minced and mashed to a paste with 1/2 teaspoon salt
1/4 to 1/3 cup olive oil (preferably extra-virgin)
a 6-ounce jar marinated artichoke hearts, drained and chopped
a 6- to 7-ounce can tuna, drained
1 red bell pepper, chopped
1/2 cup finely chopped red onion
1 1/2 tablespoons minced fresh thyme leaves
1/3 cup Kalamata or other brine-cured black olives if desired, chopped
2 cups chopped arugula, washed and spun dry

Steps:

  • In a large saucepan of salted boiling water cook orzo until tender and drain in a colander. Rinse orzo well under cold water and drain well. Transfer orzo to a large bowl.
  • In a small saucepan of salted boiling water cook beans until crisp-tender, about 4 to 5 minutes. Drain beans and add to orzo.
  • Make dressing:
  • In a blender blend together vinegar, lemon juice, anchovies, mustard, and garlic paste. With motor running add oil in a stream and blend until emulsified.
  • Add dressing to orzo mixture with artichokes, tuna, bell pepper, onion, thyme, olives, and salt and pepper to taste and toss well. Salad may be prepared up to this point 1 day ahead and chilled, covered. Bring salad to room temperature before proceeding.
  • Add arugula and toss well
