These tuna burgers are so delicious. My husband is a very fussy eater, and he loves these. Enjoy!

1 (5 ounce) can tuna, drained
1 egg
½ cup Italian seasoned bread crumbs
⅓ cup minced onion
¼ cup minced celery
¼ cup minced red bell pepper
¼ cup mayonnaise
2 tablespoons chili sauce
½ teaspoon dried dill weed
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 dash hot pepper sauce
1 dash Worcestershire sauce
4 hamburger buns
1 tomato, sliced
4 leaves of lettuce

Steps:

  • Combine tuna, egg, bread crumbs, onion, celery, red bell pepper, mayonnaise, hot chili sauce, chili sauce, dill, salt, pepper, hot pepper sauce and Worcestershire sauce. Mix well. Shape into 4 patties (mixture will be very soft and delicate). Refrigerate for 30 minutes to make the patties easier to handle, if desired.
  • Coat a non-stick skillet with cooking spray; fry tuna patties for about 3 to 4 minutes per side, or until cooked through. These are fragile, so be careful when turning them.
  • Serve on buns with tomato slices and lettuce leaves, if desired.

2 large eggs
1 cup green beans, trimmed
Kosher salt
2 5-ounce cans tuna packed in olive oil (preferably Italian)
1 bunch scallions, thinly sliced
1 small green bell pepper, diced
1/2 cup fresh parsley
1/4 cup chopped pitted green olives
Juice of 1 lemon
3 tablespoons extra-virgin olive oil, plus more for drizzling
Freshly ground pepper
4 everything bagels, split
1 large tomato, cut into 4 slices

Steps:

  • Put the eggs in a saucepan and cover with cold water by 2 inches. Bring to a simmer over medium-high heat and cook 8 minutes. Remove with a slotted spoon to a bowl of ice water to cool, then peel and slice.
  • Meanwhile, put the green beans in a microwave-safe bowl with 1/2 cup water and a pinch of salt. Cover loosely with plastic wrap and microwave until tender, 2 to 3 minutes. Drain and rinse under cold water. Cut the green beans in half.
  • Drain the tuna and toss with the green beans, scallions, bell pepper, parsley, olives, lemon juice, 3 tablespoons olive oil, 1/4 teaspoon salt, and pepper to taste.
  • Lightly toast the bagels. Layer the tomato slices, tuna salad and hard-boiled eggs on the bagel bottoms. Drizzle with olive oil and close with the bagel tops.

3 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 teaspoon white wine vinegar
1 pound fresh tuna, finely chopped
1/4 cup nicoise olives, finely chopped
1/4 cup finely chopped basil
1 tablespoon capers, drained and chopped
1 large shallot, finely chopped
Salt and freshly ground pepper
2 plum tomatoes, grilled, seeds removed and halved
1 tablespoon lemon juice
3 cloves garlic
2 cups prepared mayonnaise
Salt and freshly ground pepper
1 baguette, cut into fourths
Mesclun greens

Steps:

  • Mix together the mayonnaise, Dijon and vinegar. Place tuna in a large bowl. Fold in the mayonnaise mixture, olives, basil, capers and shallots and season with salt and pepper to taste. Chill the mixture well. Divide the mixture into fourths and mold into burgers. Chill again for 30 minutes. Grill for 2 to 3 minutes on each side.
  • Place tomatoes, lemon juice and garlic in the blender and blend until smooth. Add the mayonnaise and blend until just combined. Season with salt and pepper to taste.

1 10-ounce russet potato, pierced several times with fork
1/2 cup nonfat mayonnaise dressing
4 teaspoons Dijon mustard
1 teaspoon white wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup finely chopped fresh basil
1/4 cup diced pitted brine-cured black olives (such as Kalamata)
4 teaspoons chopped drained capers
4 teaspoons minced shallots
1 pound skinless boneless fresh tuna steaks, finely chopped
Nonstick vegetable oil spray
4 3-inch-long pieces French bread
4 tomato slices
4 butter lettuce leaves

Steps:

  • Cook potato in microwave until tender, about 5 minutes per side. Peel potato; mash enough to measure 1/4 cup (packed).
  • Place 1/4 cup mashed potato in bowl. Mix in 1/4 cup mayonnaise, mustard, vinegar, salt and pepper, then 1/4 cup basil, olives, capers and shallots. Add tuna and combine gently. Shape into four 1-inch-thick patties. Mix remaining cup mayonnaise and 1/4 cup basil in small bowl.
  • Prepare barbecue (medium-high heat). Spray both sides of burgers with nonstick spray; grill until just opaque in center, about 4 minutes per side.
  • Cut bread pieces lengthwise into thirds; discard centers. Spread basil mayonnaise on bottom halves. Top with burgers, tomatoes, lettuce and bread tops.
