Steps:
- Rinse and pat the pork shoulder dry with paper towel, do not trim off excess fat and place in the slow cooker.
- Pierce all over with a fork, pour the liquid smoke evenly over the roast and sprinkle liberally with the sea salt.
- Place the lid of the slow cooker on and set the time for eight to twelve hours on LOW.
- Check at about eight hours for doneness. If not done let go the full 12 hours, checking every hour.
- If you have used banana leaves you can remove them before shredding the pork.
- Remove around 2 cups of liquid (500ml) and set aside. This should be most of the cooking liquid removed. Shred the pork with forks and then add some of the liquid back in to keep the pork from drying out. You might not add all the liquid back in, save it for storing the pork if there are leftovers.
- The pork should be kept warm-hot in the liquid before serving. You can place the banana leaves on a platter then serve the pork on top of them or use fresh banana leaves for serving. Do not eat the banana leaves.
- The pork saves well kept in an airtight container in the refrigerator or freezer, keep some of the cooking liquid with it. Thaw in refrigerator if frozen. It can be reheated on low in the slow cooker.

Steps:
- For the roast pork: In a small bowl, combine the brown sugar, coriander, garlic powder, onion powder, salt, black pepper, cinnamon and cumin to make a dry rub. Massage the rub over the pork, making sure to rub it in between the scored fat cap. Wrap the pork in plastic wrap and let it sit for 2 hours or overnight in the fridge.
- Preheat the oven to 325 degrees F with the oven rack in the middle position.
- Remove the plastic wrap from the pork and place in a Dutch oven with a lid. Cover and place in the oven to roast for 3 hours. After 3 hours, uncover and cook for another 45 minutes to brown the fat and cook until the pork registers 200 degrees F on an instant-read thermometer. Remove from the oven and let rest for 20 minutes.
- For the sandwich build: Using two forks or your hands, pull apart the warm pork. Toss with the Chile Sauce. Butter and toast the buns until golden brown. Place ample quantities of pork on the bottom bun and top with Grilled Pineapple Relish and shredded red cabbage. Do your best hula dance and enjoy.
- Bring the vinegar, sugar, crushed red pepper, salt and garlic to a boil and cook until the sugar and salt dissolve. Simmer for 5 to 10 minutes, and then set aside until the pork is ready. Right before you toss in the pork, remove the smashed garlic cloves.
- Preheat a grill pan or grill over high heat. Rub the grill with a bit of oil and grill each side of the pineapple slices until dark grill marks appear, 3 to 5 minutes a side. Roughly chop the pineapple and add it to a bowl with the cilantro, ginger, lime juice, jalapeno and onions. Season with salt and pepper.

OVEN KALUA PORK
Fire up the tiki torches -- it's time for a luau! This delicious slow-roasted pork is rubbed with sea salt and liquid smoke to recall the glorious flavors of pig cooked in a traditional Hawaiian imu. Once cooked and cooled, it can be shredded and served with poi, yams or even on a bun. You may use ordinary sea salt for this recipe if the Hawaiian variety is unavailable.

- Sprinkle the salt over top of the roast in an even layer,
- Cover the slow cooker with tinfoil, then the lid and cook for 8-10 hours on low, or 6-7 hours on high.

- Carefully remove the layer of skin and fat that is on top of the pork shoulder using a sharp knife.
- Place the pork into a bowl and add the tomato paste, chilli sauce, crushed pineapple and juice, light soy sauce, teriyaki sauce, sugar, garlic and ginger. Mix everything together well with your hands and leave to marinade for a minimum 2 hours. 12 hours, or overnight would be best!
- When you are ready to cook the pork, (bearing in mind this takes a minimum of 8 hours in the slow cooker!), turn your slow cooker onto high and add the onion and carrot to support the pork. Add the pork and all the marinade. After 1 hour, turn the slow cooker down to low and leave for at least 8 hours. Up to 12-18 hours isn't going to hurt it!

- Preheat oven to 450 degree F. Cut 20 slits on all sides of pork roast at 1-inch intervals with a sharp knife. Fill slits alternately with garlic halves and ginger slices. Rub salt evenly over pork. Wrap entire roast with kale. Tie with 100-percent-cotton string to secure leaves to pork.
- Place pork, fat-side up, in center of a large sheet of foil. Gather foil up and around roast so it is completely wrapped. Place wrapped pork on a rack in a large roasting pan. Place pan in oven. Pour about 1 inch of water in bottom of roasting pan. Roast for 30 minutes; reduce heat to 375 degree F. Roast for 3 to 3-1/2 hours more or until meat is fork tender. Watch carefully; add water to bottom of pan as needed to maintain water level (do not let boil dry).
- Remove pan from oven and let pork stand for 10 minutes. Carefully transfer wrapped roast to a large container with sides high enough to collect juices, reserving juices in pan. Unwrap roast; remove string and cooked leaves; discard. Using 2 forks, shred pork. Skim fat from pan juices; discard fat. Serve shredded pork with combined juices, Chile Pepper Water, Speckled Rice, and pineapple spears. Makes 8 to 10 servings.
