I use convenient canned fruit cocktail and instant pudding to prepare this dessert. It makes a refreshing and pretty finale to any meal, especially when it's served in glass dishes. I sometimes garnish each serving with whipped cream and a cherry.-Bonnie Evans, Cameron, North Carolina

1 can (15 ounces) fruit cocktail, undrained
1 package (3.4 ounces) instant vanilla pudding mix
1/2 cup miniature marshmallows
Chopped nuts, optional

Steps:

  • In a large bowl, combine fruit cocktail and dry pudding mix; stir for 2 minutes. Let stand for 2 minutes or until soft-set. Chill until serving. Fold in marshmallows just before serving. Garnish with nuts if desired. Refrigerate leftovers.

3/4 cup boiling water
1 pkg. (3 oz.) JELL-O Orange Flavor Gelatin
1 can (15 oz.) tropical fruit salad, chilled, drained
1/2 cup frozen sliced strawberries
3/4 cup thawed COOL WHIP Whipped Topping

Steps:

  • Add boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Add fruit; stir. Refrigerate 10 min. or until slightly thickened.
  • Pour 1/2 cup gelatin mixture into separate medium bowl. Add COOL WHIP; whisk just until blended. Spoon into dessert cups; top with remaining gelatin mixture.
  • Refrigerate 15 min. or until firm.

3 ounces jello vanilla pudding mix, prepared
3 large bananas, sliced
1 cup shredded coconut
8 ounces crushed pineapple
8 ounces Cool Whip

Steps:

  • Place Twinkie halves in a 13" x 9" dish. Layer with vanilla pudding, banana slices, crushed pineapple, coconut, and whipped topping. Garnish as desired (toasted coconut and cherries works well). Serve chilled.

19 1/4 ounces lemon cake mix
1/2 cup orange juice
2 large eggs
1 tablespoon orange rind, grated
1/4 cup powdered sugar
11 ounces mandarin orange segments, undrained
8 ounces crushed pineapple, undrained
1/4 cup granulated sugar
1 tablespoon cornstarch
1 tablespoon butter
1 banana, sliced
1/4 cup flaked coconut

Steps:

  • Preheat oven to 350*.Grease and flour 10" bundt pan.set aside.
  • FOR CAKE:.
  • empty cake mix into large bowl, add water to orange juice to equal 1 /3 cups liguid.
  • Add liguid, eggs, orange peel to mix.
  • Beat at medium speed with electric mixer for 2 minutes.
  • Bake and cool cake following package directions.
  • Sift powdered sugar over cooled cake.
  • FOR TOPPING:.
  • drain mandarin oranges, reserving juice. Drain pineapple, reserving juice.
  • Combine juices in 1 cup measure.Add water or orange juice to fruit juices to equal 1 cup.
  • Pour into small saucepan.
  • Combine granulated sugar and cornstarch.
  • Stir into liquid.
  • Cook on medium heat, stirring constantly, until thickened.
  • Add butter, if desired. Stir until melted.Cool.
  • Stir mandarin orange, pineapple and banana into cooled sauce.
  • Cut cake into 16 servings.
  • Spoon sauce over each serving --
  • Sprinkle with coconut, if desired.

3 1/4 cups milk
20 ounces crushed pineapple
1 (16 ounce) container Cool Whip

Steps:

  • In a medium bowl mix the pudding mix with the milk.
  • Let stand to thicken.
