Soft and tender Banana Cupcakes topped with cream cheese frosting.

115 grams (1/2 cup or 1 stick) unsalted butter, room temperature
90 grams (1/2 cup) brown sugar
50 grams (1/4 cup) caster sugar or granulated sugar
1 teaspoon vanilla extract
1 large egg, room temperature
180 grams (3/4 cup) mashed banana, (2-3 overripe bananas)
210 grams (1 and 1/2 cups) plain flour or all purpose flour
1 and 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
120 ml (1/2 cup) buttermilk
115 grams (1/2 cup or 1 stick) butter, room temperature
250 grams (1 and 1/4 cup) full fat cream cheese, room temperature
1 teaspoon vanilla extract
375 grams (3 cups) icing sugar or powdered sugar, sifted
Walnuts, crushed, for decorating

Steps:

  • Line a 12-hole muffin tray with cupcake liners. Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced.
  • In a large mixing bowl, add butter and sugars and beat with an electric mixer on medium speed until pale and creamy. Add vanilla and egg and beat briefly just until combined.
  • In a separate bowl, add flour, baking powder, cinnamon and salt and whisk briefly.
  • Add flour mixture to the butter mixture, along with buttermilk and the mashed banana. Gently mix until just combined. The batter will be thick and creamy.
  • Spoon batter into prepared cupcake liners and bake for approximately 18-20 minutes or until the cakes spring back lightly to the touch. Remove cupcake from muffin tray and place on a wire rack to cool completely.
  • To make the cream cheese frosting, add butter and cream cheese (ensuring both are at room temperature) to a large mixing bowl. Beat with an electric mixer on medium speed for 2-3 minutes until smooth and creamy. Add vanilla.
  • Add sugar, 1 cup at a time, and continue to beat on a medium speed until smooth. Transfer frosting to a large piping bag fitted with a large round tip. Pipe frosting onto each cupcake. Scatter over crushed walnuts.

Moist vanilla cupcakes filled with banana pudding and topped with whipped cream. I use homemade pudding and whipped cream for this recipe but you can use store-bought instead if pressed for time.

24 vanilla wafers (such as Nilla®)
1 (18.25 ounce) package vanilla cake mix (such as Duncan Hines®)
1 cup water
3 eggs
⅓ cup vegetable oil
1 cup mashed ripe bananas
1 ⅔ cups crushed vanilla wafers (such as Nilla®), divided
1 cup vanilla pudding
½ cup thinly sliced ripe banana
1 cup sweetened whipped cream, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 2 muffin tins with cupcake liners.
  • Place 1 vanilla wafer flat-side down in the bottom of each cupcake liner.
  • Blend vanilla cake mix, water, eggs, and vegetable oil in a large bowl with an electric mixer on low speed until moistened, about 30 seconds. Beat at medium speed until smooth, about 2 minutes. Fold in mashed bananas and 1 cup crushed wafers. Scoop batter into prepared tins.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 18 to 20 minutes. Transfer cupcakes to a wire rack to cool, about 30 minutes.
  • Combine vanilla pudding and sliced banana in a small bowl.
  • Scoop out tops of cooled cupcakes, leaving a small hole in the middle of each. Fill holes with pudding mixture. Place a heaping spoonful of whipped cream on each cupcake; garnish with remaining 2/3 cup crushed vanilla wafers.

3 bananas, mashed
1 cup white sugar
2 eggs, lightly beaten
¾ cup vegetable oil
2 cups all-purpose flour
2 teaspoons baking soda
3 tablespoons buttermilk
1 cup chopped pecans
1 cup confectioners' sugar, or as needed

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease 14 muffin cups.
  • Lightly beat bananas and white sugar together in a bowl until smooth; add eggs, one at a time, until incorporated. Beat in vegetable oil until well blended, 1 to 2 minutes. Stir in flour, baking soda, and buttermilk; mix well. Fold in pecans. Pour batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted in the center of a cupcake comes out clean, 20 to 30 minutes. Sprinkle cupcakes with confectioners' sugar.

  • Preheat the oven to 350°F (177°C). Line a 12-cup muffin pan with cupcake liners. Line a second pan with 6 liners as this recipe yields about 18 cupcakes.

For around 30 mini cupcakes, bake for about 11-13 minutes, same oven temperature. Allow the cupcakes to cool completely before frosting.
