1 1/2 lbs. sea scallops
1/3 lb. bacon, cut slices in half
1/4 lb. butter, melted
1/2 C. dry white wine
1 tbsp. lemon juice
1/2 tsp. paprika
1/2 tsp. seasoned salt

Steps:

  • Preheat oven to 400 degrees. Melt butter and wine together, when melted add paprika and seasoned salt. Drop scallops into melted wine and butter sauce. Allow scallops to marinade for about 30 minutes. Wrap each scallop with half piece of bacon, and fasten bacon with a toothpick. Place wrapped scallops onto a baking pan, and bake in the oven for about 8 minutes, then turn over and cook until done

1/3 lb bacon
2/3 cup butter, melted
1/2 cup white wine
1 tablespoon lemon juice
1/2 teaspoon paprika
1/4 teaspoon seasoning salt

Steps:

  • Cut bacon in half and wrap each half around a scallop.
  • Secure with a toothpick.
  • Mix together wine and lemon juice.
  • Pour over scallops in a shallow dish.
  • Marinade for 1/2 hour.
  • Pour melted butter over scallops.
  • Sprinkle with paprika and seasoning salt.
  • Bake at 400* for 15- 20 minutes.

I just LOVE Red Lobster,s scallops cooked this way. I was so glad to find the recipe online since I bought scallops for dinner tonight. Putting here for safe keeping.

24 peeled jumbo shrimp
24 scallops
bamboo skewers for shrimp (soaked in water for 10 - 15 minutes)
two-prong metal skewer for scallops
olive oil
24 bacon
salt and pepper
peach bourbon barbecue sauce (see below)
peach bourbon barbecue sauce
2 cups of your favorite barbecue sauce
1/4 cup ripe fresh peaches or 1/4 cup peach preserves
2 1/2 tablespoons Bourbon

Steps:

  • Place shrimp next to each other on a bamboo skewer, leaving room on either end. Make sure to cover the end of the skewer with foil so it doesn't burn.
  • Wrap one piece of bacon around each scallop and place scallops on a two-pronged skewer so they don't turn.
  • Brush both sides of the shrimp and scallops with olive oil and season with salt and pepper.
  • Place the shrimp and scallops on a medium hot grill. Keep an eye on them because they will cook quickly and you don't want to burn them.
  • Grill shrimp and scallops for approximately 2-3 minutes per side. Take them off the grill when they are about 80 percent done.
  • Add the Peach Bourbon BBQ sauce during the last moments of cooking or when the cooking is complete for added flavor.

  • Combine all ingredients in a small sauce pan.
  • Bring to a simmer while stirring for 8-10 minutes, allowing the alcohol to cook down.
  • Cool and blend in a food processor or blender until smooth.

3 tablespoons fresh lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut the bacon slices in half and wrap each half around a scallop. Use a toothpick to secure in place. Drizzle lemon juice over scallops. Place on a cookie sheet.
  • Bake in a preheated oven for 15 to 20 minutes or until bacon is cooked. Serve warm.
