VIRGINA'S TUNA SALAD
This was always a summer Saturday favorite for my grandparents and I. Great served on a large lettuce leaf. You may also add grapes or chopped apples if you wish.

Steps:
- Place egg in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let egg stand in hot water for 10 to 12 minutes. Remove from hot water; cool for 5 minutes. Peel and chop into bite-sized pieces.
- In a medium bowl, mix together tuna and mayonnaise. Mix in egg, celery, relish, and black pepper.

GRILLED TUNA STEAKS WITH GRAPE AND CAPER SALSA
Steps:
- Preheat an outdoor grill for medium-high heat and lightly oil grate.
- Stir together grapes, capers, shallot, parsley, and olive oil in a bowl; season to taste with salt and pepper, and set aside. Place tuna steaks onto a plate, and brush with lemon juice. Season with salt and pepper to taste.
- Cook tuna steaks on preheated grill until cooked to desired degree of doneness, 2 to 3 minutes per side for medium-rare. Serve with the grape and caper salsa.

TUNA SALAD WITH GRAPES AND LEMON TARRAGON DRESSING

- In a large bowl, gently break up, but do not mash the drained tuna. Add the grapes, walnuts, diced celery, onion and chopped egg. Stir to mix. Add dressing and combine until evenly moistened. Keep chilled in a covered container until ready to serve. Makes 4 servings. (Yield: 3 cups of Tuna Salad.) To make Lemon Tarragon Dressing: Combine all ingredients in a large bowl, then gently combine with tuna mixture.

This a wonderful, light salad. We often eat it as a complete meal in the summer. I like trying to vary the color by using different varieties of lettuce, apples and grapes.

Steps:
- drain tuna and place in a bowl.
- add celery, grapes, onion, toss.
- toast the curry powder in a small skillet for 2-3 minutes until fragrant.
- remove with a spatula to a small bowl, cool combine celery seed, garlic, cottage cgeese, skim milk, lemon juice, and curry powder in a blender until liquified season with salt& pepper.
- pour dressing over tuna, toss.
- sprinkle with toasted walnuts, serve.
