BOBA (COCONUT MILK BLACK TEA WITH TAPIOCA PEARLS)
Boba tea, or bubble tea, is a popular drink that originated from Taiwan. I made this coconut variation because I had coconut cream on hand and wanted something different from the regular black milk tea variation. This coconut version tastes just like the one you'll find in a bubble tea cafe.

Steps:
- Bring water to a boil in a large stockpot. Pour in tapioca and simmer for 25 minutes. Stir occasionally to prevent sticking. Remove from heat and let balls sit in water for 25 minutes.
- Return stockpot to the heat; simmer and stir for 25 minutes more. Remove from heat and let rest again until centers of the balls are no longer powder, another 25 minutes. Drain.
- Combine brown sugar and white sugar in a large bowl. Pour tapioca balls into the sugar mixture. Cover with a damp cloth and let rest for 15 minutes while preparing the tea.
- Process tea, coconut cream, ice, milk, and sugar together in a blender until combined.
- Scoop 1/4 cup of the tapioca into each tall glass and fill with tea. Enjoy with large straws to suck up the tapioca, or use spoons.

TROPICAL COCONUT BUBBLE TEA
This is my recipe for a homemade bubble tea flavor. It tastes delicious and my friends all loved it. Note: This uses Minute Tapioca Pearls from an Asian Grocery. They are grey in color and have a colourful package with asian writing on it.

Steps:
- Place all ingredients, except ice and tapioca pearls, in cocktail shaker or thermos or other tightly sealed container and shake for about 10 seconds.
- Place tapioca pearls at bottom of a tall glass and pour liquid mixture over it.
- Add ice and serve with Bubble tea straw.

STRAWBERRY PB&J BUBBLE TEA RECIPE

- Fill a large pot halfway with water and bring to a boil. If desired, add ~10 drops liquid sweetener to infuse some sweetness. (I like to use stevia or monk fruit drops.)
- Add uncooked boba tapioca pearls to boiling water. Lightly stir unto boba begin to float, then cover and boil for 3 minutes.
- Remove pot from heat and carefully drain boba pearls. Transfer to a bowl and cover with water until ready to use. (Otherwise they'll stick together!)
- In a blender, combine strawberries, milk, peanut butter, vanilla, and sweetener (if desired) and blend until smooth.
- Add cooked tapioca pearls to desired boba tea cups, pour in blended milk tea, serve with a boba straw, and enjoy!
