EGGLESS MACARONI PIE



Eggless Macaroni Pie image

This is a treasured eggless macaroni pie. It is just as tasty as any other type of macaroni pie.

1 pk (20 oz macaroni*)
2 1/2 cups grated cheese
1 pimento pepper (chopped finely)
1 1/2 cup evaporated milk
2 tbsp butter (unsalted)
1 1/2 tbsp flour
1/2 tsp white or black pepper
1/2 tsp paprika
1/2 tsp parsley (dried or 1 tsp. fresh)
1 tsp tomato paste

Steps:

  • Boil the macaroni, drain and set aside.
  • Melt the butter over a medium flame. Then add the flour while stirring continuously. Let cook for about 1 minute. (Try to break up the lumps of flour).
  • Add the milk and stir. Add the grated cheese and stir into a smooth paste. Note: To avoid burning, lower the flame.
  • Add the cheese sauce to the boiled macaroni and mix thoroughly. Add the seasonings and tomato paste and mix again. Pour the macaroni mixture in a greased baking dish 12 x 8 x 2 inches.
  • Sprinkle grated cheese on top. Note: Here I wouldn't give an exact measurement. Just grate enough to cover the surface.
  • You could also sprinkle a bit of parsley on the cheese like we did! Bake for 30 minutes at 350 degrees F or until the top looks golden. Serve cool.

8 ounce uncooked Macaroni
2 Tablespoon unsalted butter
1-2 tablespoon jalapenos pepper minced (seeded)
1 teaspoon minced garlic
½ teaspoon smoked paprika
1 teaspoon thyme
½ cup finely diced onion
1 tablespoon flour
1 cup evaporated milk
1 egg
4 ounce mozzarella cheese (grated)
4 ounce sharp cheddar cheese (grated)
1 teaspoon salt (I used creole salt)
½ teaspoon white pepper
½ teaspoons dry mustard (optional)

Steps:

  • Cook macaroni according to package directions.Be sure to salt water before cooking.
  • Meanwhile, in a saucepan, sauté the garlic, thyme, Jalapeno pepper, smoked paprika for about 1 minute in 2 tablespoons butter.
  • Then add onions and continue cooking for about a minute more.
  • Proceed by adding the flour; whisk until blended. Gradually add milk. Bring to a boil; cook and stir until mixture thickens. Remove about ¼ cup of the mixture and slowly whisk with the egg making sure it doesn't curdle. Dump the tempered egg back into the pan.and mix well to incorporate all ingredients.
  • Stir in more than half of the cheese (leave the rest to sprinkle on top) .
  • Drain macaroni and add to sauce; stir until coated. Add mustard and white pepper .Adjust seasonings. Transfer to a greased 2-quart baking dish or 13-in. x 9-in. baking dish. Sprinkle remaining cheese on top . Bake, uncovered, at 350° for 20 -30 minutes or until heated through.

8 ounces elbow macaroni
2 eggs
2 cups cheese, grated
1 1/2 cups evaporated milk
1 teaspoon salt
1/4 teaspoon white pepper

Steps:

  • Boil macaroni in salted water until tender and drain.
  • Beat eggs until fluffy.
  • Combine macaroni, eggs, cheese, milk, salt and pepper.
  • Pour into a greased baking dish and bake at 350 degrees F. until firm, about 30 minutes.

There are probably as many macaroni pie recipes from Trinidad - where my parents are from - as there are Trinidadians, and I've evolved this one over the years. This version has a Christmas Ham inspired toasty topping. While it can be served as an indulgent main, in Trinidad it's often cooled then chopped into squares as a party, barbecue or beach snack, and served with Tabasco.

500 g macaroni
30 ml olive oil
6 slices bacon
1 onion
400 ml evaporated milk
2 eggs, beaten
2 -6 red chilies, deseeded and finely chopped
250 g cheddar cheese, grated
1 teaspoon ground cloves
2 teaspoons black treacle
1 teaspoon mustard powder
1 tablespoon demerara sugar
2 -3 slices bread, crushed into breadcrumbs

Steps:

  • Preheat the oven to 180C/350F/gas mark 4. Cook the macaroni in salted water until al dente. Drain and cool.
  • Fry the bacon in the oil until all the fat has rendered, then remove from the pan, retaining the fat. Mix the topping ingredients with the fat, breadcrumbs last. Finely chop the bacon.
  • Mince the onion in a food processor with a little evaporated milk. Mix in the eggs and the rest of the milk, and season. Combine with the macaroni.
  • Stir in the bacon, chillies and most of the cheese.
  • Pour it all into a large, greased oven dish. Sprinkle the leftover cheese on top, then the topping. Bake for 30-40 minutes, then rest for at least 20 more, or overnight to serve cold the next day.

  • Bring a large pot of salted water to a boil. Add the macaroni and cook until barely tender, al dente. Drain and set aside.
  • While the noodles are cooking, melt butter in a deep skillet over medium heat. Add the jalapeño, garlic, paprika, and thyme. Cook, stirring often, until fragrant, about 1 minute. Stir in the onions and continue to cook until softened. Mix in the flour and cook for another minute. Slowly add the evaporated milk. Bring to a boil, then reduce heat to medium low. Stir often to keep the bottom from burning while the mixture thickens.
  • In a small bowl, beat the egg. While continuously whisking, slowly add about 1/4 cup of the heated milk mixture. Once combined, slowly pour back into the pan while constantly stirring. Mix in about 3/4 of the shredded cheese, then the salt, pepper, and dry mustard until smooth. Toss in the macaroni. Season if needed. Spread in an even layer in prepared baking dish. Top with remaining cheese.
