Traditional Bosnian cuisine is known for sweet delicacies and tulumbe are one of the most popular. Recipe for tulumbe is quite simple and incredibly tasty.

Flour: 300 g
Water: 300 g
Sunflower Oil: 120 ml
eggs: 4 pcs
sugar: 1 tablespoon
Salt: 1 teaspoon
Oil: 500 ml
Water: 1 l
sugar: 600 g
lemon juice: 1/2 lemon

Steps:

  • Put water, sugar and lemon juice in a deep pan. When starts to boil, reduce heat to medium temperature and cook approx. 15 minutes, until you get syrup. Remove from heat and allow to cool completely.
  • In a deeper pan put water, oil, add sugar and salt and bring to boil. When boiling, remove from heat and, gradually, add flour, stirring constantly. Knead until a thick dough is obtained. Allow the dough to cool for 10 min.
  • When the mixture is cooled add 5 yolks and mix the dough well.
  • In the frying pan, pour oil in which we are going to fry tulumbe. Heat oil to medium temperature as it should be neither too hot nor cold.
  • Put the mixture in a pastry bag and make shapes 5-6 cm long. You can use scissors to cut them.
  • Fry them a few minutes on each side to get a nice yellow colour. Tulumbe should be crusty outside and soft inside.
  • When the tulumbe are fried, place them in the cooled syrup. You can put them in the fridge to cool. Tulumbe are served cold.

2 tablespoons butter (we prefer butter) or 2 tablespoons margarine, melted (we prefer butter)
1 cup flour
3 tablespoons water
4 eggs
1/2 teaspoon salt
1 1/4 cups olive oil, for frying
2 cups sugar
1 3/4 cups water
1 teaspoon lemon juice

Steps:

  • SYRUP:.
  • Put the sugar, water and lemon juice into a saucepan, and after melting the sugar by stirring, allow it to boil until moderately thick.
  • Set aside to cool.
  • PASTRY:.
  • Heat the margarine in a saucepan, add the water and salt and bring to the boil.
  • Reduce heat and add the flour at once.
  • Stir the mixture constantly with a wooden spoon and continue until mixture leaves the sides of the pan and forms a ball.
  • This should take 6 minutes, then remove pan from heat and set aside to cool.
  • When cool, add the eggs and knead for approximately 10 minutes.
  • Using a pastry bag with a large nozzle or a serrated spoon, put 7-8 pastries in a pan containing the heated olive oil.
  • Start frying the pastry over low heat, increase heat when pastry puffs up a bit and fry until golden.
  • Remove fried pastry with a perforated spoon, draining away the oil, then put into the syrup.
  • Strain off the syrup, place tulumba on serving plate and serve when cool.

  • To prepare this delicious extra syrupy tulumba recipe, start by making the syrup first. In a small pot add all the ingredients for the syrup and bring to the boil. Let the syrup boil for 4-5 minutes, until the sugar was dissolved and the syrup has slightly thickened. Set aside to cool down completely.
  • Continue by preparing the dough for this tulumba recipe. Pour in a deep saucepan the milk, water, sugar, salt and oil and bring to the boil over medium-high heat. As soon as the mixture boils and the sugar has dissolved, remove the pan from the stove and add all the flour at once. Stir vigorously the mixture with a wooden spoon. Stir hard, until all the flour is incorporated, for about 30-60 seconds. Lower the heat to low and return the pot on the stove. Cook whilst constantly stirring for 30-60 seconds, being careful not to burn the mixture. (What we do here, is trying to get as much water as possible to evaporate out of the mixture.)
  • Scrape the mixture for the tulumba pasties into a mixer fitted with a paddle attachment and mix at medium speed to cool it. With the mixer running, add the 4 eggs, one at a time, waiting each time for the egg to be absorbed. Stop mixing after each addition to scrape down the sides of the bowl. Mix until the dough is smooth and glossy and the eggs are completely incorporated. The dough should be thick, but should fall slowly and steadily from the beaters when you lift them out of the bowl. Add the vanilla extract and the white vinegar and mix again, until incorporated.
