- Cooking on barbecue: Mix tuna, onion, celery, mayonnaise, salt and pepper. Spread 2 Tbsp (semi-packed) tuna mixture on each bun half. Place tomato slice on each and top with ½ cheese slice trimmed to fit. Wrap in foil and place on coals. Cook until cheese is melted and golden brown. Serve immediately. Cooking in oven: Broil 5 inches from heat for 3-5 minutes or until cheese is melted and golden brown. Serve immediately. Serves: 12 (2 bun halves per person)

- Preheat the grill on its highest setting. Drain the tuna, flake it into a bowl and mix with the spring onions and mayonnaise. Season with salt and plenty of freshly ground black pepper.
- Toast the bread under the grill until it's nicely browned on both sides, then spread the tuna mixture on top, right up to the edges of the toast. Scatter over the cheese and put back under the grill until the cheese is bubbling.
- Slice in half, sprinkle with paprika and tuck in.

TUNA MELTS ON ENGLISH MUFFINS
Steps:
- Preheat the oven to 450 degrees F (230 degrees C).
- Melt butter in a small frying pan over low heat. Add onion and garlic and saute over low heat until soft and translucent, 5 to 7 minutes. Stir in seafood seasoning, cilantro, onion powder, salt, and pepper. Remove from heat.
- Combine tuna and mayonnaise in a bowl. Add the sauteed mixture from the frying pan and blend well with a fork.
- Place all 6 halved English muffins on a cookie sheet. Spoon on tuna mixture, dividing it evenly between each muffin. Top each with a slice of tomato; add a slice of American cheese.
- Bake in the preheated oven until cheese is melted, about 5 minutes.
