Get ready for the most delicious brownie cupcakes! These chocolate beauties are easy to make with a few simple ingredients and are the perfect mix of brownie and cupcake!

½ cup unsalted butter (113 grams (1 stick))
½ cup semisweet chocolate chips (85 grams)
2 large eggs (100 grams)
¾ cup granulated sugar (150 grams)
½ cup all-purpose flour (60 grams)
1 teaspoon pure vanilla extract (4 grams)
½ batch Chocolate Buttercream (click for recipe)
1.55 ounces Hershey's milk chocolate (43 grams (1 bar))

Steps:

  • Preheat oven to 325°F. Spray a cupcake tin with nonstick spray or line 9 of the wells with paper liners. Set aside.
  • In a small saucepan, melt the butter and chocolate chips over medium-low heat. Once melted, set aside and allow to completely cool.
  • In a medium-sized bowl, whisk together the eggs and sugar until combined. Whisk in the flour and vanilla. Pour the cooled chocolate mixture into the batter and fold it together with a spatula until the batter is combined and free of lumps. Scoop the batter into each of the cupcake liners, filling them about ¾ of the way full. A heaping amount in a large cookie scoop will give you the perfect amount, but you can spoon it in there as well (SEE NOTE).
  • Bake for 30-33 minutes, until a toothpick comes out clean. Allow the cupcakes to cool for 10 minutes before removing. Cool completely on a rack until ready to frost.
  • Make the Chocolate Buttercream (click for recipe) while brownie cupcakes cool.
  • Frost the cooled cupcakes with the buttercream and top each with 1 rectangle of Hershey's chocolate.

These fantastic Brownie Cupcakes are brownies, muffins, and cupcakes all at the same time!

12 ounces (340g, about 2 cups) semisweet chocolate
1/2 cup + 2 tablespoons (141g) unsalted butter
4 large eggs, lightly beaten
3/4 cup (150g) granulated sugar
1 teaspoon vanilla extract
1 cup (120g) all-purpose flour
1/2 teaspoon salt
1 cup chopped nuts, such as pecans or hazelnuts
about 1 cup white chocolate, milk chocolate, or other flavored chips, optional

Steps:

  • Place semisweet chocolate and butter in a microwave-safe bowl. Heat at half power in 30-second increments until the butter has melted and the chocolate melts when stirred. Stir until smooth. Set aside to cool.
  • Preheat oven to 350°F. Grease 12 standard-size muffin cups or line them with paper liners.
  • Add the eggs, sugar, and vanilla to the cooled chocolate mixture. Use a mixing spoon or an electric mixer to mix until thoroughly combined.
  • Stir in the flour and salt, mixing just until combined. Stir in the nuts.
  • Fill each muffin cup about half full. Place about a tablespoonful of flavored chips on top of the batter. Cover with the remaining batter, filling each cup almost full.
  • Bake 30 to 35 minutes, or until a pick inserted into the center comes out with moist crumbs. Cool in the pan on a wire rack.

1 box betty crocker fudge brownie mix
1/2 c vegetable oil
2 Tbsp water
2 eggs
1 c white vanilla baking chips
1 3/4 c powdered sugar
6 Tbsp butter, softened
3 Tbsp milk
6 to 8 drops red food coloring
6 to 8 drops yellow food coloring
24 miniature candy bars

Steps:

  • 1. Heat oven to 350. Spray 24 regular size muffin cups with cooking spray. In medium bowl, mix brownie mix, oil, water and eggs. Divide batter among muffin cups. Bake 13 to 18 min. or until centers are set and toothpick inserted near edge of cupcake comes out clean. Cool 30 min. Run metal spatula around edge of each brownie, lift out to remove from muffin cup. In microwavable bowl, microwave vanilla chips uncovered on med. 30 to 45 sec. stirring every 15 sec. until melted. Cool slightly. In medium bowl, beat powdered sugar, butter, milk and food colors on med. speed until fluffy. Stir in melted vanilla chips. Spoon frosting over cooled cupcakes, top each with candy bar.

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine the flour, cocoa, baking powder and salt; gradually add to the creamed mixture and mix well. , Fill paper- or foil-lined muffin cups two-thirds full. Place a chocolate kiss, tip end down, in the center of each. , Bake until top of brownie springs back when lightly touched, 20-25 minutes.
