TUNA FRITTERS
My DH wanted these and I looked here and couldn't find one for tuna!! This came out perfect. I think you can add just about anything to make it a dinner or a little sugar and berries for a desert!!

Steps:
- Sift flour, baking powder and salt into a mixing bowl.
- Beat the eggs well.
- Beat in milk.
- Combine liquid ingredients with dry ingredients.
- Stir until all flour is moistened.
- Stir in the tuna.
- Drop by teaspoonfuls into hot oil, 375 degrees.
- Fry until golden on all sides.
- Drain on paper towels.

TUNA AND CORN FRITTERS
These little fritters - or 'tuna pancakes' as my 5 year old calls them, are fast and nutricious - and loved by big and little people alike - especially my very fussy 5 year old. You can even can add sweet chilli sauce and some fresh coriander to give them an Asian flavour.

Steps:
- Mix all the ingredients together in a bowl.
- Heat up a frying pan.
- When the pan is hot, spoon the mixture in heaped spoonfuls into the pan.
- Cook in batches for about 3 minutes each side, or until both sides are golden brown.
- Remove from the pan, and continue cooking in batches.

- Place shredded zucchini in a linen towel and squeeze really well, twisting at the top and pressing on the “ball” with zucchini. I have squeezed about 1/2 cup of water.
- Discard liquid and transfer zucchini to a large mixing bowl along with tuna, eggs, Parmesan cheese, mayo and salt. Mix really well, breaking tuna into pieces. Sprinkle flour on top and mix until well combined.
- Preheat large ceramic non-stick skillet or griddle on medium heat and spray with cooking spray or add a bit of oil and spread with spatula (my preference). Add about 1/3 cup mixture (don’t flatten too thin), fry for 4-5 minutes, carefully flip and cook another 4 minutes or until brown. Work in batches. Fritters fry faster as skillet gets hotter, so watch closely.
- Serve hot or cold, with a simple Greek yogurt/kefir + garlic + black pepper sauce if you wish (optional but so good).

- In a large bowl combine the corn, tuna, zucchini, chillies, coriander, spring onion, flour and eggs stirring until well mixed. If the batter is a little stiff, and a tablespoon of water at a time until it reaches a looser consistency. Cover with cling film and place in the fridge for 20 minutes.
