TRIPLE LEMON DRIZZLE CAKE
Drizzle cakes are possibly one of the world's favourites, partly because of their simplicity both in making them and decorating them. They're light and delicate, with a citrus syrup spooned over them and only a thin glaze on top to finish. Drizzle cakes are usually only five or six centimetres high, so that the syrup soaks right through the crumb and delivers a zesty sharp flavour in every bite. This cake keeps very well.

Steps:
- 1. Line the base and sides of a 22-centimetre springform cake tin with non-stick paper and heat the oven to 170C (150C fan-forced). 2. Put the butter, oil, sugar, zest and cream in a mixing bowl and beat on high speed for two to three minutes until light and fluffy. 3. Beat in the eggs, one at a time, then stir in the ground almonds. Sift the flour and baking powder and stir in to mix. Spoon batter into the prepared tin, smooth the top and bake for about 40 minutes or until a skewer poked in comes out clean. Remove from the oven. 4. Heat the syrup ingredients in a cup in a microwave or in a small saucepan. While the cake is still warm, make holes in the top of the cake with a toothpick and spoon the syrup over. 5. When the cake has cooled, remove from the tin and place on a plate, then beat together the glaze ingredients and smooth this sparingly over the top with the back of a spoon. Steps:
- Make tart shell:
- Lightly beat yolk with milk in a small bowl (reserve white for egg wash).
- Pulse together flour, sugar, and salt in a food processor. Add butter and pulse until mixture resembles coarse meal with some roughly pea-size butter lumps. Add yolk mixture and pulse just until dough begins to gather into a ball. Press dough into a ball, then flatten into a 6-inch disk. Chill, wrapped in plastic wrap, at least 1 hour.
- Put oven rack in middle position and preheat oven to 350°F.
- Let dough soften slightly at room temperature before rolling out, about 20 minutes.
- Roll out dough between sheets of plastic wrap into a 12-inch round. Discard top sheet and invert dough into tart pan (discard remaining plastic wrap). Fit dough into pan, pushing edge of dough to 1/8 inch above rim. Trim dough and save scraps to repair any cracks in partially baked shell.
- Freeze shell until firm, about 10 minutes.
- Line shell with parchment paper or foil and fill with pie weights.
- Bake until edge is golden and bottom is set, about 20 minutes, then carefully remove pie weights and parchment (or foil; gently prick any bubbles with a fork to release air) and bake until bottom is pale golden, 10 to 15 minutes more. Quickly repair any cracks in shell with scraps, then immediately brush hot pastry all over with some egg white. Leave oven on.
- Make filling and bake tart:
- Whisk together all filling ingredients until combined well. Put tart shell (in tart pan) on a baking sheet and transfer to oven. Carefully pour filling into shell and put a pie shield or foil strips over rim of pastry to prevent burning.
- Bake tart until filling is barely set but trembles slightly in center when gently shaken, 20 to 25 minutes. Cool completely in pan on a rack, about 45 minutes. (Filling will continue to set as it cools.)

