TUNA CHEESE SPREAD
The flavor of tuna is very subtle in this thick and creamy spread. It's terrific on crackers or carrot and celery sticks, stuffed in a tomato or used for a sandwich. -Dorothy Anderson, Ottawa, Kansas

- Add one cup of bread crumbs to a medium bowl and set aside.
- Making Tuna Balls:
- Open the cans of tuna, scoop tuna chunks into a colander and drain.
- Add drained tuna to a large bowl.
- Add 1/4 cup of bread crumbs, garlic powder, onion powder, salt, pepper, lemon zest, chopped parsley, 2 beaten eggs, cheese and mayo to a large bowl. Using a spatula stir to combine all the ingredients.
- Using a cookie scoop (I used the 2 tablespoons one), take a scoop of the tuna mixture, dump it into the prepared bowl with bread crumbs. Cover in bread crumbs, roll gently into a more perfect ball and place on a cutting board. Repeat with the remaining tuna mixture.
- Refrigerate tuna balls for at least 1 hour before frying, otherwise they won't hold their shape.

CHEESE BALL WITH TUNA
Possibly the easiest and quickest thing you can throw together! Time does not include chilling time, as you can chill for as long or as little as you want or serve immediately. Flavours blend better with a little time to rest though.

Steps:
- Using a fork flake tuna into small little bits into a bowl.
- Add the cream cheese to the bowl and mash with the fork until everything is well combined.
- Add the dijon a small sprinkle of salt and pepper to taste and continue mashing.
- Add the hot sauce to taste! I add up to a full tablespoon, sometimes more, but this is entirely up to your preference. Add a small amount at a time and taste as you mash until you achieve a flavour you like!.
- Scoop the mixture onto the center of a piece of plastic wrap. Wrap tightly and shape into a ball as you roll. Toss it into th fridge until chilled, or into the freezer for 30 mins or so it you are really strapped for time.
- Serve on a platter with crackers!
- **OPTIONS**.
- You can use a different canned fish too! Try Crab or Salmon!
- Try rolling the ball in finely chopped nuts or grated cheese!
- You can omit the hot sauce and dijon and try other seasonings of your choice! (fresh herbs? garlic? hot peppers?).

Steps:
- Melt mozzarella & cream cheese in the microwave. I do about 45 seconds, remove from microwave and stir and pop back in for another 45 seconds.
- Add in almond flour and egg until combined.
- Place dough on parchment paper. Top with the second piece of parchment paper and roll out until it's about 1/4" thick.
- Use a round cookie or biscuit cutter. I used a 3" for this recipe for a smaller tuna ball. You can use a larger one if you prefer.
- In a medium size bowl mix together tuna, cream cheese, and chopped green onions.
- Grab a piece of the fat head dough that's been cut out into a circle. Using a teaspoon, put filling onto the dough. Pinch the ends of the dough together and pinch together to ensure the filling isn't going to come out. Roll in the palm of your hand until the dough looks smooth.
- Place seam side down on the baking sheet and repeat the process until the filling is gone. You will need to reroll the extra fat head dough a second time.
- Bake in the oven at 350° for 20 minutes and golden brown.
- Serve with a side of tartar sauce!

TUNA BALL
There's nothing fancy about the tuna ball, but it tastes great at parties and other get-togethers. Chopped pecans give this blend of tuna, cream cheese, and onion a light crunch. I love this appetizer with veggies, crackers ,and veggies.

- Into a medium-sized mixing bowl begin combining your cheeses of choice. Mix till soft and mouldable. I used a wooden spoon and it worked perfectly.
- Begin adding the rest of your ingredients and stir till everything is well combined. Give your cheese mixture a taste and test for salt + pepper. As as you see fit.

- Split your cheese mixture into using your hands and begin rolling them into large balls (2). Place each ball onto the parchment or cling film and cover with the parchment or cling film. - Cook the pasta: In a large pot, heat the milk over medium heat. Add the pasta, stirring frequently to avoid clumping. Do not boil the milk. Cook the pasta in the milk over medium heat for 15 to 20 minutes until pasta is al dente. Milk should be simmering, but not boiling, you don't want to burn the milk or cause it to separate. Reserve 2 cups of the milk before straining, set pasta aside.
- Prepare the sauce: In a large, deep sided saucepan or braiser, melt the butter over medium-low heat. Whisk in the flour, continuously whisking for 2 minutes until the roux (flour-butter mixture) is a golden color. Reduce heat to low and slowly pour in the reserved milk while whisking. It will bubble and steam. Continue whisking until completely incorporated and there are no flour clumps. Repeat with the cream.
- Get cheesy: Add the cheese one handful at a time, whisking into the sauce until incorporated. Once all the cheese is melted and smooth, stir in mustard, pepper, and 1 teaspoon salt. Add the pasta, mixing until all the pasta is well coated with the cheese sauce.
- Prep the tuna: Remove the tuna fillets from the oil. Break apart into bite sized pieces over the macaroni and cheese. Gently stir into the pasta until well distributed. Spread the tuna casserole into an even layer and chill in the refrigerator for at least 4 hours until completely cold, overnight is best. This step is crucial in shaping the fritters.
