most people don't like tripe, but please try this one as it is very different. You can also do cubed beef with this sauce instead of tripe.

4 lbs tripe, cubed
2 pigs ears, salted (each quartered)
1 lb tomatoes
1 lb onion, chopped
8 garlic cloves, chopped
1 bunch parsley, chopped
1 bunch mint, chopped
1 tablespoon red pepper
1/2 lb spanish sausage, chopped
1/2 lb blood sausage, chopped (black pudding)
1/2 lb bacon, chopped
1 lb chickpeas (soaked overnight)
salt and pepper

Steps:

  • Place everything in a casserole, add water (about 1 and half litres) and cook for 3 hours on a low heat.
  • if you can find pigs trotters it is better than ears.

Tripe 'Olivetana Style: This is an extremely rich Sicilian way of preparing tripe, with veal, cheese, and more.

1 3/4 lbs tripe, diced
2 ounces lard (substitute oil if you prefer)
1 onion
3 plum tomatoes
2 garlic cloves
2 eggplants, sliced and fried
1/2 lb ground veal, cooked in
tomato sauce
2 ounces grated seasoned caciocavallo cheese
1/4 lb pecorino cheese, thinly sliced
1 bunch parsley, minced
2 cloves, ground
3 eggs, 2 hard boiled and sliced, and the other fresh
1/3 cup olive oil
salt & pepper

Steps:

  • Sauté the onion in the lard until lightly browned in an ovenproof pot. The original recipe contains neither tomatoes nor garlic, but they've crept in over the years. Therefore add them, together with the tripe, a few drops of oil, salt, pepper, parsley, and the spices (cloves to taste). Stir well to combine and remove from the fire when all is heated through.
  • Pour the contents of the pot into a bowl. Don't wash the pot, but rather refill it, layering it with the eggplant, the tripe, and then the ground meat; dust the meat with some grated caciocavallo (don't put all of it into the filling, however), then repeat with more layers until all is used up. Sprinkle the oil over the top and spread the hard boiled eggs over it too.
  • Lightly beat the fresh egg and mix the remaining caciocavallo into it, together with salt, pepper, and a little more parsley. Spread this mixture over the top and bake in the oven (400 F, 200 C) until it is nicely browned.

ROMAN STYLE TRIPE

When prepared in this method, tripe has a pleasantly mild, but distinct flavor. When it comes to great sauces for dipping crusty Italian bread, it doesn't get any better than this.

5 quarts cold water
2 ½ pounds honeycomb beef tripe
½ cup white vinegar
2 teaspoons salt
1 teaspoon vanilla extract
1 bay leaf
1 tablespoon olive oil
4 ounces pancetta bacon, diced
1 onion, diced
6 cloves garlic, minced
3 cups marinara sauce
1 teaspoon red pepper flakes
1 (15 ounce) can garbanzo beans, drained
1 bunch fresh mint leaves, chopped
salt and ground black pepper to taste
¼ cup freshly grated Parmigiano-Reggiano cheese, or to taste

Steps:

  • Combine water, tripe, vinegar, salt, vanilla, and bay leaf in a large stockpot over high heat. Bring to a boil and skim off any foam that accumulates. Reduce heat to medium-low, cover pot, and simmer for 1 1/2 hours. Transfer tripe to a plate and set aside to cool. Reserve 1 to 2 cups of the cooking liquid.
  • Heat oil in a large skillet over medium heat. Add pancetta and onion; cook and stir until pancetta is browned and onion is translucent, 6 to 7 minutes. Stir garlic into pancetta mixture; cook and stir until aromatic, about 2 minutes.
  • Stir marinara sauce, 1 cup reserved tripe liquid, and red pepper flakes into the pancetta mixture. Reduce heat to low and simmer for 30 minutes.
  • Cut tripe into 1-inch cubes and add to marinara-pancetta sauce; stir to combine. If needed, add 1 cup of the reserved tripe liquid. Simmer for 30 minutes.
  • Mix garbanzo beans and mint into the sauce. Season with salt and black pepper to taste. Sprinkle with Parmigiano-Reggiano cheese and serve.

Spicy Stewed Tripe With Scallions image

This spicy, slippery tripe begs to be slurped like a bowl of noodles, so you may want a roll of paper towels nearby. Slicing the tripe as thinly as possible provides a soft, tender texture, and the collagen that yields from the calf's foot makes the broth itself slick and full-bodied. The mix of chiles creates a great and powerful warmth that spreads across your chest and leaves a bold, pleasant zing on the tongue, but it is not the kind of sharp or angry spicy that makes your eyes water or your nose run. The paper towels are for tidying up around your enthusiasm, not for dabbing your tears.

4 pounds honeycomb tripe
1 medium yellow onion, unpeeled but cut in half horizontally
1 whole head garlic, unpeeled but cut in half horizontally
1/2 ounce chiles de árbol (about 20 chiles), plus 1 more chile de árbol
1 calf's foot (about 1 1/2 pounds), split, cut crosswise into 2-inch pieces and well rinsed to remove any grit and blood
2 quarts broth of any kind (mixed meats, chicken or beef)
3/4 ounce guajillo chiles (about 3 large)
1/4 ounce ancho chile (1 chile)
1 tablespoon dried oregano
1/2 teaspoon ground cumin
Kosher salt
2 big bunches scallions or green onions, cleaned, roots snipped, then sliced

Steps:

