WIENER SCHNITZEL (BREADED VEAL CUTLETS)

Wiener Schnitzel (Breaded Veal Cutlets) image

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 2 servings

Number Of Ingredients 8

8 slices white bread, crusts removed
Flour for dredging
2 large eggs
2 tablespoons whole milk
Kosher salt and freshly ground black pepper
2 veal cutlets (scaloppini) (about 2 1/2 ounces each), patted dry
1/4 cup unsalted butter, divided
2 lemon wedges

Steps:

  • In a food processor, pulse the bread into fine crumbs. Transfer the breadcrumbs to a shallow bowl or lipped plate.
  • Put the flour in a shallow bowl or plate. Break the eggs into another shallow bowl and whisk with the milk, and season with salt, and pepper to taste.
  • To bread the meat: Dredge a cutlet in the flour, shaking off the excess; then dip it into the eggs, and finally coat the meat evenly with the breadcrumbs. Set on a piece of waxed paper or baking sheet. Repeat with the remaining cutlet.
  • Heat 2 tablespoons butter in a medium non-stick skillet over medium-high heat. While the butter is still foaming add the breaded cutlets and cook, swirling the skillet in a tight circle (this keeps the cutlets moving around the skillet), until golden brown and cooked through, about 1 1/2 minutes for the first side. Turn the meat and cook 1 minute on the second side to crisp the breading. Transfer to a plate and cover very loosely with foil while you cook the other cutlet. Serve with the lemon wedges.

WIENER SCHNITZEL

Wiener Schnitzel image

The famous Austrian Wiener Schnitzel makes a perfect dinner. Only 15 minutes of your time and you get a crazy delicious and tender veal cutlet!

Provided by CookingTheGlobe

Time 16m

Number Of Ingredients 7

2 lb veal cutlets
1/2 cup (50-60g) all-purpose flour
2 eggs
1 heaping cup (100g) breadcrumbs
Butter for frying
Salt and pepper, (to taste)
1 lemon, (sliced)

Steps:

  • Lay each veal cutlet between sheets of plastic wrap, and pound with the flat side of a meat mallet as thin as possible without tearing them. Season with salt and pepper.
  • Prepare three shallow bowls or plates. Put the flour in one plate, whisked eggs in another one, and breadcrumbs in the third plate. Dredge each cutlet in the flour shaking off the excess, then dunk it in the egg and lastly coat with the breadcrumbs, once again shaking off the excess. The key is to immediately fry the cutlet after it has been breaded. In this way the coating won't stick to the veal.
  • Melt butter in a non-stick frying pan and cook the breaded cutlet until browned and cooked through, for about 2-3 minutes on each side. Cook time depends on the thickness of your cutlets. Transfer to a paper-towel-lined plate and cover with foil till you are cooking other ones. Serve with a lemon slice. Enjoy!

WIENERSCHNITZEL (BREADED VEAL CUTLETS)

Wienerschnitzel (Breaded Veal Cutlets) image

This recipe is almost identical to what I had at an authentic German restaraunt. The recipe comes from "The German Cookbook" by Mimi Sheraton, which I altered slightly. I like to serve it with fried German potatoes and a melody of peas, carrots and corn.

Provided by Kim D.

Categories     Veal

Time 35m

Yield 4 serving(s)

Number Of Ingredients 9

4 veal cutlets
1 lemon
salt, to taste
1 cup all-purpose flour
2 eggs
2 tablespoons water
2 tablespoons vegetable oil
1 cup fine dry breadcrumb
4 tablespoons vegetable shortening (more might be needed depending on the size of your pan)

Steps:

