BABY BACK RIBS WITH TROPICAL BBQ SAUCE

- For the Tropical Rub:
- Whisk all ingredients together.
- For the ribs:
- Rinse and dry ribs. Place on a clean cutting board and pull off the membrane, the thin fatty skin that lines the underside of the ribs. Trim the ribs of excess fat and meat. Liberally season both sides of the ribs with 1/4 cup of the tropical dry rub. Wrap ribs in plastic wrap and refrigerate for at least 8 hours so flavors can permeate.
- Preheat grill to 200 to 225 degrees F using charcoal and indirect heat.
- Place ribs meatier side down on the grill away from the flame. Cook the ribs 2 to 2 1/2 hours total, turning the ribs halfway through, until ribs bend.
- In a food processor, add the ginger, jalapeno and green onion. Pulse until they are finely chopped. In a medium saucepan, add the vegetable oil over medium heat. Add the ginger mixture and saute until tender. Combine the ketchup, mango juice, passion fruit juice, cider vinegar, molasses and dry mustard in a bowl and add to the saucepan. Season with salt and pepper. Let simmer for 10 minutes for the flavors to blend.
HAWAIIAN BBQ SAUCE: HULI HULI SAUCE
Hawaiian BBQ sauce is super easy to make and yields a sticky glaze with hints of teriyaki from the fresh flavors of pineapple, soy sauce ginger and garlic. Tropical flavors that work great on any grilled chicken, pork or wonderful on beef ribs for entertaining!

- Grate garlic on a microplane or chop to a very fine mince.
- Peel 1" of a piece of fresh ginger, then grate on a microplane. See notes about storing fresh ginger.
- Place all ingredients into a pan and stir to mix well.
- Bring to a boil and stir constantly until thickened and reduced, about 5 minutes once boiling
- Store in airtight container up to a week.
- Can be used as a marinade or brushed on while grilling or baking.
- Reserve some sauce to serve on the side for people to be able to apply at the table themselves.

EXTREMELY TASTY HOT AND SPICY TROPICAL BARBECUE SAUCE
Okay....the name says it all, except that this is quick and easy to make! It uses items you grab off the grocery store shelves and throw together in a saucepan. Within 10 minutes you have a "WOW" tasting sauce. This isn't for a pork sandwich (although you could), but it is fabulous with grilled chicken, fish, or pork. Since the first review, I decided to add: If you can't find hot mustard based barbecue sauce, regular mustard based sauce will do, just add some dried red pepper flakes. The mustard barbecue sauce I use is very hot.

- In a small bowl, combine first 10 ingredients. Set aside 1/3 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag. Add chicken; seal and turn to coat. Refrigerate 8 hours or overnight., Prepare grill for indirect heat, using a drip pan. Place chicken over drip pan; grill, covered, over indirect medium heat 45-60 minutes or until a thermometer reads 170°-175°, turning and basting frequently with reserved marinade during the last 20 minutes.
