- 1. Heat canola oil in large soup pot on medium heat. Add peppers and onion and sauté for about 5 minutes, just until soft. Stir in remaining ingredients, except the tuna and cook for 10 minutes, stirring occasionally. Stir in tuna creations@ and heat for 1 or 2 minutes more.

- Whisk first 8 ingredients in medium bowl to blend; season to taste with ground white pepper. Transfer 3 tablespoons marinade to small bowl and reserve. Add tuna to remaining marinade in medium bowl and toss to coat. Refrigerate at least 30 minutes and up to 45 minutes.
- Spray grill rack with nonstick spray. Prepare barbecue (medium-high heat). Alternate tuna cubes, bell pepper squares, and onion squares on each of 6 metal skewers. Grill to desired doneness, turning frequently, about 4 minutes total for medium-rare. Transfer to platter. Drizzle reserved marinade over; sprinkle with chopped cilantro.

- Cook the spaghetti for 9-11 mins in a large pan of well-salted water until al dente.
- Heat the oil in a wide frying pan over a very low heat, and gently cook the garlic and chilli to infuse the oil. Remove from the heat if the garlic is turning past light golden, as this will make it bitter.
- Drain the pasta, keeping a cupful of the cooking water, and tip the spaghetti into the frying pan. Toss the pasta in the oil over a low heat, adding a little of the pasta water to emulsify into a sauce that coats the pasta, then fold in the capers, parsley, tuna and some seasoning. Don't stir too vigorously - you want to keep larger chunks of tuna. Toss the rocket and lemon juice through the spaghetti, and serve with extra chilli scattered over, if you like.

CHILI TUNA ROLL-UPS

- In a small bowl, mix tuna, chili sauce and green onions. Blend in enough water to allow easy spreading.
- Lay tortillas one by one on a flat surface. Spread a thin layer of cheese onto each tortilla, covering the entire surface. Spread tuna mixture over cheese to within an inch of tortilla edge.
- Starting at the top, roll up the tortilla into a snug cylindrical shape, ensuring the cream cheese seals the bottom.
- Enclose roll-ups in aluminum foil, and refrigerate or freeze until serving. When ready to serve, cut the roll-ups into 2 inch slices. If frozen, slice the roll-ups about 15 minutes before serving time to allow them to defrost completely.

- Cook the quinoa according to the package instructions.
- In a small bowl, whisk together the chili sauce, soy sauce, lime juice, and olive oil. Put the tuna steaks in a large zip-top bag, pour in the chili sauce mixture, and marinate for at least 10 minutes or in the refrigerator for up to 2 hours.
- In a skillet on the stovetop, melt the butter over medium heat. Discard the marinade and add the marinated tuna steaks to the skillet and cook for 3 to 4 minutes, until a slight crust forms on the bottom. Flip and cook for 3 to 4 minutes on the second side.
- Divide the tuna among four plates and spoon the quinoa alongside. Garnish with the cilantro and sesame seeds and serve, with lime wedges alongside for squeezing over the top.
