EVERYTHING SOUP



Everything Soup image

Number Of Ingredients 18

6 slices day-old Italian bread, cut into 1/2-inch cubes
1/4 cup olive oil
4 tablespoons butter
4 cloves garlic, crushed
1 1/4 cups red lentils, rinsed
4 carrots, chopped (about 2 cups)
2 stalks celery, chopped (about 1 cup)
1/2 onion, chopped (about 1 cup)
4 cups vegetable stock (one 32-ounce carton)
3 sprigs fresh thyme
1 dried bay leaf
Kosher salt and freshly cracked black pepper
1 cup jarred marinara sauce
1 cup mild salsa
1 cup frozen peas
1/4 cup fresh flat-leaf parsley, chopped, plus more leaves for garnish
1/4 cup sour cream
2 tablespoons extra-virgin olive oil

Steps:

  • For the garlic croutons: Preheat the oven to 350 degrees F. Line a baking sheet with parchment.
  • Add the bread cubes to the lined baking sheet and reserve. Add the olive oil, butter and garlic to a small saucepot and cook over medium-low heat until the butter is melted, stirring to combine. Remove the garlic cloves, then drizzle the butter mixture over the bread, tossing to get everything coated. Bake until golden brown and crisp, about 15 minutes. Let cool.
  • For the soup: Put the lentils, carrots, celery and onion into a stockpot or Dutch oven. Pour in the vegetable stock. Add the thyme, bay leaf and 1 teaspoon black pepper and stir to combine. Bring to a rapid simmer, then cover partially and cook on medium low until the lentils are tender, 30 to 45 minutes.
  • Remove the bay leaf and thyme stems. Add the marinara sauce and salsa and stir to combine. Add the peas and parsley. Season with salt and pepper and stir to combine. Cook for an additional couple of minutes to warm the peas through.
  • Ladle the soup into serving bowls. Top each bowl with a spoonful of sour cream, a sprinkle of whole parsley leaves, a drizzle of extra-virgin olive oil and a couple of croutons. Store and refrigerate in airtight containers or freeze.

TORTELLINI SOUP



Tortellini Soup image

2 tablespoons olive oil
1 medium onion, chopped
1 teaspoon minced garlic
4 carrots, peeled and sliced into 1/4-inch coins
8 cups chicken stock
1 cup frozen green peas
One 12-ounce container tricolor cheese tortellini
2 ears corn, kernels removed
2 cups fresh baby spinach, torn into smaller pieces
Grated Parmesan cheese, for garnish

Steps:

  • In a large stockpot over medium heat, heat the oil until it shimmers, about 2 minutes, then add the onion, garlic, and carrots, and saute for 5 minutes or until the vegetables are slightly soft. Pour in the chicken stock, increase the heat to high, and bring to a boil. Add the peas, tortellini, and corn and cook for 12 minutes, or according to the package directions for the tortellini.
  • Remove the stockpot from the heat and add the spinach, stirring until it wilts. To serve, spoon the soup into bowls and top with grated Parmesan cheese.

BAKED POTATO SOUP

4 large baking potatoes
6 bacon slices, plus crumbled cooked bacon, for serving
2/3 cup (11 tablespoons) butter
2/3 cup all-purpose flour
8 cups milk
5 ounces Cheddar, shredded, plus more for serving
2 teaspoons salt
1/2 teaspoon freshly ground pepper
2 green onions (scallions), finely chopped, plus more for serving
8 ounces sour cream, plus more for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Wash the potatoes and prick them several times with a fork. Wrap them individually in foil and bake until they are soft when squeezed, about 1 hour (see Cook's Note). Let the potatoes cool slightly.
  • While the potatoes bake, cook the bacon in a small skillet, in a microwave or on an indoor grill until crisp. Drain the bacon on paper towels and, when cool enough to handle, crumble into small pieces. Set aside.
  • In a large heavy saucepan, melt the butter over low heat. Add the flour, stirring constantly for 1 minute until smooth. Gradually whisk in the milk and cook over medium heat, stirring constantly, until the mixture is thick and bubbling, 5 to 10 minutes. Cut the potatoes in half lengthwise and scoop the flesh into the thickened milk mixture. Add the Cheddar, salt, pepper, green onions and reserved bacon. Cook over low heat just until heated through, then stir in the sour cream. Garnish with shredded Cheddar, crumbled bacon and chopped green onions and serve with more sour cream on the side.

