TROPICAL OATMEAL COOKIES
Island flavors--macadamia nuts, coconut, and dried tropical fruits--provide an exciting change for basic oatmeal cookies.

Steps:
- Heat oven to 375°F. Spray cookie sheets with nonstick cooking spray. In large bowl, combine sugar, brown sugar and butter; beat until light and fluffy. Add vanilla and eggs; blend well. Add flour and baking soda; mix well. Stir in oats, coconut, nuts and dried fruits.
- Drop dough by rounded tablespoonfuls 2 inches apart onto sprayed cookie sheets.
- Bake at 375°F. for 7 to 10 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets.

Steps:
- Preheat oven to 375, grease a 9x13 pan.
- In a medium bowl, mix graham crumbs and icing sugar, stir in butter until evenly blended.
- Press crumb mixture firmly into bottom of prepared pan.
- Bake until edges are golden brown about 10-12 minutes.
- In a large bowl stir condensed milk, pineapple, coconut& almonds.
- With a rubber spatula dollop pineapple mixture onto crumb crust and spread almost to the edges.
- bake until just set, 10-15 minutes.
- remove from oven& sprinkle with white chocolate chips, let stand until chocolate softens, 3-4 minutes.
- then spread chocolate over surface.
- Cool completely, cut into bars.

- Preheat oven to 350°F Grease a 9 inch square cake pan.
- Peel and cut orange into pieces; remove seeds. Combine orange, banana and raisins in food processor and chop coarsely. Combine flour, baking soda, cinnamon and salt.
- Cream together margarine, sugar and eggs in large bowl on high speed of electric mixer until light and creamy. Add fruit mixture. Add dry ingredients alternately with buttermilk and vanilla, mixing lightly after each addition. Spread batter evenly in prepared pan.
- Bake for 50 to 55 minutes or until toothpick inserted in center comes out clean.

- Heat oven to 375 degrees F. Grease a 9x13-inch baking pan.
- Mix graham cracker crumbs and confectioners' sugar. Stir in butter until evenly moistened. Press crumb mixture firmly into bottom of pan. Bake until edges are golden brown, 10 to 12 minutes.
- Meanwhile stir sweetened condensed milk, pineapple, coconut and almonds until blended. Pour into baked crust and spread almost to edges.
- Bake until just set, 10 to 15 minutes. Remove from oven and sprinkle with white chocolate chips. Let stand until chocolate softens, 3 to 4 minutes, then carefully spread chocolate over surface. Cool completely. Cut into 32 bars.
