Extra-virgin olive oil
1 onion, diced
2 stalks celery, diced
2 cloves garlic, smashed
Salt
2 pounds white fish bones, such as cod
1/2 pound shrimp shells
2 bay leaves
3 thyme sprigs
Extra-virgin olive oil
1 large onion, sliced
1 fennel bulb, sliced thin, reserve fronds for garnish
2 celery stalks, sliced thin on the bias
Kosher salt
3 cloves garlic, sliced thin
Pinch crushed red pepper
2 cups white wine
2 quarts light fish stock
Large pinch saffron
1 (28-ounce) can Italian plum tomatoes, crushed or pureed
1 bundle thyme
3 bay leaves
Extra-virgin olive oil
1 pound cleaned cod fillets, cut into 4 pieces
Kosher salt
16 littleneck clams
4 cups basic tomato broth
1/2 pound large shrimp, shelled and deveined, reserve shells for stock
1 1/2 cups cooked cannellini beans
2 cups escarole leaves
1/2 loaf ciabatta, cut into 4 (3/4-inch) thick slices
1 garlic clove
High quality extra-virgin olive oil

Steps:

  • Heat a stock pot, lightly coated with olive oil, over medium heat. Add the onion, celery, garlic and salt, to taste, and sweat for 3 to 4 minutes. Stir in the fish bones and shrimp shells and fill the pot with water. Add the bay leaves and thyme and bring to a boil. Lower the heat and simmer for 20 minutes. Strain the liquid into a bowl and reserve. Voila! Fishstock!
  • For the tomato broth:
  • Heat a large saucepan, lightly coated with olive oil, over medium heat. Add the onions, fennel, celery and a large pinch of salt. Cook the veggies until soft and very aromatic, about 8 to 10 minutes. Add the garlic and crushed red pepper and cook for another 3 to 4 minutes. Stir in the wine and reduce by half. Season with salt. It's important to season all along the way.
  • Add 2 quarts of fish stock and the saffron. Stir in the pureed tomatoes, thyme and bay leaves. Season with salt and cook for 20 to 30 minutes. The final broth should be a very pretty and flavorful soup. Taste and add salt, if needed. Remove and discard the thyme bundle and bay leaves. Reserve.
  • Heat a straight sided saute pan, lightly coated with olive oil, over high heat. Season the cod with salt, add it to the pan and brown it on all sides. Remove the cod from the pan to a large plate and reserve.
  • Drain the fat from the pan and add the clams and about 4 cups of the tomato broth. Cover and cook until the clams open, about 3 to 4 minutes. Add the shrimp and cod along with the beans and the escarole. Cover and cook until the cod and shrimp are cooked through and the escarole is wilted. If at any point the soup has cooked down too much, add more tomato broth.
  • For the toast:
  • Preheat grill. Place bread slices on grill and toast on both sides. Remove and rub with garlic. Drizzle with olive oil and cut in half.
  • To assemble:
  • Remove the cod, clams and shrimp from the pan and put in a bowl. Spoon the beans and escarole into serving bowls. Ladle in the tomato broth and arrange the cod, clams and shrimp on the beans and escarole. Drizzle with olive oil and sprinkle with fennel fronds. Serve 2 grilled bread slices with each serving.

CIOPPINO, THE CLASSIC ITALIAN-AMERICAN FISH STEW for which San Francisco is famous, takes on a new life in the Northwest, with fennel and a hint of anchovy to boost the flavor. The mashed avocado is used as a thickener and adds a richness to the dish, but it's optional. We use a variety of seafood, but feel free to use whatever is fresh in your fish market. We like to use true cod, also known as Pacific cod, because of its flaky texture and mild flavor. (Pacific cod is preferable to Atlantic cod, an overfished species.) True cod is often available frozen. If you find it fresh ask your fishmonger to bone it for you.

Number Of Ingredients 18

1 tablespoon extra-virgin olive oil
6 garlic cloves, chopped
1 medium yellow onion, chopped
1/2 green bell pepper, chopped
2 8-ounce bottles clam juice
2 tablespoons freshly squeezed lemon juice
4 cups Marinara Sauce with Fresh Herbs (page 241) or store-bought marinara sauce
1/2 teaspoon kosher salt
1 teaspoon red pepper flakes (see Note)
1/4 teaspoon freshly ground black pepper, or more to taste
1/2 avocado, mashed
1 teaspoon anchovy paste
1/2 fennel bulb, cored and roughly chopped
8 ounces skinless cod or other meaty white fish fillet, cut into 1-inch cubes
5 ounces bay scallops
8 ounces large prawns, peeled and deveined
1 pound Manila clams, scrubbed
1 pound mussels, scrubbed and debearded