  • Place veal cutlets, one piece at a time, between two pieces of plastic wrap and pound until thin, about 1/4 inch thick.
  • Slice lemon in half and squeeze lemon juice over all four pieces of veal.
  • Allow the veal to sit in lemon juice for 30 minutes.
  • Allow excess lemon juice to drip off before breading the cutlets.
  • Sprinkle a pinch of salt over each cutlet.
  • Place flour in a large shallow plate.
  • Beat eggs, water, and vegetable oil in a large shallow bowl. ~NOTE~ The vegetable oil helps to hold the breading on securely and to make the breading crisp.
  • Place breadcrumbs in a large shallow plate.
  • one at a time, dip salted cutlet into the flour and lightly cover each side with flour.
  • Then dip the cutlet into the egg mixture, allowing the excess egg to drip off.
  • Then dredge into the breadcrumb mixture to coat.
  • Place breaded cutlets on a baking sheet and low to stand at room temperature for 30 minutes.
  • Heat shortening in a large heavy skillet.
  • There should be enough oil in the pan for the cutlets to "swim".
  • When the oil is hot, place one or two cutlets in the skillet at a time, being careful not to crowd the cutlets.
  • Fry first side slowly until golden brown, about 4-6 minutes.
  • Turn cutlets over with a spatula, being careful not to splatter hot oil.
  • Fry on second side for about 4-6 minutes, or until golden brown.
  • Drain on paper towels.
  • If you have more cutlets to fry, then place finished cutlets in a piece of foil and keep warm in the oven at 250°F while you continue to fry up the rest of the cutlets.

VEAL PARMIGIANA

Veal parmigiana image

A classic New York dish - tender escalopes layered up with tomato sauce and mozzarella, then baked in the oven to gratinate. Heaven.

Provided by Jamie Oliver

Categories     Mains     Jamie's America     Beef     Dinner Party     American     Pork     Eggs

Time 1h10m

Yield 4

Number Of Ingredients 14

a few sprigs of fresh basil
olive oil
3 cloves of garlic, peeled and finely sliced
3 anchovies, from sustainable sources
1 fresh red chilli
2 x 400 g tins of chopped tomatoes
200 g fresh breadcrumbs
a few sprigs of fresh thyme, leaves picked
a handful of freshly grated Parmesan cheese
1 lemon
150 g plain flour
2 large free-range eggs, beaten
4 x 200 g higher-welfare veal or pork leg escalopes, flattened to a thickness of 2cm
1 x 125 g ball of buffalo mozzarella cheese

Steps:

  • Italian immigrants brought this dish to America, and since then veal parmigiana has become a classic New York dish, and rightly so. I love it when it's layered up like this, with the tomato sauce and cheese, then baked in the oven to gratinate. Feel free to swap veal for pork leg or even chicken that's been battered out. If you want to spike this with a bit of extra flavour you could also add a few capers or olives to the tomato sauce.
  • Preheat your oven to 200ºC/400ºF/gas 6. Pick the leaves off the sprigs of basil and put them into a small bowl of water to keep them fresh. Finely chop the tender stalks. Put a pan on a medium heat and add a splash of olive oil, the chopped basil stalks, garlic and anchovies and cook for a few minutes. Prick the chilli a few times and add it to the pan. Allow everything to sizzle for a minute or so, then pour in the tinned tomatoes. Bring to the boil, then turn the heat down and simmer for 20 minutes. Season to taste with sea salt and black pepper.
  • Meanwhile, prepare your escalopes. Mix the breadcrumbs in a bowl with the thyme leaves and Parmesan. Finely grate your lemon zest into the breadcrumbs, mix again, then lay out three plates in front of you. Put the flour on one and season it with salt and pepper, pour the eggs on to the next plate and put the herby breadcrumbs on the third. Dip the escalopes, one at a time, into the flour until well coated. Shake off any excess, then dip into the egg. Let the extra egg drip off, then lay the escalope in the breadcrumb mixture. Sprinkle a handful of crumbs over the top and press them down. Make a real point of getting breadcrumbs on to every part of the escalope.
  • Heat a large non-stick frying pan over a medium heat and add a good splash of olive oil. Let it heat up a bit, then add your escalopes. If your pan isn't big enough, you may have to cook them in batches, adding a little extra oil if needed. Cook for a few minutes on each side until lightly golden, then transfer to a plate lined with kitchen paper to drain. Get yourself a snug-fitting, appropriately sized baking dish (approx. 30 x 20cm) and spread the tomato sauce in the dish. Lay your escalopes on top, side by side. Tear the buffalo mozzarella into pieces and dot these over the dish with a few basil leaves.
  • Bake in the oven for 20 minutes until golden, bubbling and deliciously cooked. Sprinkle the rest of the basil leaves over. Perfect with a crunchy zingy salad, but in America they'd also serve it with things like spaghetti, rice or mashed potatoes, polenta or crusty bread.

