TRIPLE PLAY PEANUT BUTTER COOKIES
Triple Play Peanut Butter Cookies (Adapted from KA Cookie Companion) is one of my all-time favorite peanut butter cookie recipes. The volume measurements are fine, but for best results use the weights.

Steps:
- Preheat oven to 350F degrees. Line two large cookie sheets with parchment paper or silicone baking mats. In a large bowl, mix together the peanut butter cookie mix, cream of tartar, baking soda, and salt until combined. Add vegetable oil and water and beat until dough forms. Add mini Reese's pieces and stir until combined. Using a cookie scooper, scoop cookie dough on prepared baking sheet. Place baking sheet in freezer for 10 minutes. Bake for 8-10 minutes until edges are slightly brown. Allow the cookies to cool on the baking sheet for 2 minutes and transfer to a wire rack to cool completely. In a small microwavable bowl, microwave creamy peanut butter for 30 seconds. Stir and pour melted peanut butter into a piping bag or storage bag. Cut a small tip at the end of piping bag and drizzle peanut butter on top of cooled cookies.

Steps:
- Preheat oven to 350° and line 2 cookie sheets with parchment paper or a silpat. You can also spray with cooking spray.
- In a large bowl with a hand mixer, or use a stand mixer with the paddle attachment, add the butter, brown sugar, and peanut butter. Beat on medium-high speed until lighter in color and fluffy looking, about 1-2 minutes.
- Add the egg and vanilla extract. Beat until combined, scraping down the sides of the bowl as needed.
- Add the oats, flour, baking soda, cornstarch, baking powder, and salt. Mix on low speed just until combined.
- Stir in peanut butter chips and reeses pieces.
- Use a 1/4 cup measurer to measure out the cookies. Roll into a ball and place them on the baking sheet. Six cookies per cookie sheet. With the bottom of a measuring cup (I use a 1 cup measurer) gently press down the dough balls to form a very thick cookie shape (like a hockey puck). They will not spread much while baking.
- Bake the cookies for 9-12 minutes until the edges are just starting to lightly brown and the top still looks slightly undercooked.
- Remove from the oven and cool for at least 15-20 minutes on the baking sheet before moving them to a wire rack to cool completely.
- * If wanted, press a few additional Reese's Pieces and/or peanut butter chips onto the tops of the cookies. This makes them look pretty!

TRIPLE PLAY PEANUT BUTTER COOKIES
These cookies are 5 star in my opinion. They're thick (almost 1/2") and dense, crisp around the outside edge, a firm "chew" as you get away from the edge, "lip smacking" rich, peanutty, and not too salty. They not only taste great, they look great too...golden brown and slightly crinkled on top.--described perfectly by a poster on another board. YUMMY! is all I need to add.

- Melt the chocolate in the microwave or in a double boiler. If there are still a few lumps, stir the chocolate until they melt completely. Set aside.
- In a mixing bowl, beat the butter and sugars together using a hand mixer till pale and fluffy. Add the egg and vanilla and beat again.
- Sift the flour, baking soda, salt and cocoa into the bowl. Fold gently to combine till you have a thick, soft dough. Stir in the chocolate chips. Cover the bowl with clingfilm and chill for 30 minutes. Remember that the longer you chill the dough, the thicker the baked cookies will be, so if you want thinner, crispier cookies, reduce the chill time.

- To the bowl of a stand mixer (or large mixing bowl with electric mixer), combine egg, brown sugar, peanut butter, butter, vanilla, and beat on medium-high speed until smooth and creamed, about 5 minutes. Mixture doesn’t get as fluffy as you may be used to when typically creaming ingredients for cookies.
- Stop and scrape down the sides of the bowl. Add the flour, baking powder, optional salt, and beat on low speed until just incorporated, about 1 minute.
- Divide dough into 8 equal-sized portions and roll between palms to form balls. Dough is very soft, limp, mushy, and you’ll have to be gentle with it.
