CRUST
Nonstick vegetable oil spray
1/2 cup all purpose flour
2 tablespoons sugar
2 tablespoons (1/4 stick) unsalted butter, melted
FILLING
1/4 cup sugar
1 1/2 tablespoons all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3 large egg whites
1 large egg
2 tablespoons fresh lemon juice
2 tablespoons fresh orange juice
2 tablespoons fresh lime juice
3/4 teaspoon grated lemon peel
3/4 teaspoon grated orange peel
3/4 teaspoon grated lime peel
TOPPING
2 large egg whites
1/8 teaspoon cream of tartar
2 tablespoons sugar
1/4 teaspoon grated lemon peel
1/4 teaspoon grated orange peel
1/4 teaspoon grated lime peel

Steps:

  • FOR CRUST:
  • Preheat oven to 350°F. Spray 8x8x2-inch metal baking pan with nonstick vegetable oil spray. Mix flour and sugar in large bowl. Add melted butter and stir with fork until mixture forms coarse crumbs (mixture will be dry). Using fingers, press crumbs over bottom of prepared baking pan. Bake until crust is set and light golden, about 20 minutes. Cool crust completely on rack. Maintain oven temperature.
  • FOR FILLING:
  • Mix first 4 ingredients in small bowl. Whisk egg whites, egg, juices and peels in medium bowl. Add flour mixture; whisk until smooth. Pour filling over crust.
  • Bake tart until filling is set, about 18 minutes. Cool completely on rack. (Can be made 1 day ahead. Cover and chill.)
  • FOR TOPPING:
  • Preheat oven to 350°F. Beat egg whites and cream of tartar in clean large bowl until soft peaks form. Add sugar 1 tablespoon at a time and beat until stiff peaks form. Spoon meringue over filling, covering completely. Sprinkle peels atop meringue. Bake until meringue tips begin to brown, about 10 minutes. Transfer to rack. Cool completely. Cut into 6 pieces.

0.5 (15 ounce) package refrigerated pie crusts
1 cup mascarpone cheese, room temperature (about 8 ounces)
1/3 cup heavy whipping cream, chilled
1/4 cup sugar
1 teaspoon vanilla extract
1 teaspoon grated fresh lemon rind
1/4 cup small strawberry, quartered
1 pint raspberries
1 pint blueberries
1 pint blackberry

Steps:

  • Prepare piecrust according to package directions to fit into a 9-inch tart pan with a removable bottom. Bake until light golden brown. Cool completely.
  • Combine mascarpone and next 4 ingredients in a large bowl, beating with an electric mixer at medium speed until stiff peaks form. Spoon mixture into crust, spreading evenly.
  • Gently combine berries and place on filling. Release sides of pan from bottom before serving.
  • Makes 1 (9 inch) tart.
  • *NOTE: Tart may be assembled two hours ahead and chilled. Bring to room temperature before serving.

  • Make the chocolate crust: Preheat the oven to 350 degrees Fahrenheit (180 C) with a rack in the center position. Combine the chocolate wafers and sugar in the bowl of a food processor and process until finely ground. Pour in the melted butter and process until well mixed and crumbly.
  • Dump the crumbs into a 10-inch removable-bottom tart pan (original recipe uses a 9-inch springform pan, both work depending on what you have on hand) and, using the bottom of a measuring cup, press the crumbs on the bottom and 1-inch up the sides of the pan. Carefully transfer to the oven and bake for 15 minutes, or until fragrant and firm. Let cool completely on a wire rack.
  • To make the citrus curd: Zest the lemons, blood oranges, and lime; set the zests aside. Squeeze the citrus juice (you should have about 1 cup or 240 ml) and combine it with the sugar, butter, and salt in a medium saucepan. Bring the mixture to a boil over medium heat, stirring occasionally.
  • Meanwhile, whisk the eggs and egg yolks in a medium heat-proof bowl until combined. While whisking rapidly, pour the hot citrus-sugar mixture slowly in the eggs. Return the egg mixture to the saucepan and cook over medium heat, stirring constantly with a heat-proof spatula, until lightly thickened, 2 to 3 minutes (do not boil or the eggs will curdle). The curd should coat the back of the spatula. It will thicken further as it cools.
