Provided by John Mitzewich

Categories     Appetizer

Time 22m

Yield 5

Number Of Ingredients 4

2 1/2 pounds chicken wings (12 to 16 whole wings separated into "flat" and "drummette" pieces)
Neutral cooking oil (like canola or peanut ; for frying)
1/2 cup Anchor Bar Wing Sauce (medium)
For serving: blue cheese dressing and celery sticks

  • Dry wing pieces well with paper towel.
  • Heat a large pot filled with 2 to 3 inches of the cooking oil to 350 F. Set the oven to warm.
  • Place a few wings at a time in the hot oil to fry. Do not crowd the pot.

  • Remove with a slotted spoon to a baking sheet and place in the oven to keep warm while you cook the remaining wings.
  • After all of the wings are cooked, transfer to a large mixing bowl. Pour the hot sauce over the hot wings and toss with a spoon or spatula to completely coat.

AIR-FRIED CHICKEN WINGS

Air-fried chicken wings image

Use an air fryer to make these easy chicken wings, and add the seasoning or sauce of your choice. They're perfect for a buffet or just a movie night snack

Provided by Anna Glover

Categories     Buffet, Side dish, Snack

Time 40m

Number Of Ingredients 4

1kg chicken wings
1 tbsp sunflower or olive oil
seasoning of your choice (use salt and pepper, or ½-1 tsp of either smoky BBQ, ras-el-hanout, garlic granules, celery salt or garam masala)
dipping sauce, to serve (optional)

Steps:

  • Separate each chicken wing in two at the joint, removing the wing tips if you like using sharp kitchen scissors. Toss the chicken wings in the oil and seasoning, then tip into an air fryer (you can either use one with a paddle, or arrange them on the tray of your air fryer if it doesn't have a paddle).
  • Program the air fryer to cook for 35 mins. Check the wings are tender and cooked through - they should be almost falling off the bone - and cook for a further 5 mins if needed. The skin should have bubbled and crisped up, and any excess fat from the chicken will have dripped off into base of the fryer (discard this). Don't leave the chicken in the fryer, or the steam will make the skin soft again. Immediately tip into a bowl and serve with sauce for dipping.

TRUE WINGS

True Wings image

Since I started making this back in the 90's I've called them my world-famous wings. I wanted to make wings for the big game and wanted them to be something better than just fried wings. Serve with blue cheese or ranch dressing.

Provided by true

Categories     Appetizers and Snacks     Meat and Poultry     Chicken

Time 1h45m

Yield 10

Number Of Ingredients 21

4 pounds chicken wings
1 ½ tablespoons garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon chili powder
1 tablespoon cumin
1 (1.41 ounce) package sazon seasoning
1 teaspoon cayenne pepper
4 cups oil for frying
cooking spray
½ cup butter
1 ½ cups hot sauce (such as Frank's RedHot ®)
1 ½ cups maple-flavored syrup
3 tablespoons brown sugar
1 ½ tablespoons garlic powder
1 tablespoon ground cumin
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon chili powder
¾ teaspoon cayenne pepper
2 cups all-purpose flour

Steps:

  • Place wings in a large glass bowl. Sprinkle 1 1/2 tablespoons garlic powder, 1 tablespoon onion powder, 1 tablespoon paprika, 1 tablespoon chili powder, 1 tablespoon cumin, sazon seasoning, and 1 teaspoon cayenne pepper over chicken wings and rub spices into wings to coat completely. Cover the bowl with plastic wrap and refrigerate, 1 hour to overnight.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.
  • Melt butter in a saucepan over medium heat; whisk hot sauce and syrup into butter. Add brown sugar, 1 1/2 tablespoons garlic powder, 1 tablespoon cumin, 1 tablespoon onion powder, 1 tablespoon paprika, 1 tablespoon chili powder, and 3/4 teaspoon cayenne pepper; whisk until well-combined and the sauce is hot, 2 to 3 minutes. Remove from heat.
  • Pour flour into a shallow bowl. Gently press the chicken wings into the flour to coat and shake off any excess.
  • Working in batches, cook wings in hot oil until the skin is golden and crispy, the meat is no longer pink at the bone and the juices run clear, 5 to 10 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Transfer wings to a plate lined with a paper towel to drain excess oil.
  • Dip each chicken wing in the hot sauce mixture and place on the prepared baking sheet.
  • Bake in the preheated oven until sauce starts to caramelize, about 20 minutes.