Steps:

  • Heat the olive oil in a large pot over medium heat. Add the garlic, onion, and bell pepper and cook until the onion is just translucent, about 3 minutes. Add the clam juice and lemon juice and stir to combine. Add the marinara sauce, salt, red pepper flakes, black pepper, avocado, anchovy paste, and fennel and stir. Simmer the mixture for 5 minutes, stirring occasionally.
  • Carefully place the cod, scallops, prawns, clams, and mussels in the pot. Cover and cook over medium heat for about 5 minutes, or until the prawns turn pink and the clams and mussels open. Remove the pan from the heat, discarding any unopened clams and mussels.
  • Ladle the cioppino into large bowls, garnishing each with black pepper, if desired. Serve hot.

1 bunch Swiss chard, stems removed and chopped (about 4 cups)
1/2 pound fully cooked Spanish chorizo links, chopped
1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
1 medium onion, chopped
1 cup fresh or frozen corn
4 garlic cloves, minced
1 teaspoon salt
1 teaspoon pepper
1 bottle (12 ounces) beer
1/3 cup olive oil
Grilled French bread baguette slices

Steps:

  • Place clams in a stockpot; top with the next 8 ingredients. Add beer and oil; bring to a boil. Reduce heat; simmer, covered, for 10 minutes., Stir; cook, covered, until clams open, 5 to 7 minutes longer. Discard any unopened clams. Ladle into bowls; serve with grilled bread.

3 bay leaves

Steps:

  • For the fish stock: Heat a stockpot, lightly coated with olive oil, over medium heat. Add the onion, celery, garlic and some salt, and sweat for 3 to 4 minutes. Stir in the fish bones and shrimp shells, and fill the pot with water. Add the bay leaves and thyme and bring to a boil. Lower the heat and simmer for 20 minutes. Strain the liquid into a bowl and reserve. Voila! Fish stock!
  • For the tomato broth: Lightly coat a large saucepan with olive oil and heat over medium heat. Add the onion, fennel, celery and a large pinch of salt. Cook the veggies until soft and very aromatic, 8 to 10 minutes. Add the garlic and crushed red pepper and cook for another 3 to 4 minutes. Stir in the wine and reduce by half. Season with salt. (It's important to season all along the way.)
  • Add 8 cups of the fish stock and the saffron. Stir in the tomatoes, thyme and bay leaves. Season with salt and cook for 20 to 30 minutes. The final broth should be a very pretty and flavorful soup. Taste and add salt as needed. Remove and discard the thyme bundle and bay leaves.
  • For the stew: Heat a straight-sided saute pan, lightly coated with olive oil, over high heat. Sprinkle the cod with salt, add it to the pan and brown it on all sides. Remove to a large plate and reserve.

Add the shrimp and cod along with the beans and the escarole. Cover and cook until the cod and shrimp are cooked through and the escarole is wilted. Ladle in the tomato broth and arrange the cod, clams and shrimp on top of the beans and escarole. Drizzle with olive oil and sprinkle with fennel fronds. Being from the Easy Coast, I've tried a lot of different chowders; however, my Mom's takes the cake. She makes a huge pot of this chowder every Christmas Eve and all of it is gone by Christmas night. Although it is not very healthy, it is an awesome treat once in awhile for any of us that love seafood! I normally throw in a dash of garlic and onion powder. Enjoy!

2 large onions, diced
3 carrots, sliced
7 potatoes, cubed
1 pound salmon, cut into chunks
1 pound cod, cut into chunks
1 pound scallops
1 pound shrimp, peeled and deveined
6 ounces cooked lobster meat, shredded
1 (6 ounce) can crabmeat, drained and flaked
2 (6.5 ounce) cans chopped clams, drained
4 ¼ cups heavy whipping cream
2 cups half-and-half
1 ½ cups butter, cut into chunks
salt and ground black pepper to taste

Steps:

  • Fill a large pot halfway with lightly salted water; bring to a boil. Add onions and carrots; cook until slightly tender, 10 minutes. Add potatoes; cook until tender, 15 to 20 minutes.
  • Stir in salmon, cod, scallops, shrimp, lobster, and crab; cook over medium heat until salmon and cod are firm but chunks are still slightly translucent in the center, about 10 minutes. Drain half the water from the pot and add clams, heavy cream, and half-and-half. Place butter chunks atop the soup; season with salt and black pepper. Cover and simmer, stirring occasionally, until salmon and cod are fully cooked and flake easily with a fork, about 30 minutes.
