MANGO MOUSSE
Tropical Mango Mousse recipe without added sugar, gelatin or eggs. Recipe is presented with 3 different toppings you can choose from.

Steps:
- Cut mangoes in chunks. Keep your hands over the bowl as you cut so it can catch any dripping juice.
- Puree the mangoes in a blender. It just takes a minute or so.
- Start whipping the heavy cream. I have a small (antique at this point lol) electric hand held mixer. Whip for about 8-10 minutes until there are peaks in the whipping cream. When the peaks stay firm and don't lose their shape then the cream is ready.
- Add table cream and keep mixing a bit longer (about a minute or so).
- Add the mango puree and mix in the lowest setting of the mixer. Test for sweetness.
- Use a spoon to transfer in the cups that you will serve the mousse in. Refrigerate for about 2 hours before serving. Add your favorite toppings:)

TROPICAL MOUSSE
At less than 150 calories, this dessert will steal the show! Although perfect for hot weather, I often make this as a finale to a heavy meal in the winter months. When fresh mangoes aren't available, I use the jar variety found in the produce section with equal success. This is a winner with my "low-cal, low-fat, low-sugar" friends! Cook time is really freeze time.

Steps:
- In a food processor or blender, blend mangoes until smooth.
- Add water to equal 2 cups puree.
- Transfer to a medium sauce pan and bring to boil.
- In a large mixing bowl, stir together gelatin and sugar.
- Pour mango mixture over this and stir to dissolve.
- Stir in lemon juice.
- Cover and freeze for one hour or until mixture rounds up on a spoon.
- Remove from freezer and beat with electric mixer 3 minutes or until thick and light.
- Fold in whipped topping.
- Spoon or pipe into long stemmed dessert glasses.
- Garnish with option fruit.
- Chill until set.

- Place the thawed mango chunks in a food processor or high powered blender, and pulse until a smooth puree forms. Add the egg yolks, one at a time, pulsing until they’re well combined. Set the mixture aside.
- In the bowl of a stand mixer, beat the egg whites on medium speed until foamy. Add the cream of tartar, and continue beating until soft peaks form. - Use the bowl of the stand mixer a second time to mix the remaining 1 tablespoon of sugar, heavy cream, and vanilla. Mix on medium speed until stiff peaks form. Gently fold the whipped cream into the mango mixture.
- Divide the mousse evenly between 6 serving glasses. Cover and chill for at least 2 hours or up to overnight. If desired, make additional whipped cream for serving.

- To make mango purée, peel and chop tow medium mangoes. Use a blender to purée the mangoes, until smooth.
- Using an electric mixer on low speed, beat the cream cheese until smooth in a medium bowl. Add in the heavy cream, coconut cream, coconut extract, sugar and gelatin. Mix on low speed for about a minute to combine then increase the mixer speed to medium-high and beat the mixture until it thickens and soft peaks form. Fold in 1/3 cup of the mango puree and coconut flakes into the whipped cream mixture. Chill for at least 2 hours before serving.
- To serve, assemble the layers in small serving cups or ramekins. Start with a layer of crumble shortbread cookies, then top with whipped cream mixture followed by the remaining mango puree and finally more of the shortbread cookies. Top with fresh mangoes and toasted coconut flakes. Serve immediately.

- Whip the cream and cold coconut cream on high in a stand mixer until thickened and stiff peaks form. Careful not to over whip and split the cream.
- In a separate bowl, whip the softened cream cheese and icing sugar until light and fluffy. Add the vanilla bean paste and mix to combine.
- Stir through half of the whipped cream to the cream cheese mixture using soft folding motions, careful not to knock too much air out of the mixture. Fold through the remaining cream.
- Using a sharp knife cut the tops of the hollow easter eggs off. You can cut the tops off like you would if you are making “dippy eggs” and have the eggs displayed sitting up in an empty egg carton. Or alternatively you can cut the eggs on the seam (where they have been stuck together by Cadbury) and display the eggs lying flat on a tray. TIP: Cutting the eggs at room temperature is a lot easier rather than straight from the fridge so keep these out for ease of cutting.
