Outrageous Chocolate Cookies image

Don't bake these rich double-chocolate cookies to a crisp; they are meant to be soft and chewy.

8 ounces semisweet chocolate, roughly chopped
4 tablespoons unsalted butter
2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
2 large eggs
3/4 cup packed light-brown sugar
1 teaspoon pure vanilla extract
1 package (12 ounces) semisweet chocolate chunks

Steps:

  • Preheat oven to 350 degrees. Heat chopped chocolate and butter in a microwave-safe bowl in 20-second increments, stirring between each, until almost melted; do not overheat. In another bowl, whisk together flour, baking powder, and salt.
  • In a mixing bowl, beat eggs, brown sugar, and vanilla on high speed until light and fluffy. Reduce speed to low; beat in melted chocolate. Mix in flour mixture until just combined. Stir in chocolate chunks.
  • Drop heaping tablespoons of dough 2 to 3 inches apart onto baking sheets. Bake, rotating sheets halfway through, until cookies are shiny and crackly yet soft in centers, 12 to 15 minutes. Cool on baking sheets 10 minutes; transfer to a wire rack to cool completely.

These oil-free, vegan Triple Chocolate Cookies are rich, dense, and chocolatey, like a mashup between a brownie and cookie. Best of all, they taste like a mug of hot chocolate when eaten warm!

Number Of Ingredients 11

1/2 cup + 1 tablespoon unbleached all-purpose flour
1/4 cup tapioca flour
2 1/2 tablespoons unsweetened cocoa powder, (sifted)
1/4 teaspoon fine sea salt
1 1/4 teaspoons baking powder
6 ounces dark chocolate chunks or dairy-free chocolate chunks ((see notes above))
1 cup natural (creamy cashew butter or almond butter)
2/3 cup pure maple syrup
2 teaspoons pure vanilla extract
1/2 cup vegan chocolate chips or more dark chocolate chunks + extra for topping
Flaky sea salt

Steps:

  • Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper.
  • In a large bowl, whisk together the all-purpose flour, tapioca flour, cocoa powder, salt, and baking powder.
  • Melt the 6 ounces of dark chocolate in a glass bowl over a double boiler on the stove (complete instructions are in the blog post). Alternatively, you can melt the chocolate in a glass bowl in the microwave in 30-second intervals. Allow the melted chocolate to cool slightly.
  • Add the cashew butter or almond butter, maple syrup, and vanilla to the melted chocolate. Whisk until completely combined and smooth.
  • Add the melted chocolate mixture to the flour-cocoa mixture and stir until just combined with a wooden spoon. Fold in the chocolate chips using a rubber spatula.
  • If the cookie dough is too sticky to scoop up, refrigerate the batter for 10- 15 minutes (but not any longer).
  • Use a medium cookie scoop to form 22-24 cookies. Flatten each cookie slightly with your palm. If desired, press a few extra chocolate chips onto the top of each cookie for presentation.
  • Bake the cookies for 9-12 minutes (see blog post above for precise times). Remove from the oven and immediately sprinkle each cookie with flaky sea salt. Allow to cool for 5-10 minutes before devouring.

When published in "Vive Le Vegan" by Dreena Burton, these were called double chocolate, but since there are really three forms of chocolateyness I thought I'd better change the title :-) Otherwise, however, these cookies are pure, perfect decadence... they just beg to be shared with the world! (I highly recommend buying Dreena's book for more of the same experiences!) Note: My picture is of what I made my dad for Fathers' Day. :-) It took about a third of the whole recipe and was like a jumbo brownie-cookie! MMm-mm!

1 cup whole wheat pastry flour or 1 cup unbleached white flour
1/4 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
5 tablespoons slivered almonds, toasted
3 tablespoons semi-sweet chocolate chips
1/4 cup sugar
1/4 teaspoon salt
1/3 cup maple syrup
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/4 cup canola oil (or other light-tasting oil)
2 -3 tablespoons semi-sweet chocolate chips or 2 -3 tablespoons dark chocolate bars, broken into chunks

Steps:

  • Preheat oven to 350. Stir together the first first 8 dry ingredients, RESERVING 2 Tbsp of the almond slivers (be sure to sift the cocoa and baking powder/soda!).
  • In a separate bowl, combine the maple syrup, extracts and oil.
  • Add the wet mixture to the dry, and stir just until well combined (don't overmix!)
  • Spoon the batter onto a nonstick or parchment-lined sheet. For each mound, take a few chocolate chips and a few of the remaining almond slivers and press into the top of each cookie, flattening slightly.
  • Bake for 10-12 minutes, or just until gloden around the edges (any longer may let them dry out). Let cool for 1 minute on the sheet, then transfer to a cooling rack.

  • Cream together the peanut butter and coconut sugar in the bowl of stand mixer or a medium mixing bowl. Add the almond milk and beat until combined then add salt, soda, baking powder, and vanilla and mix well. Now stir in the cocoa on low until mixed, then add the flour last and continue stirring until your dough comes together. Fold in the chocolate chips and pb cups with a large spatula and divide the dough in half.
  • Stir together the maple syrup and peanut butter in another medium bowl until smooth. Add the salt, vanilla, powdered peanut butter, and oat flour and mix until combined then add the powdered sugar a little at a time and mix to incorporate into a thick dough.
  • If you'd like to add the extra drizzle, whisk together the ingredients in a small bowl until smooth and use a small tipped pastry bag or simply a fork to drizzle over bars.