  • In a large ziplock bag, combine the flour, paprika, cayenne pepper, garlic powder, and salt and pepper to taste. Stir to fully combine.
  • Add in the chicken wings about 10 at a time, sealing and shaking to fully coat the wings in the flour mixture. Remove wings from the mixture and place on a paper plate. Repeat with all the wings until they are all fully coated in the flour mixture. Place wings in the fridge for 10-30 minutes; this will help the flour to fully adhere to the wings.
  • While the wings chill in the fridge, heat 3 inches of oil in a large stock pot or dutch oven to 360F.
  • Fry the wings in batches of 10 for 10-15 minutes, or until the wings are crispy, browned, and fully cooked through. Remove from the oil with a slotted spoon and place on a paper towel lined plate to drain.

  • Ruby Mixer by Nan Flanagan: The book kicks off with a recipe for Tru Blood, minus the blood, for those of us who aren’t plasma-inclined. A combination of carbonated orange soda, grenadine and lemon juice, this beverage is your basic True Blood staple.
  • Mama’s Whiskey Sour by Tara Thornton: In season 1, Tara boldly proclaims that she’s been mixing whiskey sours for her mama since the first grade. Now we too get to indulge in Lettie Mae Thornton’s choice of breakfast.
  • Beautifully Broken Bisque by Russell Edgington: Of all the recipes in the True Blood cookbook, this one comes the closest to looking like actual blood.
  • Brujo Burger by Lafayette Reynolds: No True Blood cookbook would be complete without a burger by Lafayette. Luckily for us, there’s no AIDS to be found.
  • Sloppy Jason by Jason Stackhouse: I was surprised to find any recipes by Jason in here since he’s always trying to get Gran (RIP) or Sookie to cook for him, but this recipe seemed to be just perfect.
  • Plaisir d’Amour Rabbit Stew by Maryann Forrester: I was really hoping there’d be a recipe in here for Maryann’s Hunter Souffle, but I guess it’s uncouth to include a dish that requires a human heart.
  • Just Desserts Blood (Orange) Gelato by Talbot: I remember seeing this gelato on screen and thinking it looked amazing (despite the fact that it was, you know, made of blood), so I was thrilled to see it included here.
  • Last Rites Pecan Pie by Tara Thornton: There was no way this cookbook could not include Gran’s pecan pie. (Remember this?) I must admit that I’m a little confused as to why it was written by Tara and not Gran; however, Tara’s intro to the recipe — in which she thanks Gran for being more of a mother to her than Lettie Mae ever was — is pretty sweet.
  • Way Back to Joy Banana Pudding by Sarah Newlin: Apparently, Sarah’s banana pudding is more than just, uh, innuendo. This recipe makes four servings, so you’ll have plenty if you’re planning to seduce anyone!
  • The Pearl in My Oyster Po’Boy by Naomi: I had to include this one on this list, if only because it’s so weird. Naomi, in case you looked at that name and wondered if she was a real True Blood character (I did), was Tara’s girlfriend on the show’s fourth season.

  • Line a large glass plate with 2 layers of paper towels. Place wings on plate. With another set of paper towels pat dry the top of wings, removing excess moisture. Turn and repeat. Wings can be refrigerated in between paper towels for about 1 hour to help absorb excess moisture.
  • Dip wings into dry rub, turning multiple times to ensure even coating. Place dipped wings onto a large platter.
  • Preheat grill to medium heat, about 400℉ (takes about 10-15 mins). Once heated, place wings on grill plate closest to the heat. After about 10-12 mins turn wings and continue grilling for another 10 mins. Once 20 mins has elapsed, move wings to the coolest (top rack) area of grill and continue grilling for another 10 mins or until internal temperature reaches 165℉ making sure to not let the thermometer touch the bone. Pro Tip: Cook the wings with the lid closed but keep a close eye on not letting the temperature rise above 450℉. If temperature does climb above, open lid for a few minutes. The sugar in the dry rub will cause charring so moving the wings will help keep this to a minimal.
