Steps:
- Place bechamel/white sauce and can of asparagus soup in a saucepan and heat together over low to medium heat with curry powder and nutmeg, season with salt and pepper.
- Add approx ½ cup of the cheese and stir in thoroughly.
- Heat pasta until cooked.
- Place tuna, cooked pasta, sauce, canned asparagus, canned corn in a baking dish and mix thoroughly.
- Sprinkle remaining cheese on top and heat in oven on approx 180oC until cheese has melted and browned slightly (approx 20 minutes).
- You could also use breadcrumbs with the cheese on top if you prefer.

- In a medium saucepan, whisk together vegetable broth, lemon juice and corn starch.
- Stir in whipping cream, salt and pepper to taste.
- Bring to a boil, whisking constantly.
- Reduce heat to low.
- Break tough steems off bottom of asparagus and discard.
- Thinly slice remaining asparagus.
- Add asparagus and 1 pkg of asparagus ravioli to boiling water.
- Bring to a boil and cook 3-5 minutes until tender.
- Drain.
- Toss ravioli and asparagus with sauce.

SIMPLE TUNA CURRY WITH RICE

- Start the rice cooking.
- Over low to moderate heat, saute onion, garlic, and your vegetable of choice in butter. (If you use tuna packed in oil, you can drain the oil and use that to saute the onions.)
- Season with salt and curry powder and continue to saute until veggies are tender.
- Stir flour into vegetables until it coats them and combines with the butter/oil.
- Over moderate heat, add enough of the milk to cover the vegetables, and stir to create a smooth sauce. As the milk begins to heat, the butter/flour mixture that was coating the vegetables will begin to blend with and thicken the milk. Once it becomes thick, add half of the remaining milk, and continue stirring until it again heats to the thickening point. Then add the rest of the milk, stir again, and allow to come to the thickening point for the last time. (This process is a bit difficult to describe, but not hard to do. Adding the milk at little at a time and stirring to keep it smooth as you go keeps the sauce from forming lumps and prevents scorching. You can also do this step over low heat, in which case you don't have to stand right over the pot stirring constantly, but it's still good to add the milk in stages, and stir regularly.).
- Once the sauce is heated, add the tuna, and bring back to simmering. If the tuna is packed in oil, drain the oil (which you may have used in step one). If it's packed in water, you can just dump the whole can into the sauce, water and all.
- Serve tuna curry over rice. A green veggies side is nice (steamed asparagus or broccoli, cucumbers in vinaigrette, green salad, or peas).

- In a small saucepan place 2 cups of water and bring to a boil, lower heat to simmer and place tuna steaks into the water for about 8-10 minutes, covered on low heat.
- Remove from heat once steaks are opaque and drain water from them and let them cool a bit.
- Heat oil in frying pan and place diced onion in pan and saute until opaque.
- Open your coconut milk and place in a med saucepan or deep fry-pan.
- Add curry powder and stir it in well ( you can adjust curry powder to taste).
- Cut up tuna steaks into 1" cubes and add to the sauce keeping on a low flame.
- Add onion and peas to mixture and simmer for about 5 minutes.
- Serve over a bed of rice or noodles.

This simple tuna casserole in one of the fillings that I put in vol-au-vents. You can just about fill it with any type of casserole of your choice.

- Heat butter in a saucepan and add onion and saute for a few minutes until soft.
- Add tuna and cook for a further 3 minutes.
- Mix flour into tuna mixture and cook stirring at all times for a another minute.
- Add milk, salt and pepper to taste, curry powder and corn and stir until thick.
- Simmer on low for about 5 minutes.
- Place vol-au-vents on a baking tray and pour tuna mixture in each one.
- Sprinkle with cheese and place in a moderate oven until cheese is melted.

- Bring a large pot of salted water to a boil. Cook the pasta following the manufacturer’s instructions to get to the al dente stage.
- While the pasta is cooking, thinly slice the asparagus stalks on the bias, keeping the flowery tips whole. Set aside.
- When the pasta is done, drain, then return to the pot. Add the olive oil, Parmigiano-Reggiano, and lemon juice, and toss to coat the pasta. Season with a good pinch of fleur de sel and some black pepper, then toss again. Add the sliced asparagus, tuna, cherry tomatoes, and capers, and toss one last time to distribute the ingredients.
- SERVING: Divide the fresh asparagus and tuna pasta between serving plates and sprinkle with toasted almonds. Serve with an additional lemon wedge so you can liberally add more juice, if you like things as lemony as I do.
