GARLIC CRAB
This is a simi difficult recipe, but the result is ever so delectable. I had something like this at Crustaceans in San Francisco. They used the wonderful Dungeness crabs, but here in Virginia I had to settle for Blue crabs, which turned out just as nice.

Steps:
- Place garlic, onions, butter, salt, red and black pepper into a roasting pan and put into a 450 degree oven.
- Be sure to watch carefully and cook until onions and garlic turn golden brown.
- Remove from oven, add crab and blend thoroughly.
- Make sure the crab (shells and all) is coated.
- Place pan back into oven on 475 degree for 15-20 minutes, turning crab about every 5 minutes.
- After the crab has been heated throughout remove from oven.
- Garlic sauce should be braised onto the shell of the crab.
- Serve as soon as possible, sprinkled with parsley and garnished with lemon.
CRUSTACEAN-INSPIRED GARLIC NOODLES AND ROASTED CRAB

Steps:
- Rinse the yellow noodles with running water to discard the oil from the noodles. Drain and set aside.
- Heat up a pot of water until boiling. Add the noodles into the boiling water and cook the noodles. Do not overcook as the noodles will turn soggy. Transfer the noodles out and drain dry.
- Prepare the garlic sauce using a saute pan on medium to low heat. Add the butter into the pan and when it melts, add the garlic and saute until aromatic but not browned. Add all the seasonings into the pan, stir to combine well. Transfer the garlic sauce into a small bowl.
- To serve, just toss all the noodles with the garlic sauce. Add the cheese, toss to combine well. Serve immediately.
- Clean and chop the crab into small pieces. Heat up the butter in a wok (between medium to low heat) and saute the garlic until aromatic, but not brown. Add in the black peppers, chicken bouillon powder, and then add in the crab and stir well. Add in the sugar and cook the crab until half done.
- Dish out and bake it in the oven at 350°F (175°C) for 25-30 minutes. Serve hot with garlic noodles.

- Form a paste with half of the garlic, salt and sugar. Saute the remaining ingredients on low heat. Debatable: Crack or Cook first? If you are to cook the crabs first ... Boil crab for 7-10 minutes. Clean crab, cut body into 2 pieces. Crack remaining pieces to let the garlic butter under the shell. Add the cracked crab to the sauteed mixture. Mix the crab, butter, seasoning well. Cover pan for 5 minutes. If you are crack and clean the crabs first ... Toss the crabs in the freezer for a few minutes to calm them down. Clean crab, cut body into 2 pieces. Crack remaining pieces to let the garlic butter under the shell. Add the cracked crab to the sauteed mixture. Add a 1/4 cup of water. Mix the crab, butter, seasoning well. Cover pan for 5-10 minutes, allow to steam. Mix while cooking. Crustacean preparation: Crack crab without cooking and add to the saute. Cook the crab until half done. Dish out and bake it in the oven at 350 degree F for 25-30 minutes. Finish with cilantro.
