THREE PEA CHICKEN SALAD

Three Pea Chicken Salad image

This brightly colored chicken salad just screams spring! Serve over toasted bread (your favorite type) and/or lettuce leaves! Found this one in Bon Appetit magazine and made just some minor adjustments to suit my taste.

Time 50m

Yield 4 serving(s)

Number Of Ingredients 17

4 sprigs tarragon, plus 2 tbsp minced tarragon leaves (divided)
1 lb chicken breast, boneless and skinless
2 large shallots, 1 halved, 1 minced
2 garlic cloves, 1 smashed, 1 minced
kosher salt
black pepper, freshly ground, to taste
3/4 cup plain Greek yogurt
3 tablespoons olive oil
1/2 lb sugar snap pea, stringed and thinly sliced
1 cup fresh English pea (may use thawed frozen ones)
1/2 cup snow peas, stringed and thinly sliced
1/8 cup flat leaf parsley, finely chopped
1/4 cup fresh chives, finely chopped
2 teaspoons lemon zest, finely grated
1 tablespoon fresh lemon juice (may add more to suit your taste)
8 slices bread, toasted
8 lettuce leaves

Steps:

  • Place the tarragon sprigs, chicken, the halved shallot, and the smashed garlic into a medium saucepan. Add water to cover by 1 inch and season with salt and pepper. Bring the water to a boil; remove the pan from heat, cover, and let it stand until the chicken is just cooked through. This takes 15 to 25 minutes depending on the size of your chicken breast. If I have a large one, I'll usually let it actually boil for 3 or 4 minutes before removing from the heat.
  • Transfer the chicken to a plate and let it cool. Shred or dice the chicken.
  • While the chicken is poaching, whisk the yogurt, oil, minced shallot, and minced garlic in a small bowl. Season the dressing with salt and pepper to taste.
  • Combine all the peas in a medium bowl. Add the chicken, dressing, minced tarragon, parsley, chives, lemon zest, and 1 tbsp lemon juice; toss to coat. Season to taste with salt, pepper, and additional lemon juice, if desired. Serve spooned over toasted bread and/or lettuce leaves.

Categories     side-dish

Time 15m

Yield 4 servings

Number Of Ingredients 8

2 tablespoons orange juice, plus 1 teaspoon zest
2 teaspoons hot sauce
1 tablespoon sugar
1/4 cup olive oil, divided
Kosher salt and freshly ground black pepper
2 fennel bulbs, thinly sliced, fronds reserved for garnish
1/4 pound fresh sugar snap peas, about 2 cups
1/2 cup loosely packed tarragon leaves

Steps:

  • In a small bowl, whisk together the orange juice, hot sauce, sugar and 2 tablespoons of the olive oil. Season with salt and pepper, to taste, and set aside.
  • Warm the remaining olive oil in a medium skillet over medium heat. Add the fennel and saute for 3 minutes. Stir in the peas along with the orange zest and season with salt and pepper, to taste. Saute until the peas turn bright green, about 2 minutes. Remove the skillet from the heat. Pour the vinaigrette over the fennel mixture. Transfer the fennel mixture to serving bowl and toss in the tarragon to release fragrance and wilt slightly. Garnish with reserved fennel fronds and serve slightly warm or at room temperature.

PEA SALAD WITH TARRAGON AND PEA SHOOTS

Pea Salad with Tarragon and Pea Shoots image

Provided by Alex Guarnaschelli

Categories     side-dish

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 14

1 tablespoon dijon mustard
1 tablespoon fresh lemon juice
1 1/2 teaspoons sherry vinegar
1/4 teaspoon capers, roughly chopped, plus 1/2 teaspoon brine from the jar
Kosher salt and freshly ground white pepper
3 tablespoons extra-virgin olive oil
4 sprigs tarragon, leaves chopped
Kosher salt
Sugar
3/4 pound sugar snap peas, strings removed
3/4 pound snow peas, trimmed
1 cup shelled green peas
Freshly ground white pepper
1/4 cup pea shoots

Steps:

  • Make the dressing: Whisk the mustard, lemon juice and vinegar in a medium bowl. Add the capers and brine and a pinch each of salt and white pepper. Slowly whisk in the olive oil and add the tarragon. Taste for seasoning.
  • Bring a large pot of water to a boil, adding salt until it tastes like seawater. Meanwhile, set a colander in a large bowl of ice water (this will keep you from having to pick ice out of the peas later).
  • Add a generous pinch of sugar to the boiling water. Add the sugar snap peas and cook until bright green and crisp-tender, about 2 minutes. Use a strainer to remove the peas from the water and transfer them to the colander.
  • Bring the water back up to a boil and add the snow peas and shelled peas. Cook until they float to the surface, about 1 minute. Use the strainer to remove the peas and plunge them into the ice bath with the sugar snaps. Set aside for a couple of minutes to ensure the peas have cooled thoroughly.
  • Drain the peas, then spread them out on a clean kitchen towel. Use another kitchen towel to gently pat them dry, then let air-dry. (Water on the peas will dilute all of the good flavors.)
  • Transfer the peas to a medium bowl and season with salt, white pepper and a sprinkle of sugar. Stir to blend. Toss with the dressing and pea shoots. Taste again for seasoning and serve immediately.

HERBY PEA SALAD

Herby Pea Salad image

We love spring vegetables. One Mother's Day I came up with this flavorful green salad that everyone enjoyed. You could increase the dressing and mix in some cooked small pasta, like acini de pepe, to make it a more robust salad. —Ann Sheehy, Lawrence, Massachusetts