TRUE WIENER SCHNITZEL (BREADED VEAL SCALLOPS - AUSTRIA)

True Wiener Schnitzel (Breaded Veal Scallops - Austria) image

The ingredients are basic and simple but the method is what gives you a perfect schnitzel. Simplicity at its best. Use the best meat and fresh oil or lard. There are others with these ingredients but I have not found one yet that focuses on the importance of the preparation. You need to have a light shell of breading, rather than a heavy coating. See the prep notes.

Provided by MarraMamba

Categories     German

Time 18m

Yield 4 serving(s)

Number Of Ingredients 6

4 veal cutlets, pounded to 1/4 inch thickness (traditional, about 5 oz. each, you may use chicken or pork, as well)
1/4 cup flour (all purpose or brown rice)
1/4 teaspoon salt
1/2 cup breadcrumbs
2 eggs
oil (lard is traditional) or lard (for frying, lard is traditional)

Steps:

  • When flouring and breading do not press them into the meat, especially the breadcrumbs.
  • Ensure that there is enough oil or lard for the meat to "float" in it, it will absorb less oil than if it sticks to the bottom, and allows the coating to puff a little around the meat.
  • Heat at least 1/4 inch of oil in the pan to 350°F.
  • Working one at a time, dredge cutlets first in flour until the surface is completely dry. Dip in egg to coat, allow the excess to drip off for a few seconds and then roll quickly in the breadcrumbs until coated. Do not press breadcrumbs into the meat. Place meat immediately in the pan with the hot oil. Do not crowd the pan. Cook the schnitzel in batches, if necessary.
  • Fry the schnitzel for 3-4 minutes on one side. You may want to swish them around a little with your fork to make sure they are not sticking to the pan. Turn them over once and fry until both sides are golden brown. Remove from pan, allow the oil to drain off, place on a plate with lemon slices and potato salad or green salad and serve.

AUTHENTIC GERMAN SCHNITZEL (SCHWEINESCHNITZEL)

Authentic German Schnitzel (Schweineschnitzel) image

Learn how to make that perfectly crispy breaded Schnitzel you know and love from your favorite German restaurants!

Provided by Kimberly Killebrew

Categories     Main Course

Time 16m

Number Of Ingredients 6

4 boneless pork steaks or chops, (to make Austrian Wienerschnitzel use thin veal cutlets)
salt and freshly ground black pepper
1/2 cup all-purpose flour combined with 1 teaspoon salt
2 large eggs, lightly beaten
3/4 cup plain breadcrumbs
Oil for frying (use a neutral-tasting oil with a high smoke point)

Steps:

  • Place the pork chops between two sheets of plastic wrap and pound them until just 1/4 inch thick with the flat side of a meat tenderizer. Lightly season both sides with salt and freshly ground black pepper.
  • Place the flour mixture, egg, and breadcrumbs in 3 separate shallow bowls. Dip the chops in the flour, the egg, and the breadcrumbs, coating both sides and all edges at each stage. Be careful not to press the breadcrumbs into the meat. Gently shake off the excess crumbs. Don't let the schnitzel sit in the coating or they will not be as crispy once fried - fry immediately.
  • Make sure the cooking oil is hot enough at this point (about 330 degrees F) as you don't want the Schnitzel to sit around in the coating before frying. Use enough oil so that the Schnitzels "swim" in it.
  • Fry the Schnitzel for about 2-3 minutes on both sides until a deep golden brown. Transfer briefly to a plate lined with paper towels.
  • Serve immediately with slices of fresh lemon and parsley sprigs or with your choice of sauce. Serve with German Spaetzle (see recipe for Homemade German Spaetzle), French fries, or German potato salad, and with a fresh leafy green salad.
  • Be sure to also try the popular Jägerschnitzel version!

BREADED VEAL WIENER SCHNITZEL

Breaded Veal Wiener Schnitzel image

Except in Vienna, where boiled beef is popular, Wiener Schnitzel is the favorite meat in Austria. The word schnitzel simply means "a sliver," and thrifty cooks make their schnitzels from thin slices of pork or beef. True Wiener Schnitzel, however, is a veal scallop. From Cooking The Austrian Way by Helen Hughes.

2 lemons, each cut into 4 sections, garnish
