Steps:
- Preheat oven to 350°F Cook bacon in large ovenproof pot over medium heat until crisp.
- Transfer to paper towels to drain.
- Crumble bacon and reserve.
- Add onion to drippings in pot and sauté until almost tender, about 5 minutes.
- Add dry mustard and thyme and stir 1 minute.
- Mix in ketchup, vinegar, molasses, water, bay leaf and all the beans.
- Season with salt and pepper.
- Cover pot and bake bean mixture 45 minutes, stirring occasionally and adding more water if mixture seems dry.
- Stir bacon into beans.
- Bake 15 minutes longer.
- Discard bay leaf.
- Mix in hot sauce and serve.

- Preheat oven to 350°F. Cook bacon in heavy large ovenproof pot over medium heat until crisp. Using tongs, transfer to paper towels to drain. Crumble bacon and reserve. Add onion to drippings in pot and sauté until almost tender, about 5 minutes. Add dry mustard and thyme and stir 1 minute. Mix in ketchup, vinegar, molasses, 1/3 cup water, bay leaf and all beans. Season with salt and pepper.
- Cover pot and bake bean mixture 45 minutes, stirring occasionally and adding more water if mixture seems dry. Mix bacon into beans. Bake 15 minutes longer. Discard bay leaf. Mix in hot pepper sauce and serve.

- 1. Let's get started---in a Dutch oven, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, RESERVING 1 tablespoon drippings. Add onion to drippings; cook and stir over medium heat until tender.
- 2. Next, stir in the remaining ingredients; return bacon to pan. Transfer to a GREASED 2-qt. baking dish. Cover and bake at 325-degrees for 30-35 minutes or until thoroughly heated through. UNCOVER and bake until desired consistency. I usually bake mine for an additional 15-20 minutes. Psst---this bean bake is REALLY,REALLY GOOD. Try it and tell me what you think!!!