1 teaspoon garlic, minced
1 medium onion, finely chopped
2 tablespoons all-purpose flour
3 (14 ounce) cans chicken broth
4 cups half-and-half
1 (10 3/4 ounce) can cream of chicken soup
1 cup salsa
4 boneless skinless chicken breasts, boiled, drained and shredded
1 (15 ounce) can black beans, drained
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can whole kernel corn, drained
2 teaspoons ground cumin
1 (1 1/3 ounce) packet fajita seasoning mix
1 (16 ounce) bag tortilla chips
8 ounces monterey jack cheese, grated
8 ounces sharp cheddar cheese, grated
1/2 cup sour cream

Steps:

  • Melt the butter in a large pot over medium heat.
  • Add the garlic and the onion and saute until softened, 5 minutes.
  • Add the flour and stir well, cooking for 1 minute more.
  • Add the broth and the half-and-half.
  • Stir in the cream of chicken soup, salsa, chicken, beans, corn, cumin and fajita seasoning.
  • Continue to simmer over low heat for 15 minutes.
  • Crumble the tortilla chips into individual bowls and top with a ladle of soup.
  • Sprinkle each serving with cheese and add a dollop of sour cream.

WILD MUSHROOM SOUP



Wild Mushroom Soup image

3 tablespoons unsalted butter
1 small onion, thinly sliced
12 ounces mixed mushrooms, such as cremini, shiitake and oyster, stemmed and chopped
Kosher salt and freshly ground black pepper
4 cups chicken broth
1 1/2 teaspoons Marsala, optional
About 1/4 cup creme fraiche, for serving
1 tablespoon sliced chives (1/2-inch pieces)
Olive oil, for drizzling

Steps:

  • Melt the butter in a small Dutch oven over medium heat. Add the onion and cook, stirring occasionally, until softened, about 12 minutes. Increase the heat to medium high, add the mushrooms, 1/4 teaspoon salt and a few grinds of pepper and cook, stirring often, until the mushrooms release their liquid but do not brown, about 8 minutes. Add the chicken broth and bring to a simmer. Simmer, partially covered, for 30 minutes.
  • Transfer to a blender and puree until smooth (be careful when blending hot liquids). Add the Marsala if using and season with salt and pepper.
  • Pour the soup into 4 bowls. Dollop with the creme fraiche and sprinkle with the chives. Drizzle a tiny bit of olive oil over top.

KALE SOUP

1 pound fresh chorizo
4 Yukon Gold potatoes, cubed
1 medium onion, finely chopped
4 cloves garlic, minced
8 cups chicken broth
1 pound kale, stems removed, leaves torn into 1-inch pieces
1/2 cup grated Parmesan
Kosher salt and black pepper

Steps:

  • Heat the olive oil in a large stockpot over medium heat. Brown the chorizo in the oil, 5 to 7 minutes. Add the potatoes, onions, garlic and chicken broth.
  • Simmer until the potatoes are fork tender, 20 to 25 minutes. Reduce the heat to low, add the kale, and cover. Cook until the kale wilts, 7 to 10 minutes.
  • Uncover, add the Parmesan, and heat through for about 5 more minutes. Season to taste with salt and pepper.

3 red potatoes (about 4 ounces each), peeled and diced into 3/4-inch pieces
One 14-ounce can diced tomatoes
One 10-ounce package frozen lima beans
2 tablespoons finely chopped onion
Salt and pepper
One 12-ounce can cream-style corn

Steps:

  • In a medium saucepan, combine the broth with the potatoes, tomatoes, beans and onions, and season with salt and pepper. Bring to a boil, and then reduce the heat to medium. Cook the soup until the potatoes are tender, 20 to 25 minutes. Remove from the heat, stir in the corn and serve. Adjust seasoning as needed.
