TROPICAL PARADISE QUICK BREAD



Tropical Paradise Quick Bread image

Loaded with bananas, pineapple, coconut and nuts, this quick bread is flavorful and delicious. Great with coffee at breakfast ro serve for desert.

2 c all purpose white flour
1 c granulated sugar
1 tsp baking soda
1/2 tsp salt
1/2 c butter, softened
2 large eggs
1/4 c milk
1 c bananas, mashed
1 Tbsp orange rind, grated
1 tsp vanilla extract
1 tsp almond extract
1 c flaked coconut
1/2 c pecans, chopped
1/2 c pineapple, drained

Steps:

  • 1. Preheat overn to 350 degrees
  • 2. Grease bottom of 5x9 loaf pan
  • 3. In a large mixing bowl, combine flour, sugar, baking soda and salt.
  • 4. Stir in butter, eggs, milk, banans,coconut, pineapple, orange rind, vanilla extract and almond extract.
  • 5. Beat on low speed until all ingredients are moistened.
  • 6. Beat at medium speed for 2 minutes.
  • 7. Stir in Pineapple and coconut.
  • 8. Pour into a prepared pan and bake for 70 minutes or until a wooden toothpick comes out clean when inserted into the center of the bread.
  • 9. When ready, immediately remove the bread from the pan an onto a plate.
  • 10. Cool completely before slicing.

TROPICAL BANANA BREAD

½ cup coconut oil, melted
2 eggs, beaten
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 cup white sugar
½ teaspoon baking soda
½ teaspoon ground cinnamon
1 pinch salt
3 very ripe bananas, mashed
½ (8 ounce) can crushed pineapple, drained
½ cup flaked coconut

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Combine coconut oil, eggs, and vanilla extract in a large bowl; whisk well to combine. Add flour, sugar, baking soda, cinnamon, and salt. Stir well until combined. Fold in bananas, pineapple, and coconut; stir until just blended. Pour batter evenly into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pan for 10 minutes. Remove to a wire rack to cool completely.

3 eggs
¾ cup Mazola® Corn Oil
1 cup diced mango
1 (8 ounce) can pineapple tidbits, well drained
¼ cup chopped macadamia nuts
½ cup shredded coconut
1 ½ cups powdered sugar
½ teaspoon Spice Islands® Pure Vanilla Extract
1 tablespoon butter or margarine, melted
2 tablespoons hot tap water, or as needed

Steps:

  • Preheat oven to 350 degrees F. Stir together flour, sugar, baking powder, cinnamon and salt in a large bowl. Make a well in the dry ingredients and add vanilla, eggs, oil, fruits, nuts and coconut; mix well. Pour into 2 greased 8-1/2 x 4-1/2-inch loaf pans.
  • Bake for 45 to 50 minutes or until a wooden pick inserted near the center of loaf comes out clean. Cool in pans 5 minutes. Remove from pans and cool completely on wire racks. When loaves are cool, mix together ingredients for glaze and pour over loaves.

1 egg

3 cups bread flour
1/4 cup whole wheat flour
1/2 cup sweetened shredded coconut
4-1/2 teaspoons sugar
1 teaspoon salt
1/4 teaspoon baking soda
1-1/2 teaspoons active dry yeast
1/3 cup chopped macadamia nuts

Steps:

  • In bread machine pan, place the first 13 ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons water or flour if needed)., Just before the final kneading (your machine may audibly signal this), add the macadamia nuts.

I dare to say, this might even be an aphrodisiac! It's great alone but if you're adventurous, slice some strawberries on it or drizzle chocolate syrup over it and top it with some whipped cream.

3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt

2 teaspoons coconut extract
1 cup buttermilk
1 cup shredded coconut

Steps:

  • Preheat oven to 325 degrees F.
  • Grease and flour two 9 1/2" x 5 1/2" loaf pans.
  • Do not use a mixer with this recipe.
  • Use a spoon or spatula and stir by hand.
  • In medium mixing bowl, combine flour, baking powder, baking soda, and salt; mix well.
  • In large mixing bowl, combine sugar, oil, beaten eggs, and coconut extract; mix well.
  • Alternately add flour mixture and buttermilk to sugar mixture and stir only until moist.
  • Stir in shredded coconut.

  • Add mandarin oranges, pineapple, banana, coconut, vanilla and candied fruit or cherries and mix with a spoon until blended.
  • Pour batter into 2 greased and floured 5x9 loaf pans.
  • Bake at 350 degrees for 45 minutes or until a toothpick inserted in center comes out clean.
  • Cool on a wire rack.

1 (15 5/8 ounce) package lemon poppy seed quick bread mix
1 cup water
2 tablespoons oil
1 egg
1 cup dried tropical fruit bits
2 teaspoons orange zest
1/4 cup powdered sugar
1 -2 teaspoon orange juice

Steps:

  • Heat oven to 350°F
  • Grease and flour bottom ONLY of 8x4 or 9x5 inch loaf pan.
  • In a large bowl, combine quick bread mix, water, oil and egg.
  • Stir for 50-75 strokes with spoon till moist.
  • Stir in fruit and orange peel.
  • Pour batter into greased prepared pan.
  • Bake 350 for 55-60 minutes for 8x4 pan, or 45-55 minutes for 9x5 pan.
  • test with toothpick to see if its done.
  • Cool on wire rack for 15 minutes.
  • remove from pan and cool 30 minutes till totally cooled.
  • in small bowl, blend powdered sugar and orange juice till desired glaze consistency.
  • brush over loaf.
  • wrap tightly and store in fridge.