Steps:
- Make the pate sucree: Sift flour and a pinch of salt into a bowl, and set aside.
- Beat butter and confectioners' sugar with a mixer on medium speed until pale, 2 to 3 minutes. With machine running, add egg, and beat until fully incorporated. Add orange zest, and beat for 30 seconds. Reduce speed to low, and add flour-salt mixture, beating until just combined. Wrap in plastic, and chill for at least 1 hour.
- Make the pastry cream: Combine milk, vanilla bean pod and seeds, and 2 tablespoons granulated sugar in a saucepan. Bring to a simmer over medium heat.
- Whisk together egg yolks, cornstarch, and remaining 2 tablespoons granulated sugar in a separate bowl. Slowly add 1/3 cup milk mixture to the egg mixture, whisking to combine. Add egg-milk mixture back to the pot, and cook over medium-high heat, stirring constantly, until mixture thickens, about 2 minutes. Transfer to a mixing bowl, and beat in butter with paddle attachment until combined and cream has cooled, about 5 minutes. Strain into a bowl. Place plastic wrap directly on the surface of the cream, and refrigerate for 2 hours.
- Make the tart: Generously butter a 9-inch removable-bottom tart pan. Set aside. Roll out dough on a lightly floured surface to a 10-inch round with 1/4-inch thickness. Fit dough into tart pan, pressing gently along the sides and bottom of pan. Trim excess. Refrigerate or freeze for 30 minutes.
- Preheat oven to 350 degrees. Bake until crust is firm and golden brown, about 30 minutes. Let cool on a wire rack.
- Prepare citrus fruit: Place citrus segments into a colander to drain. Cover, and refrigerate.
- Beat chilled pastry cream with paddle attachment until smooth, about 30 seconds. Set aside. Whip heavy cream using the whisk attachment until stiff peaks form. Carefully fold whipped cream into pastry cream.
- Spread cream into cooled tart shell using a small offset spatula. Arrange citrus segments in a circular pattern around the tart, starting with the darkest color on the edge of the tart. Serve cold.

- Preheat oven to 375 degree F. Use a pastry brush to brush 2 teaspoons melted butter over the bottom and sides of unbaked piecrust. Set aside.
- For filling, in a large bowl, combine sugar and flour; set aside. In a medium bowl, beat eggs with a rotary beater, wire whisk or fork. Beat in sour cream until smooth. Beat, whisk or stir in lemon peel and juice, 1/4 cup melted butter, vanilla and lemon extract. Gradually add lemon mixture to sugar mixture; stir till well combined. Immediately pour lemon filling into the pastry-lined pie plate. To prevent overbrowning, cover edge of pie with foil. (Note: To protect the edges of the pie from overbrowning, fold a 12-inch square of foil into quarters. Cut a 7-inch circle out of the center. Unfold and loosely mold the foil over the pie's edge. Do this before you pour filling into piecrust. If filling sits in piecrust, this will make the piecrust soggy.)
- Place pie on the center oven rack in the center. (Note: Do not use a baking sheet under the pie because it will affect the baking time.) Bake in a 375 degree F. oven for 35 to 45 minutes or till lightly golden brown. Center of pie should appear almost set when gently shaken (2 inches around edges of pie should be set).
- Cool on a wire rack for 1 hour. Cover and chill for at least 4 hours or overnight before serving. To serve, if you like, garnish pie with whipped cream, lemon slices and raspberries. Makes 8 to 10 servings.

- Make the chocolate crust: Preheat the oven to 350 degrees Fahrenheit (180 C) with a rack in the center position. Combine the chocolate wafers and sugar in the bowl of a food processor and process until finely ground. Pour in the melted butter and process until well mixed and crumbly.
- Dump the crumbs into a 10-inch removable-bottom tart pan (original recipe uses a 9-inch springform pan, both work depending on what you have on hand) and, using the bottom of a measuring cup, press the crumbs on the bottom and 1-inch up the sides of the pan. Carefully transfer to the oven and bake for 15 minutes, or until fragrant and firm. Let cool completely on a wire rack.
- To make the citrus curd: Zest the lemons, blood oranges, and lime; set the zests aside. Squeeze the citrus juice (you should have about 1 cup or 240 ml) and combine it with the sugar, butter, and salt in a medium saucepan. Bring the mixture to a boil over medium heat, stirring occasionally.
- Meanwhile, whisk the eggs and egg yolks in a medium heat-proof bowl until combined. While whisking rapidly, pour the hot citrus-sugar mixture slowly in the eggs. Return the egg mixture to the saucepan and cook over medium heat, stirring constantly with a heat-proof spatula, until lightly thickened, 2 to 3 minutes (do not boil or the eggs will curdle). The curd should coat the back of the spatula. It will thicken further as it cools.