  • Prepare the stewed tripe: Put tripe in a heavy pot and cover with 1 inch cold water. Bring to boil over high heat, then drain and set aside. Put onion, garlic and 1 chile de árbol into a cheesecloth sachet. Set aside.
  • Add foot pieces and 2 quarts water to the pot, and bring to boil over high heat. Reduce heat to medium, and simmer, skimming any foam that rises to the surface, for 30 minutes.
  • Meanwhile, slice the flat sections of tripe into thin, 4-inch-long ribbons resembling noodles - wider than linguine but not quite as thick as fettuccine - and any folds and thick creases into skinny coins.
  • Add tripe and onion sachet to calf's foot, cover with 2 quarts broth and simmer, uncovered, for 4 hours until soft.
  • Meanwhile, prepare the chile powder: Heat the oven to 375 degrees. Lay the guajillo chiles, ancho chile and remaining chiles de árbol on a sheet pan and heat them through for 8 to 10 minutes - enough time for them to become hot and fragrant but not enough time for them to take on dark color. Let the chiles cool completely until they again feel dry and brittle.
  • Pull off the chile stems and tap out the seeds, or split the chiles like a vanilla bean to let out the seeds. Pulse the dry skins in a spice mill to fine flakes the same texture as fish meal. (It makes about 6 tablespoons chile powder.)
  • Remove and discard feet and sachet. (A majority of the flesh and fat and tendon of the foot should have turned gelatinous and fallen off; what's left on the foot is mostly stark, bare bone.) Stir in the chile powder, plus the oregano, cumin and a little salt to taste. Simmer, uncovered, 45 minutes more until tripe is slippery soft and broth is dark as leather.
  • To serve, ladle tripe and broth into bowls, and positively shower each portion with a mountain of sliced scallions.

SPANISH TRIPE STEW WITH CHICK PEAS, CHORIZO AND PAPRIKA



Spanish Tripe Stew with Chick Peas, Chorizo and Paprika image

2 ounces dried chickpeas
3/4 pound boneless pork, cut into small dice
One 4x8-inch piece of tripe cut into 3/4-inch by 2-inch strips
Salt
Pepper
2 tablespoons flour
1/4 cup olive oil
1/2 pound onions, peeled and minced
8 cloves garlic, minced
1 cup white wine
1 28-ounce can of tomatoes with liquid, crushing the tomatoes by hand
1 teaspoon hot Spanish paprika
1/2 pound whole chorizo

Steps:

  • Soak the dried chickpeas overnight. Salt and pepper the tripe and pork and toss them with the flour. Heat the olive oil in a stewpot. Add tripe and pork. Cook until meats are lightly browned on all sides, about 10 minutes.
  • Add the onions, garlic, white wine. Scrape up the browned bits, then add the can of tomatoes with liquid, crushing the tomatoes by hand, the hot Spanish paprika, and the drained chick-peas. Stir to combine. Simmer over low heat for 4 1/2 hours, checking occasionally to make sure meats are submerged in liquid, adding more liquid if necessary.
  • After 4 1/2 hours add 1/2 pound whole chorizo and cook 1/2 hour more. Remove the chorizo and slice it. Return it to the pot and serve.
  • Recommended drink: Pelligrini Carignane, Alexander Valley Old Vines, 1994

1 tablespoon crushed red pepper flakes (or to taste)
1 tablespoon thyme, dry
1 tablespoon paprika
1 tablespoon granulated garlic
1 tablespoon onion powder
1 tablespoon parsley
1 tablespoon caraway seed
750 ml dry white wine
1 onion, large quartered
1 garlic, whole (not peeled)
1/2 cup salt
1/2 cup butter
4 cups onions (chopped)
4 cups bell peppers (chopped)
3 cups celery (chopped)
2 tablespoons minced garlic
2 (28 ounce) cans whole tomatoes (Crushed with by hand)
1 (28 ounce) can crushed tomatoes
1 tablespoon cayenne pepper
1 tablespoon oregano
1 tablespoon thyme
1 tablespoon basil
1 tablespoon parsley
2 tablespoons sugar
2 bay leaves
1 cup calamata olive (pitted& Chopped) (optional)
1/2 cup capers (optional)
4 (15 ounce) cans great northern beans (optional)
1 lb ham (cubed)
1 -2 smoked ham hock (add meat & remove bone & fat when done)

Steps:

  • Boil Tripe in a broth of the following for 6 hours:.
  • 3 gallons water.
  • 1 tablespoon of each of the following: crush red pepper, thyme, paprika,.
  • granulated garlic, onion powder, parsley, caraway seeds.
  • 1 bottle of white wine.
  • 1 onion ¼ er'd, 1 bulb garlic, ½ cup salt.
  • Remove tripe and rinse well, remove garlic bulb and save for stew,.
  • Reserve 1 quart of strained broth for stew. ( add to taste! very spicy).
  • When cool, rinse again & cut tripe in ½"X 2" pieces set aside.
  • Stew.
  • Sautee all of the following for 15 minutes on mid-high heat:.
  • 1 stick butter.
  • 4 cups onion (chopped).
  • 4 cups bell pepper (chopped).
  • 3 cups celery (chopped).
  • 2 tablespoons minced garlic.
  • Add all of the following and stew for 4 hours:.
  • 2- 28oz. can whole tomatoes (Crushed with by hand).
  • 1- 28oz. can crushed tomatoes.
  • 1 tbs. each: Parsley, Basil, Thyme, Oregano, cayenne pepper.
  • 2 Bay Leaves, 2 tbs. sugar,.
  • 1 cup calamata olives (pitted& Chopped), ½ cup capers.
  • 12 oz. Ham (cubed) (I like Black Forest).
  • 2 smoked Ham Hocks ( add meat & remove bone & fat when done).
